I am a big salad lover. Every time we go out to eat I usually order some type of salad not because I’m watching what I eat but more because I just love it. And at home I have one everyday either for lunch or dinner.
Today I was in the mood for a big Greek salad and I thought this creamy feta dressing recipe would be the perfect match. I was right and it was! The salad dressing was thick, creamy, garlicky and tart from the lemon. The tangy flavor went so well with all the ingredient in my Greek salad like chick peas, artichoke hearts, olives, etc.
So if you too love a “big salad” you have to try this one and the creamy feta cheese dressing. Nothing is better than homemade dressing and this one is just takes a few ingredients and less than 5 minutes to make.
Recipe ingredients I used.
The simple ingredients in this recipe is just good olive oil, feta cheese, garlic, lemon, dried oregano, cottage cheese, water, salt and black pepper.
Cottage Cheese and Feta Cheese
I used already pre-crumbled feta cheese but you can also use a block of feta. Whatever is easiest for you. I also used cottage cheese to balance the tangy cheese and it has the benefit of added protein. You can also use sour cream or Greek yogurt as a substitute if you want but yogurt might be too tart.
Fresh Lemon
Fresh lemon juice and lemon zest ads a lot of brightness to this recipe. You could use bottled juice but you would still need the zest from a fresh lemon.
Garlic and Oregano
I used fresh garlic and I would recommend that instead of garlic powder. One clove of garlic equals â…› teaspoon garlic powder. Also the fresh garlic is pretty potent though so you can use a small clove if you want. I used dried oregano but if you want to use fresh herbs like fresh oregano or dill, note that you will have to use 3 times the amount of the dried.
Olive oil
I used a good extra virgin olive oil because I wanted that strong olive taste. If you can’t find any or if you don’t like that olive taste, you can use a light olive oil but a quality olive oil does add to this simple recipe.
How to make this simple creamy feta dressing recipe.
Step 1: This really isn’t very difficult to make. Start with the garlic cloves and place in a food processor or high speed blender. Pulse until the garlic is minced.
Note I like to use a food processor instead of blender because it’s much easier to clean but use whatever you want.
Step 2: Add the rest of the ingredients and blend until it has a creamy consistency and has no lumps. The cottage cheese texture can add lots of lumps so try to blend until you get a smooth texture.
Step 3: Taste the dressing and adjust. I like thicker dressings but if it’s too thick you may want to add a bit of water to thin it out. Start tablespoon by tablespoon until you get the desired consistency.
This feta salad dressing is rather tangy and tart. If you don’t like so much tartness you can add additional water or even a bit of milk. I liked it that way but it’s easy to adjust to your own tastes. I was trying to keep the carb count down and since milk can sometimes have quite a few carbs I used water.
While I used this as a salad dressing you could also use it as a vegetable dip or it would make an excellent dipping sauce for chicken or lamb.
