I really like mushrooms. Especially when they are smothered in butter. We used to go to an old restaurant called the Bluebird and they had the best mushrooms. The secret they told us was lots of butter. So now whenever I make mushrooms I make Bluebird mushrooms as we like to call them. Today I went a step further and made Bluebird mushrooms chips. It only requires portobello mushrooms, butter and salt. It’s the perfect savory, salty snack for when you want chips of any sort. And at 0.4g net carbs per serving you can have as much as you want!

When I remember to buy them, we eat portobello mushrooms a lot. I’ve made a fajita stuffed portobello, a blue cheese bacon burger stuffed portobello and even a meatloaf stuffed portobello. I highly recommend them all though the meatloaf is my favorite. Portobellos have such a meaty flavor and the their large size lend well to stuffing and in this case, chips. They shrivel down a lot so it’s nice that they are larger than button mushrooms for making this recipe.

It’s a simple recipe but the key is to get a nice even, thin slice. I use a mandoline like this for everything. It’s very easy to get a consistent thickness in the vegetables when using a mandoline. I set it at 1 for these mushrooms. Once the mushrooms are sliced, you then want to brush both sides with butter and sprinkle some salt on top. Place them on a parchment lined cookie sheet and bake at 300 degrees F for 40 minutes.

One thing to keep in mind is that these are best eaten right away. They tend to lose their crunchiness if they sit out for long. We didn’t have any problem scarfing these up right way though. I hope you like this low carb snack as much as my hubby and I did.  The nutritional information for 1 serving is:

 113 cals / 11.7g fat / 0.4g carbs / 1.5g protein = 0.4g net carbs

Ingredients

  • 2 portobello mushrooms
  • 2 tbsp butter, melted

Instructions

  1. Preheat oven to 300 degrees F.

  2. Slice mushrooms very thin use a mandoline if possible.

  3. Line a cookie sheet with parchment paper and place mushrooms slices on top. Make sure to evenly space mushrooms and not to overlap. 

  4. Brush melted butter on both sides of the mushrooms and sprinkle salt over them.

  5. Cook for 40 minutes or until desired crunchiness.

  6. Serve immediately.

    What if I dont have parchment paper?

      Hi Amanda,
      You can probably use a well greased foil covered pan but it may cook quicker. Here is a good article for other ideas.
