Last week I made a sausage stuffed acorn squash in the air fryer and it was the first time I’ve had this awesome vegetable. It was SO good I am now making dishes like these air fryer acorn squash fries all the time.
The air fryer creates crispy outsides and creamy insides of these squash fries and it only takes about 15-20 minutes to make so I prefer it over the oven. I love the flavor of this squash because to make it’s similar to a butternut squash but with the texture of a white potato. And it’s not as sweet as a sweet potato.

Recipe ingredients I used and substitutions.
I only used 5 simple ingredients to make this recipe – acorn squash, olive oil, parmesan cheese, garlic cloves and rosemary. I also sprinkled some salt and black pepper on top but that is optional.
Acorn Squash
Below you can see what one looks like. It has a mostly green out side and the flesh is bright yellow orange on the inside. To pick a ripe acorn squash it should have a mixture of green and orange and the skin should be dull and smooth. Learn more here.
You can use butternut squash, sweet potatoes or delicata squash as substitutes for this recipe but I made this primarily with acorn squash in mind.
Parmesan Cheese
I love grated parmesan cheese for fries. It adds lots of flavor and you don’t have to use a lot. If however you are dairy free you can substitute with nutritional yeast which has a nutty, cheesy flavor. Another cheese you can try is grated Romano cheese or even a grated asiago cheese.
Fresh Garlic & Rosemary
I highly recommend fresh crushed garlic for this recipe but if yo don’t have any you can use some garlic powder. Just don’t use any added salt. Also while I like parmesan and rosemary together, other herbs you can use are Italian seasoning, thyme, basil, etc.
All of these would work fine as well as other seasonings and spices you might want to try. To add a bit of spice add a pinch of cayenne pepper or some hot pepper flakes.
How to make air fryer acorn squash fries.
Step 1: Spray the air fryer basket with non-stick cooking spray and set aside. Cut the raw. acorn squash in half and clean out the seeds. If you want to roast the seeds try this microwave seed recipe.
Step 2: Cut the squash into fries. I made mine large like steak fries like those pictured below. You can make them smaller if you want but the cooking time will be less. I find these are a bit hard to cut so I made mine chunky. I ways also hungry and in a hurry. 🙂
Note you can eat the squash skins so you don’t need to peel them!
Step 3: Place the fries in a large bowl and drizzle olive oil and then the parmesan, crushed garlic and spices on top. Mix around well to coat the fries then pour into the prepared air fryer basket in a flat layer so they don’t overlap.
Step 4: Place the basket back into the air fryer and bake at 400°F for 13-15 minutes until the fries have browned and are fork tender. Again cooking time will vary depending on how big your fries are.
Step 5: Let cool for a few minutes before serving. You can sprinkle some extra parmesan on top before serving if you want or even some finely chopped parsley leaves for a garnish. Store leftovers in an airtight container. Please scroll down to view the printable recipe card.
And while I ate these as is, another idea would be to serve them with your favorite dipping sauce like this roasted garlic aioli or even just ranch dip.
What to serve with this simple side dish.
I ate these as my lunch because I was craving them but they would be the perfect veggie side dish with a meaty main dish. They would go with any roast or with steaks, salmon, roasted chicken, pork tenderloin, etc. You can just add a green salad and have a complete meal!
You could also eat these for breakfast with fried eggs and sausage. maybe add some fresh spinach for a breakfast bowl. I love this combination of flavor.

Air Fryer Acorn Squash Fries Recipe
These air fryer acorn squash fries are a tasty, healthy side dish you can make in no time. Sweet squash with zesty garlic and parmesan make for a delciious side dish.
Ingredients
- 3 ½ cup acorn squash ( ½ squash)
- 2 tablespoons olive oil
- 1 clove garlic, crushed
- 2 tablespoons parmesan cheese
- 1 tablespoon rosemary
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Spray the air fryer basket with nonstick cooking spray and set aside.
- Cut the acorn squash in half and clean out the seeds. I only used ½ of the squash and it filled my whole basket.
- Slice the acorn squash into thick pieces like steak fries. Place in a large bowl and pour the olive oil over top along with the crushed garlic, parmesan cheese, rosemary, salt and pepper. Mix well so the fries are well coated.
- Spoon the fries into a single layer on the prepared air fryer basket. Bake at 400°F for 13-15 minutes until golden brown and fork tender. Cooking time may vary depending on how big you cut your fries. Let cool for a few minutes before serving. Store leftovers in an airtight container.
