This keto eggnog ice cream was made in the Ninja Creami and is the most delicious low carb, sugar free AND high protein ice cream recipe! With simple ingredients you can indulge in creamy eggnog flavored ice cream and not feel guilty about it. Each serving has 14.7 grams of protein and 2 grams of net carbs.

I had never had eggnog until a few years ago my son wanted to try it. While I don’t like the idea of the eggs, I did love the creamy sweet flavors it had. So today I thought it was time for a new Ninja Creami recipe and just in time for Christmas I made a keto eggnog ice cream.
It did not disappoint because it was very creamy and sweet and had all those spices you associate with eggnog. And it was the perfect keto dessert for this time of year. Not only that it was sugar free, low carb and high protein. AND there were no eggs involved. How can you ask anything more than that for a healthy low carb dessert?
What is the Ninja Creami ice cream maker and how does it work?
This kitchen gadget is the best thing I have bought in a very long time. And I have a lot of kitchen gadgets! The Ninja Creami can make all kinds of frozen desserts like homemade ice cream, sorbets, gelato, smoothie bowls and milkshakes. And now they have better models that make soft serve.
It sort of works in reverse from regular churn ice cream makers. With those you freeze the bowl that came with the churn machine for 24 hours. Then when you want to make the ice cream, you pour your base into the frozen bowl and churn for 30 minutes or so.
As for how the Ninja works, it uses their “Creamify technology”.
- You make the base in about 5 minutes and pour it in the pint containers that come with the machine.
- Place the container in the freezer for 20-24 hours and then when you are ready to eat, you place it in the machine.
- The machine’s motors finely shaves the frozen base in a downward pressure and turns the shaved ice into the creamiest ice cream. This takes about 5-7 minutes.
- You store leftovers in the containers that came with the machine. You then run them through the machine whenever you want to have delicious homemade ice cream. I bought extra containers so I can have a variety of flavors on hand in the freezer.

Recipe ingredients and substitutions.
Below you can see the simple ingredients I used to create my eggnog protein ice cream – protein powder, cream cheese, heavy whipping cream, unsweetened almond milk, cinnamon, fresh nutmeg, sweetener and vanilla extract. I also added a pinch of salt as I’m finding I really like how it enhances the sweetness.
- heavy cream and cream cheese – These two ingredients really help to make this recipe rich and creamy. If you want to use dairy free products you could substitute with coconut cream though that might change the flavor a bit. I’ve never used dairy free cream cheese so I don’t know how that would work but a tablespoon of sugar free vanilla pudding will work. However it also adds a few extra carbs. And though I used spread you can use whatever kind cream cheese you want.
- IsoPure ZeroCarb Vanilla Protein Powder – This is my favorite vanilla protein powder because it doesn’t have carbs and I like the taste. You can use whatever kind of protein powder you want as long as it’s vanilla flavored. If you skip this ingredient altogether, you will want to up the sweetener and a maybe a bit more of the vanilla extract.
- vanilla extract, fresh nutmeg and ground cinnamon – I really like fresh grated nutmeg and I think it’s work buying but you can just use ground nutmeg if you have that. Most people have ground cinnamon on hand. I use regular vanilla extract.
- Swerve sweetener – I really like Swerve sweetener and lately I’ve been buying this allulose blend. It also has erythritol in it. However you can use whatever sweetener your want.

How to make eggnog ice cream that’s low carb and high protein!
Step 1: First thing you want to do is add all of the ingredients to a high speed blender like a Vitamix if you have one. You could also use a food processor or immersion blender. Don’t worry too much because when you run it through the Ninja Creami it blend even more.
It works best if the cream cheese has softened but again don’t stress about it.

Step 2: Pour the liquid base into the pint container that came with the machine and attach the storage lid. Make sure not to go past the max fill line on the container. If you have extra you can just drink it as a shake or even add it to a cup of coffee.
Place it on a flat surface in the freezer to make sure it freezes level. Below is what it looks like coming about of the freezer.

Step 3: Place the frozen pint into the outer bowl assembly container and attach the lid. Place in the machine and hit the LITE ice cream button. Run through 1 cycle and check on the consistency and texture.
Below was what mine looked like right out of the machine after 1 cycle. If it’s not creamy enough you can run it through the machine again. Just use the re-spin cycle.

That’s all there is to it for this eggnog dessert. Just spoon into a bowl and enjoy. You can even add some whipped cream and a sprinkle of cinnamon or nutmeg on top.
If you want to make this eggnog ice cream recipe in a regular churn style ice cream machine just blend the ingredients well to make the base. Then use it as you would any recipe in your machine following manufacturer’s instructions.
This makes about 2-3 servings for me. If you don’t eat the whole thing. Make sure to smooth the top so it’s level and refreeze. After it’s frozen solid you will just run it through the machine again like you did the first time.

Eggnog Ice Cream Recipe (Ninja Creami, low carb, protein)
This delicious and creamy eggnog ice cream recipe is made in the Ninja Creami machine and is not only sugar free, low carb and high protein but there are no eggs in this recipe! An easy, healthy and tasty keto dessert.
Ingredients
- 1 ¼ cup unsweetened almond milk
- ¼ cup heavy whipping cream
- 2 tablespoons cream cheese, softened
- 1 scoop vanilla protein powder (I use Isopure ZeroCarb Vanilla)
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ½ teaspoon fresh grated nutmeg (or ground nutmeg)
- ¼ cup sweetener (I use Swerve)
- a pinch of salt
Instructions
- The day before you want to eat this, add all of the ingredients into a high speed blender and blend on high. Then pour in the pint container that came with the Ninja Creami machine.
- Attach the storage lid and place on a level surface in the freezer. Freeze overnight. The next day take of the lid and place in the outer bowl assembly. Attach that lid and place in the machine.
- Hit the LITE button and run through 1 cycle. Check the conistency and texture and see if it's to your liking. If it's too powdery you can run it through the RE-SPIN cycle 1 time. Mine only took 1 LITE cycle.
- Spoon into bowl and enjoy! I get 2-3 servings out of one pint. If you are not going to eat it all in one sitting, smooth out the top of the ice cream in the pint container and attache the lid.
- Place in the freezer and when you want to eat it again, run it through the machine the same way you did the first time. It will have to be frozen solid though.
