I’ve been wanting to make these nacho keto zucchini chips for a long time. Every time my son has kids over they want Doritos and they are such a temptation to me.
They no longer are with this zucchini chips recipe. I think I’ve made a great nacho chip seasoning and can’t wait to share it with you. It’s a great way to use fresh zucchini from the garden.

What kind of dehydrator to use?
This is the dehydrator I use. It’s an older model but we use it every summer.
My husband dries chiles and makes his own (very delicious) hot pepper flakes and sun dried tomatoes. He has a lot of zucchini growing this year so I know I’ll be making a lot of vegetable chips in the dehydrator.
Recipe ingredients I used.
I used a yellow squash from our garden. It was nice and uniform in thickness and I think yellow zucchini are a little more dense and seem to have less moisture but that might be in my head. 😉 You can use yellow or green though.
The other ingredients are for my spice blend which has two unique ingredients: tomato powder and cheddar cheese powder. I bought them on Amazon and I recommend them to you because you can use them for many other things.
The spice blend is made from : salt, paprika, chili powder, onion powder, garlic powder, tomato powder and cheddar cheese powder.

I’m really excited about this nacho chip spice blend. If you don’t care about carbs, you can buy some corn tortillas and use this spice blend to make your own baked nacho chips! Just cut the tortillas in to triangles, toss with olive oil and this blend and bake in the oven.
Note if you can’t find the cheddar cheese powder, try a little grated parmesan cheese. And for the tomato powder you can add a little tomato soup powder or just a tiny bit of sweetener. The tomato powder gives it a bit of tomato and sweetness.
How to make nacho keto zucchini chips in the dehydrator.
When I made these zucchini chips in the dehydrator I used a mandoline slicer to make very thin, even slices. I would suggest the same to you.
Step 1: Cut a medium sized zucchini into slices. Make this very thin and even if you can.
Step 2: Sprayed the trays with nonstick cooking spray and lay the zucchini rounds neatly on the tray like shown below. Then I sprayed the tops with more cooking spray. Note you could brush olive oil instead but I find the spray quicker and easier to use.
Step 3: Next I sprinkled the nacho spice blend on top. You could do both sides but I didn’t want the hassle and I didn’t think that they needed them.
Step 4: Now just put them in your dehydrator on 135°F for a few hours. Once they are nice and crunchy they are ready. Cooking time may vary depending on the thickness of the chips. Please scroll down to view and print the recipe card.Â
How long do zucchini chips take in the dehydrator?
Usually you want to use the vegetable setting on your dehydrator which is 135°F. The time will depend on how thin you make them.
Mine were pretty thin and they were done in 6 hours. I was expecting them to be done in 12 hours. So it’s important to keep checking them until they get to your desired crispness.
How to make veggie chips in the oven.
I made my za’atar baked zucchini chips in the oven so you can check out that post for more info but in a nutshell:
- Spray a baking sheet with cooking spray. You could also use parchment paper on the baking sheet.
- Place your very thinly sliced zucchini slices evenly on it.
- Spray with more cooking spray and then sprinkle the spices on top.
- Bake in a 200° preheated oven for 1 ½ hours and then turn off the oven but keep them in there for another hour.
- Check them every once in a while for your desired crunchiness.
- Eat them right away as they lose their crunch.

Nacho Keto Zucchini Chips
If you love Doritos nacho chips, you will love these nacho dehydrated zucchini chips recipe. A delicious blend of spices make these zucchini or squash chips tons of flavor and 1 serving has 4.3g net carbs!
Ingredients
- 1 yellow squash, thinly sliced
- cooking spray
- 1 tablespoon cheddar cheese powder
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon chili powder
- ¼ teaspoon paprika
- ¾ teaspoon tomato powder
Instructions
- Thinly slice zucchini using a mandoline slicer for uniform thickness.
- Spray the tray of a dehydrator with cooking spray. Place the zucchini slices on the tray making sure not to overlap any slices. Spray again with the cooking spray.
- Mix all the spices and cheddar cheese powder together and then sprinkle them over the zucchini slices.
- Set the temperature to 135°F on your dehydrator and cook for 4-6 hours. Check to see if they are crispy. If not continue dehydrating until desired texture is achieved. The time will vary depending on how thin you slice your zucchini and dehydrator. Check them often.
- Eat immediately as they will lose their crispyness.
- To make in the oven, preheat to 200°F. Spray a large baking sheet with cooking spray. Lay the slices even on it and spray again. Sprinkle the spice on top and place in oven. Cook for a 1.5 hours and then turn off the oven. Let them sit in the hot oven for 1 more hour or until your desired crispiness.

Is the cheddar cheese grated and when do you add it?

I can see where that is confusing. I meant to write cheddar cheese powder. That is the main ingredient in the recipe and I talk about it in the post. This is what it is.
However if you can’t find the cheddar cheese powder, try a little grated parmesan cheese. And for the tomato powder you can add a little tomato soup powder or just a tiny bit of sweetener.
