Let me be upfront here. I initially wanted these to be curly zucchini fries but the zucchini shrinks up too much and is too soft. However, it was simply delicious so I decided to post it anyway.
These keto air fryer zucchini noodles were so cheesy, crispy and creamy. I ate it for lunch and dinner. You only need three ingredients to make this low carb recipe and start to finish it takes about 15 minutes.
So whenever you want some keto comfort food, grab your air fryer, a couple zucchinis and make this dish. Each serving has 4.9g net carbs and makes for a yummy meatless dinner.
The 3 simple ingredients I used.
All you need to make this air fryer zucchini recipe is raw, fresh zucchini, mayonnaise and parmesan cheese. I would not use frozen zucchini noodles as they tend to add excess water to the dish.
Because parmesan cheese can be salty I did not use any salt and black pepper but you can if you wish. You could also try some other spices like garlic powder, fresh herbs, hot pepper flakes for heat or maybe some Italian seasoning. I like it as is though.
My favorite spiralizer or veggie noodle maker.
Below you can see my Paderno vegetable peeler. I use this to make a variety of noodles. Originally I thought this wider curly noodle would make great curly fries. And it would with a potato but I’m a low carber so no potato.
It has an assortment of blades to make different shapes but I find I make the one shown below the most. It’s very simple to use and you can spiralize everything from carrots to turnips to butternut squash.
If you don’t have a spiralzer you can just cut your zucchini into long julienne thin noodles and it will work just fine for this recipe. If your noodles come out thicker, you might have to bake them a little longer in the air fryer.
How to make keto air fryer zucchini noodles.
Step 1: Make your spiralized zucchini noodles either using a spiralizer like my Paderno or just cut long, thin noodles with a knife.
Step 2: Add them to a large bowl and mix with the mayo and parmesan cheese. Make sure you get the mayo all over the noodles first then mix in the parmesan cheese.
NOTE: Originally I used to microwave the noodles for a minute or two to get out the water and excess moisture but now I just put them right into the air fryer. They seem to shrink less in volume and hold their shape.
Step 3: Preheat the air fryer for a few minutes at 400°F. Spray the basket of the air fryer with cooking spray and then place the cheesy zucchini noodles in it.
Above you can see the new silicon air fryer liner my son got me for my birthday. It’s great because you can just pull it out and easily clean it!
Step 4: Cook for 8-10 minutes until nice and brown like the picture below. That’s not the best picture but you get the idea. Cooking time may vary so check them along the way to make sure they don’t get to browned and are cooked through.

If you find you like the flavor of this dish, it would be great with cauliflower and broccoli too. Of course you wouldn’t have noodles but you can cut them into smaller pieces and bake the same way. The length of time might be a bit longer.
You could also try turnip, celeriac or rutabaga noodles too. The mayo and cheese give them lots of flavor so even if you don’t normally like those vegetables you might like them prepared this way.
While this recipe didn’t come out the way I intended (zucchini fries) it did come out tasty so it made for a happy accident. It would be great if you get a lot of zucchinis from your garden and are on a low carb diet. I hope you give it a try.

Keto Air Fryer Zucchini Noodles Recipe
These keto crispy zucchini noodles are pure comfort food that you can easily make in your air fryer. You only need 3 ingredients and in 15 minutes you have a big plate full of cheesy zucchini goodness! Each serving has only 4.9g net carbs!
Ingredients
- 4 cups zucchini noodles
- 2 tablespoons mayonnaise
- ½ cup parmesan cheese, grated
- Season with salt and black pepper (optional)
Instructions
- Preheat the air fryer for a few minutes while you make the zucchini noodles.
- Mix the zucchini noodles, mayo and parmesan cheese in a large bowl. Make sure to coat the noodles well with the mayo then add in the parmesan cheese.
- Spray the air fryer basket with cooking spray.
- Place the noodles in the basket and cook at 400°F for 8-10 minutes. Check after 5 minutes to make sure they don't get too brown. If your noodles are thicker it may take longer.

Very good. Enjoyed this. I cut in half as I’m a single. And I used fresh parmesan. I cooked these in an instant pot air fryer and they came out delicious. I did use my own spices as I have a “mix” that I buy locally and is a staple in my kitchen. I also used fresh parmesan and sprinkled with the can type when serving. 🙂

Hi Alyssa, I have not tried these but I think they would work. You can try egg whites, sour cream or maybe a little olive oil. As I said I’m not sure they would be exactly the same but they will work and should taste good too. Good luck and let me know how it goes.

Hi I loved this recipe I squeezed out the water and put it in the air fryer. I did add about a 1/4 cup of pork Pablo purchased at Costco.I sprayed the fryer with avocado oil. The pork pinko comes in a large plastic container and is great on any recipe that calls for pinko. I had no trouble cleaning the fryer.I am trying to say panko

HI Francine, no I would not put it in the Instant Pot. You can bake though in the oven. The instant pot would make it get crispy like the oven will. Maybe try 350°F for 15 minutes. Good luck!

How do u know how big is a serving size ?

Hi Bibiana, I just add the ingredients into an app and divide by the number of servings. For this recipe I used 4 cups of cooked zucchini but when it cooks it really shrinks so when the whole recipe came out I figured that it would only be 2 servings. If I were to guess I would say one serving is about 1 – 1.5 cups. Hope that helps.

I still think you could use this recipe for zucchini fries. Just cut smaller zucchini into fry like pieces coat the same way and pop them into the air fryer. You’d have to cook longer but I think it would still work. Now I wish I had an air fryer!!
