This Ninja Creami butterscotch ice cream recipe is dedicated to my mother whose favorite dessert was a good butterscotch sundae. I never cared for that classic flavor when I was young but I get it now. This is a delicious low carb, low calorie and high protein snack!
If you are at all interested in a Ninja Creami ice cream maker you should get one. I use it all the time and itโs the only way I know to make good quality, low carb homemade ice cream. Itโs truly my favorite kitchen appliance these days. While itโs an upfront cost, you can make a variety of healthy recipes and frozen treats. I first made a simple sugar free butterscotch syrup for this recipe and then made essentially a protein shake using a bit of it. Then just freeze and the next day run it through the machine. You will have leftover syrup that you can use to top the finished product or save for another day.
Recipe ingredients I used and substitutions.
The simple ingredients I used for the base recipe were unsweetened almond milk, vanilla protein powder, cream cheese and some of my homemade butterscotch sauce which used butter, Swerve brown sweetener, coconut cream and salt.
Almond Milk
I used unsweetened almond milk because it adds very little carbs and I like that itโs dairy free. You can use other plant based or non dairy milk if you want like oat milk, cashew milk or coconut milk though they might have more carbs. Coconut milk always adds lots of creaminess too but can be overpowering for some flavors. You can also use regular milk but it tends to be high in carbs.
Isopure Protein Powder
I usually use the Isopure Zero Carb Vanilla protein powder but I was trying out this flavor and love it. But you can use whatever vanilla protein powder you have on hand.
NOTE: If you want you can use a vanilla protein shake in place of the almond milk and protein powder. The amount of liquid should be approximately 1 ยผ cups of liquid. Taste the level of sweetness before adding the sweetener. I like to make the base taste pretty sweet because when it freezes it loses some of the sweetness. FairLife caramel protein shakes are good too and low carb.
Cream Cheese
Iโve been using this in my ice cream recipes lately and it works great. I would not substitute this ingredient. Some people use sugar free pudding and you can sometimes find sugar free instant butterscotch pudding mix. However I find that it has quite a few carbs.
So if you want to use the sugar free instant pudding mix just use a tablespoon. You might not need as much sweetener or butterscotch sauce though.
Sugar Free Butterscotch Sauce
You need to use a brown sugar sweetener to make the basic butterscotch sauce. However in a pinch you can use regular white sugar sweetener. It will be more of a caramel sauce though still delicious. TIP: Brown sugar creates butterscotch flavor and white sugar creates caramel flavor.
I also use butter and coconut cream. Remember it’s coconut cream not coconut milk though you could use that too but it might take longer to cook down. If you don’t like coconut you can use heavy whipping cream as a substitute. I like the flavor of the coconut though heavy cream would be a more traditional ingredient.
If you don’t care about carbs you can use coconut sugar or regular brown granulated sugar.
How to make sugar free butterscotch sauce.
Step 1: Get out a sauce pan and heat to medium heat. Then add the butter, salt, brown sugar sweetener and coconut cream. Whisk together and bring to a simmer. Remember brown sugar will make a butterscotch flavor while regular sugar will be more of a caramel sauce.
Step 2: Continue to simmer for 4-5 minutes until it starts to thicken. It will thicken up more once it cools. Cool completely before adding to the recipe.
Pour cooled sauce into a small jar or bowl. This will make approximately 1 cup of sauce and you use 2 tablespoons for the recipe. So you can keep the extra in the refrigerator and use as a topping. It might harden and crystalize, just pop it in the microwave for 1 minute or so and stir to combine. It should be fine.
How to make Ninja Creami sugar free butterscotch ice cream.
Step 1: Add 2 tablespoons of the cooled syrup along with the almond milk, cream cheese and protein powder to a high speed blender or food processor. It’s hard to whisk the cream cheese by hand and have it blend well.
Step 2: Pour butterscotch mixture into a Ninja Creami pint container and attach the storage lid. Place the lid on pint container and put in the freezer on a flat surface for 24 hours or at least overnight.
Step 3: When ready to eat, take frozen pint from the freezer then take off the storage lid. Place the pint container into the outer bowl assembly. Add the outer bowl assembly lid to that and place in the Ninja Creami ice cream maker. Press the LITE button and let it run through the cycle.
Step 4: Take off the lid and check the consistency. If it has creamy and smooth texture you are done. If itโs more powdery run it through the LITE cycle again.
Above is how it worked out for me after one cycle. I wanted it to have a bit more creamy and smooth texture so I ran it through one more time. If you spin it too much it can get mushy.
Below is what it looks like after 2 cycles and it was perfect for me. Spoon into bowls and enjoy. You should get 2-3 servings out of the container.
Step 5: Store leftover ice cream in the pint container with the lid on. Try to smooth the serve to make it flat if you can. Place in the freezer and completely freeze. When ready to eat rerun it through the machine. Please scroll down to view the printable recipe card.
I like this just as it was without the syrup on top. It was sweet, smooth and creamy just like it like it. My husband loved this one too.
However as I mentioned above, you can add some syrup on top if too for extra butterscotch flavor. One tablespoon just adds 44 calories and 0.3 grams of carbs.
And if you don’t care about carbs, you can try additional ingredients like chocolate chips, pecans, walnuts, etc. They also make butterscotch chips that you can add though they have tons of sugar. Just add a few butterscotch chips thrown the machine at the end and hit the mix in button.

Keto Ninja Creami Butterscotch Ice Cream Recipe
This low carb Ninja Creami butterscotch ice cream recipe is made with a homemade sugar free butterscotch sauce to create a tasty high protein snack or dessert.
Ingredients
- 1 ยผ cup unsweetened almond milk
- 1 scoop Isopure Vanilla protein powder
- 2 tablespoons cream cheese (1 ounce)
- 2 tablespoons butterscotch sauce
Butterscotch Sauce
- 4 tablespoons butter
- 5.4 ounce can of coconut cream (10 tablespoons)
- ยฝ teaspoon salt
- ยฝ cup Swerve brown sugar sweetener
Instructions
- To make the sauce: Get out a small pan and heat to medium heat. Add the butter, brown sugar sweetener, salt and coconut cream. Whisk to combine well and bring to a simmer to dissolve the sugar. Let simmer for 4-5 minutes until it thickens. When you take it off the heat it will thicken a bit more as it cools. Let it cool completely before adding to the ice cream base.
- To make the ice cream mix the almond milk, protein powder, cream cheese and 2 tablespoons of the cooled sauce in a high speed blender or food processor so that the cream cheese blends well. Then pour the mixture into the pint container that came with the Ninja Creami ice cream maker. Attach the storage lid on pint and place on a flat surface in the freezer for 24 hours or overnight.
- When ready to eat it take pint from freezer. Then take off the lid and place in the outer bowl assembly and attach it's lid. Place in the Ninja Creami ice cream machine and hit the LITE ice cream button. Once it's run through the cycle take off the lid and check the texture. It's creamy and to your liking your are done.
- If it's powdery or not creamy enough try one more LITE cycle. If after 2 cycles it's still doesn't have a smooth texture, add a tablespoon of almond milk and run it through a 3rd time and it should be fine. It only took me one cycle but most of the time it takes at least 2.
- Spoon into bowls and enjoy. Can also add more sugar free butterscotch sauce on top if you want. When done, put the lid on and put it back in the freezer. When you want to eat the rest you will have to run it through the machine again just like above.
- You will have extra sauce so you can just store in an airtight container in the refrigerator. It will get hard or crystalize when refrigerated, just heat in the microwave or stove and whisk to combine and it will be fine.
