If you’ve ever had a Primanti’s sandwich you will love these sausage sliders. They are mini sausage patties topped with cheese, hash browns, coleslaw and tomatoes for a super tasty appetizer or fun weeknight dinner. Perfect for football parties or whenever you have a feed a hungry crowd.

If you live in Pittsburgh or watched Man vs Food or 5 other shows that featured Primanti Bros Restaurants, you will know about their famous sandwiches.
They are so delicious and so I made my own mini version in these Primanti sausage sliders. I made my favorite of their sandwiches and just use Hawaiian dinner rolls to make a fun party appetizer!
You don’t have to be from Pittsburgh to enjoy these though. Even if you’ve never heard of Primanti sandwiches, you have to check these out.
What is a Primanti sandwich?
The basic concept is some type of protein, with melted cheese, topped with fries, coleslaw and tomato on thick slices of Italian bread. Primanti Bros offers 18 different types of sandwiches!
For people who don’t like their food to touch this might not be the one for you but if you are open to it, you will be pleasantly surprised how the flavors really go together.
They use fresh cut fries and their slaw is not creamy but more of a sweet and sour vinaigrette dressing. I don’t know why it works but it does.
Recipe ingredients I used.
Like I said this is my version so I used Italian sausage in roll, frozen hash browns, provolone cheese, coleslaw mix, oil, vinegar, white sugar, ripe tomato and Hawaiian butter rolls.
I used the hashbrowns instead of French fries because they would have been too bulky for this mini sausage sandwich. However the hash browns worked great.
It’s important to note that I used the Hawaiian savory butter rolls not the sweet rolls. We first had them with the sweet rolls but found the savory butter rolls were much better.
How to make Primanti sausage sliders.
- Preheat the oven to 350°F and get out two large skillets. Cut the sausage into 12 slices and brown them on both sides in one of the skillets.
- In the other skillet make the hash browns according to the instructions on the package. I ended up using 4 cups of the frozen potatoes. You want them to be golden brown.
- Slice the Hawaiian butter rolls in half as you would a bagel and place the bottoms on a baking sheet or in a baking dish. Add the cooked sausage patties one top of the slider buns then add the provolone cheese slices. You might want to cut the cheese slices so you can cover all the sliders.
- Place the hash browns on top of the cheese then add the tops of the buns. Spray them with nonstick cooking spray and place in the oven for 10-15 minutes.
- While they are baking make the coleslaw by mixing the cabbage, olive oil, vinegar and sugar. Season with salt and pepper and mix again.
- Take out the sliders and top with the coleslaw and the slices of tomatoes. Place the tops on and serve! (Please scroll down for the recipe card.)
Below you can see I only made 6 sliders but the recipe card below is for 12. That’s because the dinner rolls come in a 12 pack. When I made these I also made half of them into bacon cheese burgers and 12 sliders were more than enough for our family. LOL!
Other sandwich combinations to try.
As I mentioned above there 18 different Primanti sandwiches to try but these are a few that would work out good for sliders. Note that they always use provolone cheese and of course you would add the fresh cut fries, slaw and tomatoes.
- either ham, roast beef or turkey with cheese – these are main stream cold cuts
- capricola, pastrami or salami and cheese – these are a little more unique
- egg and cheese – these would be great for breakfast for a crowd
- steak and cheese – try thin cut sliced steaks for these
- bacon and cheese – use good, thick bacon (could also add egg)

These Primanti's sausage sliders make a fun dish to take to a football party or tail gate. They also make for a fun dinner. Italian sausage with melted cheese and topped with potatoes and coleslaw make for a tasty sandwich!

- 12 King's Hawaiian Butter rolls
- 12 oz of Italian sausage in a roll
- 4 cups frozen hash browns
- 8 oz provolone cheese, sliced
- 3 tomatoes (to make 12 slices)

- ½ teaspoon sugar
- 2 tablespoons apple cider vinegar
- salt and pepper to taste

Notes
It's important that you use King's Hawaiian Butter rolls and not the original sweet rolls. You can use any kind of brand but make sure they are not sweet.
