I have fond memories of fighting my brothers over chocolate peanut butter ice cream back when we were kids. My dad would buy a big tub from Baskin Robbins so there was more than plenty to go around. The point being my love for this flavor combination started along time ago and continues today.
That is why I had to make this keto Ninja Creami chocolate peanut butter ice cream. It’s just so easy with this machine and it’s delicious! It has a wonderful creamy texture and totally satisfies my sweet tooth on a low carb diet.Â
I’ve made many creamy ice creams with the Ninja Creami ice cream machine using heavy whipping cream, gelatin, instant pudding powder, etc. to make it thick and creamy. However today I just used a protein shake and a bit of cream cheese. So this recipe is low calorie as well as sugar free!
Recipe ingredients I used and substitutions.
You only need 5 simple ingredients to make this delicious recipe – chocolate protein drink, peanut butter powder, cream cheese, unsweetened cocoa powder and sweetener.
Fairlife Protein Drink
I really like the taste of these Fairlife Protein drinks and I used the chocolate flavor. However you can use any kind of protein drink you want. You can also use almond milk, coconut milk (or other non dairy milk of choice) along with a chocolate protein powder. The amount you want to use is 1 ¼ cups of liquid. That is about what is in a bottle of Fairlife protein drink.
Cream Cheese
I used to use sugar free pudding as a thickener but now I prefer the cream cheese. It’s easier to use and has less carbs. If you don’t have any you could also use 1 tablespoon of sugar free chocolate pudding. The carb count will be different of course.
Divine Cocoa Powder
I love this Divine cocoa powder because it has no carbs, is very chocolatey and has great color. I can find it at our bigger grocery store but I end up buying it online. You can substitute with any brand of cocoa powder but give this one a try someday.
Peanut Butter Powder
I used PBfit because that is what I had on hand. You can use any brand you want or you can substitute 1-2 tablespoon of no sugar added peanut butter. It all have more calories, fat and carbs probably but it won’t be bad.
SweetLeaf Vanilla Stevia Drops
I love these vanilla stevia drops because they add both vanilla flavor and a good sweetness to recipes. However you can use plain stevia drops if you want or substitute with a granulated sugar sweetener of choice with a ½ teaspoon vanilla extract.
You will have to taste the ice cream base when it’s mixed to see if it is sweet enough if you use a powdered sweetener. Start with 1 tablespoons and more if necessary. You do want this to be a bit more sweet than you normally would because when it freezes it tends to lose a bit of taste.
How to make Ninja Creami chocolate peanut butter ice cream.
Step 1: Add the protein drink, cocoa powder, peanut butter powder, stevia and cream cheese to a high speed blender and blend until well combined. You can also use a food processor, immersion blender or even whisk but make sure the cream cheese is totally incorporated.
Step 2: Pour ice cream base into the pint container that came with the machine and attach the storage lid. Place in the freezer 24 hour or at least over night and make sure it’s on a level surface so it freezes evenly.
Step 3: When ready to eat, take the pint from freezer and take off the lid and place in the outer bowl assembly and attach the outer bowl lid. Place in the Ninja Creami machine and hit the LITE ice cream button. It should only take a few minutes.
When it’s done, take off the out assembly bowl and if it has a powdery texture looking like the picture below, attach the lid again and run it through the LITE cycle again.
Step 4: When it’s done take off the lid and if it’s still not creamy you can add a tablespoon of unsweetened almond milk or heavy cream and place back in the machine and run it through a third time. It only took me two cycles but it’s always different for me.
Step 5: When to texture of your liking, spoon into bowls and enjoy. If you have leftovers, smoothie surface and place the lid back on the pint storage container and freeze again. When you want to eat it again you will have to run it through the machine again.
This delicious ice cream comes out so creamy and smooth that you could never know it was a healthy chocolate peanut butter ice cream. Please scroll down to view the printable recipe card.
If you wanted you could add some mix-ins like keto chocolate chips, or even freeze peanut butter chunks and stir them into pint to make it even more decadent. You could also melt no sugar added peanut butter in the microwave and pour over as a sauce or use low carb chocolate sauce.
Why I love the Ninja Creami machine.
BECAUSE: It’s so nice to be able to make healthy ice cream in any flavor I want and know it’s going to taste good.
The Ninja Creami can make all kinds of frozen desserts like homemade ice cream, sorbets, gelato, smoothie bowls and milkshakes.
It comes with a recipe book and 2 pint size ice cream storage containers that you use with the machine. I bought 2 more of these airtight containers so I have a few delicious flavors in the freezer to pick from and then I just whip up a batch when I’m in the mood.
