This chocolate peanut butter protein pudding is low carb and only takes 5 minutes to make. A deliciously creamy and healthy dessert or treat.
A long time ago I was on the Ideal Protein diet. It was very successful for me but you had to eat a lot of packaged meals and that just didn’t mesh well for someone who loves to cook and eat good food. However one thing that I did get hooked on was their protein pudding. I ate it as a snack but you could just as easily eat it for breakfast if you wanted. So I decided to create my own and ended up with this deliciously easy low carb chocolate peanut butter protein pudding. It is so good and only takes 5 minutes to make!
So what all is involved with this delicious treat? You need a good protein powder. I recently bought some Quest peanut butter flavored protein mix and am very happy with my purchase! It’s very low in carbs and tastes delicious. It came with a few cool recipes but so far I’ve only made smoothies, protein bites and this pudding.
The other ingredients are a half of a frozen avocado which adds good for you fats and lots of creaminess, cacao powder, almond milk and just a bit more sweetness with vanilla cream stevia liquid. Add everything to a high speed blender and mix on high until well blended. Spoon into a bowl and enjoy! Or refrigerate for later.
Chocolate Peanut Butter Protein Pudding
A few notes: You don’t have to use a frozen avocado but it seems to make it cold so you can eat it right away. I like my pudding cold. Secondly you can substitute any kind of protein powder you want. If you don’t have peanut butter protein powder, try some vanilla and a bit of powdered peanut butter. And for the cacao powder, you can substitute unsweetened cocoa powder of course. The extra sweetener is optional. The nutritional information per serving is:
286 cals / 15.5g fat / 13.9g carbs / 9.1g fiber / 26.8g protein = 4.8 net carbs
- Add everything to a high speed blender except the sweetener.
- Blend on high.
- Taste to see if it needs sweetener. If so add a few drops of stevia or sweetener of your choice.
- Refrigerate before eating.
- Notes: You can use a room temperature avocado if you want. A frozen one just makes it colder. You can substitute powdered peanut butter and a vanilla or chocolate protein powder if you don't have the Quest peanut butter protein powder. You can also substitute unsweetened cocoa powder for the cacao powder. Lastly you can use whatever sweetener you wish and may not need it at all depending on your protein powder.
