This Greek Zucchini Salad is the perfect substitute for a pasta salad when you are on a Paleo or gluten free diet. Delicious and nutritious!
If you have been reading my blog over the past year you probably noticed that I have quite of few Greek or mediterranean recipes. I guess I just like the flavor combination of the olives, peppers and feta as well as the tangy oregano dressing. Well since it is summer time, I thought I’d try to make a Paleo-ish salad and that meant no pasta noodles. So I decided to used zucchini noodles (zoodles) and it was the perfect substitute for this Greek Zucchini Salad.
I remember making something similar last summer and it was a bit soggy so I was surprised that this worked as well as it did. I think it was because last summer I had made angel hair zucchini noodles with my spiralizer and they were too thin. This year I used my Pampered Chef julienne peeler and the noodles came out thicker, like a spaghetti noodle which worked really well.
This recipe is pretty simple. Once you make your zucchini noodles you just have to toss them with the vinaigrette and toppings, but save the feta for last. I used kalamata olives, grape tomatoes, red onions and some artichoke salad I had leftover from another dish. If you want to make this a bit more substantial, I think some salami, pepperoni or prosciutto would work well, or even some shrimp or chicken. The vinaigrette is made from white balsamic vinegar, olive oil, oregano and garlic. I like to sprinkle the feta cheese on top so that it doesn’t break down too much when you mix your salad. If you want the noodles crispy or al dente, I would make this right before you plan to serve it.
Greek Zucchini Salad
I was worried that this would be soggy the next day but it was fine. This zucchini salad will accumulate some extra liquid so just poured that off and eat it for lunch and it will be delicious. So give this a try the next time you are in the mood for a linguine or pasta salad. It’s full of color and flavor and very healthy for you. Plus you get to use more of that zucchini from your garden. Greek Zucchini Salad
Ingredients
- ½ red onion sliced thin
- 2 zucchinis cut into noodles spiralized
- 1 cup grape tomatoes halved
- ½ cup kalamata olives halved
- 1 cup artichoke salad I use Aldi's
- 1 cup feta cheese omit if strict Paleo
- Dressing
- 2 Tablespoons white balsamic dressing or red wine vinegar
- ¼ cup olive oil
- â…› t salt
- â…› t pepper
- ½ t oregano
- ½ t crushed garlic
Instructions

Spiralize your zucchini to make noodles. Or you can use a wide peeler and then cut into noodles.

Whisk together your dressing and toss with the zucchini.

Add the rest of the ingredients except for the feta cheese.

Top with the feta cheese and enjoy!
