Sometimes you just need some comfort food and for me that is this keto taco ground beef casserole that I made in the slow cooker. It full of spicy ground beef and a cheesy sauce that you can dress up any way you would a taco.
This is one of those meals that you can eat as is for a keto dinner or you could add rice to tortilla chips if you are not watching carbs. I topped mine with lettuce, sour cream and cilantro and it was yummy! Each serving of this taco casserole has 5.7g net carbs.
Recipe ingredients I used.
For this taco ground beef casserole I used lean ground beef, garlic powder, onion powder, salt, cayenne pepper, paprika, cumin, chili powder, cauliflower, bell peppers, cream cheese, cheddar cheese and pasta sauce.
I used a lot of cauliflower and this was to give it bulk without the carbs. Also cauliflower has a very neutral flavor and takes on the Mexican spices nicely.
The cream cheese and cheddar cheese make a nice queso type sauce when mixed with pasta sauce and Mexican spices. I used Aldi Specialty Selects Marinara sauce because it only has 8g net carbs in 1 cup.
You could always substitute jar salsa if you have it and 1 cup of salsa is equal or less than 8g net carbs. I didn’t have any on hand so I use the marinara and with the spices it was great.
How to make keto taco casserole in the slow cooker.
- Crumble the raw ground beef into the crockpot.
- Mix together the spices in a small bowl. Sprinkle half of the spices over the ground beef then mix the rest of the spices into the marinara sauce.
- Add the sauce to the meat and mix those together.
- Chop the vegetables into small bite sized pieces then place in the slow cooker.
- Chop the cream cheese into chunks and scatter around on top of the veggies.
- Lastly sprinkle the cheddar cheese on top and put the lid on. Cook on low for at least 3-4 hours or until the meat is cooked through and the veggies have softened.
- Mix halfway through the cooking to get everything incorporated well. Note cooking times may vary. (Please scroll down to view the printable recipe card.)
You want to let this cool a bit before serving. Store leftovers in an airtight container or you can even freeze them for a low carb lunch.
Recipe Tips & Notes
- This recipe uses a lot of spices but is not hot spicy. You can use less of the spice mix if you wish but it might take away from the flavor.
- Try to use a lean ground beef since we are cooking it in the slow cooker. Otherwise it will be a bit greasy.
- Make sure to mix the casserole half way through to make sure everything is incorporated. Also mix it again before serving so the cheesy sauce combines with everything.
- The timing on the casserole may vary depending on your slow cooker. I cooked mine on low and it only took 3-4 hours.

Slow Cooker Keto Taco Ground Beef Casserole

Ingredients
- 1 lb lean ground beef
- 1 cup low carb marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon chili powder
- 1 teaspoon salt
- 2 teaspoons cumin
- 1 teaspoon paprika
- 1 ½ teaspoons cayenne powder (optional)
- 1 cup bell peppers, diced
- 3 cups cauliflower, chopped
- 4 oz cream cheese, cut into pieces
- 1 ½ cups shredded cheddar cheese
Instructions
- Mix together all of the spices in a little bowl and set aside.
- Add the ground beef to the slow cooker and mix in half of the spices.
- Mix the rest of the spices with the marinara sauce then mix it into the ground beef.
- Next add in the chopped cauliflower and peppers. Make sure the cauliflower is chopped into small pieces so it cooks well.
- Sprinkle cream cheese cubes over the veggies and the cheddar cheese.
- Cover and cook for 3-4 hours on high or 4-6 hours on low until the meat is cooked through and the veggies are tender. Try to mix the casserole half way through if you can.
- When done, mix the casserole once again. Let it cool a bit before serving.
- Note times may be different depnding on the type of slow cooker you are using.

Can’t I just put the raw meat into the slow cooker along with the spices, etc.? I think the meat would cook through after 8 hours on low. Thoughts?

Hi CJ, I think you could. I have not put raw ground beef in the slow cooker so I’m not sure. I’ll try to make this tomorrow and let you know for sure but I think you are right. I would use a leaner meat though. Just because it will get a bit greasy. I’ll email you tomorrow with the results.

Your instructions specifically say to put the raw meat into the slow cooker. It’s been 4 hours and the meat isn’t cooked yet. Should I have cooked it first? I thought I should have but went with what your recipe said, which was to put the raw beef into the crock pot.

Hi Morgan, I’m sorry you have problems with this recipe. Originally I did cook it for 4 hours on low and it cooked it through for me. If it’s not cooked yet you can increase the heat to high and it should finish in another hour. I changed the recipe to say 3-4 hours on high or 4-6 hours on low just in case someone else has that problem.
I don’t know why it didn’t cook through for you but I guess it could be a difference between slow cookers? I’ll try to make this again this week and see if I can figure out the problem.

Hi Morgan, I did remake this today and the meat cooked on low for 3 hours and it was cooked through. The cauliflower was a little hard so I cooked it longer but I didn’t chop it small as I should have. I’m thinking it is a matter of the slow cooker. Our just must be different. Again sorry you had problems with it.

I’m getting really tired of keto recipes say how many servings yet no measurements for a single serving. Frustrating. So I’m supposed to measure out six serving with a cup and figure it out.
