I’m not a huge fan of watermelon but I do like it on hot summer days. However my family will never eat the whole thing so I am constantly giving it away or worse throwing it away. Well not anymore! This Ninja Creami watermelon sorbet is the perfect way to use leftover watermelon.
The Ninja Creami ice cream machine turns this summer fruit into a sweet and creamy frozen dessert and with only 3 ingredients. Plus it only has 77 calories per serving so you won’t feel guilty eating it.
Even though watermelon has a lot of sugar it doesn’t have many calories so this is not low carb but it is low calorie. I used a bit of sweetener to lower the sugar content too. So if you have a Ninja Creami ice cream maker you have to try this delicious summer treat. It’s the perfect treat to keep cool this summer!
Recipe ingredients I used and substitutions.
The simple ingredients I used were watermelon, lemon juice, water and sweetener. And that is all you need because the Ninja Creami machine does all the work.
Watermelon
You want to of course use a ripe watermelon. The redder the better to get maximum flavor. Also it should be a seedless watermelon so you don’t have to go through it and take out all the black seeds. While there are still some little seeds with the seedless ones, you don’t have to worry about those.
Lemon Juice
You use this to add a little depth of flavor. The tartness of the lemon brings out the sweet watermelon flavor. It’s a good counterbalance. You can use fresh lemon juice or bottled as you only use a little bit. You could also use fresh lime juice for a bit of a different taste.
Sweetener
Even though the watermelon is sweet, you need more sweetness because there is so much water in this fruit. I like to use sweetener to cut down on carbs. I prefer Swerve sweeteners but you can use your favorite sweetener or if you don’t care about carbs you can use regular white granulated sugar.
Note I have not tried this yet with other melons like cantaloup or honey dew however I think you could easily with a one for one substitution. And again use the ripest fresh fruit you can find and make it in the Ninja Creami machine.
How to make to make watermelon sorbet in the Ninja Creami.
Step 1: Add 3 cups fresh watermelon chunks to a high speed blender. Also add in the lemon juice, water and sweetener. Blend on high until well combined. Note you could also use a food processor.
Step 2: Pour sorbet base into the Ninja Creami pint container that came with the machine, fasten storage lid on pint and place in the freezer for 24 hours. Make sure to place on a level surface so it’s freezes evenly.
Step 3: When ready to eat, take the pint from freezer, take off the storage lid and then place in the outer bowl assembly. Place in the Nina Creami machine and use the sorbet function. Once it’s done take off the outer bowl lid and check it out.
Step 4: If it has a powdery texture, attach the outer bowl lid again and place in the machine. Hit the same button to use the sorbet function again. You may have to do it 3 times in total to get the creamy texture you want. Though it might only need 1 cycle. It’s been different for me at different times. NOTE if you do it too many times it will have a slushy texture.
That’s all there is to it. Spoon into bowls and enjoy! I can usually get 2-3 servings out of 1 container. If you have leftovers, smooth down the top of the sorbet with a spoon to make it even on top. Then place the lid back on the container and freeze.
To eat the leftovers of this refreshing sorbet it should be fully frozen and just run it through the machine like you did the first time. Please scroll down to view the printable recipe card.
Why I love the Ninja Creami ice cream maker.
What I love is that this machine makes super creamy ice cream using low carb ingredients. You can’t even buy good keto ice cream but now you can make it yourself with this machine. It also makes all kinds of delicious treats like ice cream, sorbet, milkshakes, smoothie bowls, etc.Â
It comes with a recipe book and 2 pint size ice cream storage containers. I bought 2 more of these airtight containers so I have a few frozen pints in different flavors on hand in the freezer.
