I don’t know about you but when it comes to sweets, I do better when I don’t have a too much around the house. Like with these keto blueberry muffins. This recipe makes two which is great for me because if I made a dozen I would be tempted to have more than one.
This low carb muffins recipe is so easy and you can make it in 1 minute – or maybe two. You just mix, microwave and eat! Sometimes I add a bit of lemon zest and that goes perfectly with the blueberries and brightens the sweet cake.
I love these blueberry muffins because they are made with nut flour so they are gluten free and keto friendly. Also they are made with fresh blueberries which are so good for you.

Are Blueberries Low Carb?
Relatively speaking, yes blueberries are ok on a keto diet. While many fruits are too high in sugar, most berries are good choices for low carb eating.
Blueberries have many health benefits such as being low calorie but are also high in vitamin C and vitamin K. They are very high in antioxidants and can be good for heart and brain health. Learn more about blueberries here.
The nutritional information for 1 cup blueberries is 70 calories, 17g of carbs and 4g of fiber. So blueberries have roughly 13g net carbs in 1 cup. (Source: USDA)
These low carb blueberry muffins only use 2 tablespoons so each muffin has only 1 tablespoon of blueberries.
Ingredients I Used
You don’t need a lot of ingredients to make this 1 minute muffin. I used blueberries cream cheese, butter, almond flour, baking powder, Swerve sweetener, egg yolk, vanilla stevia and heavy cream.Â
Note that I have not tried coconut flour in this recipe. However if you are allergic to nut flours, coconut flour might be a good option. You use much less coconut flour compared to almond so you might have to play around a bit. Here’s a good article to check out.
Also I think frozen blueberries would work as well even though I used fresh. It might be hard to cut frozen blueberries so just add them whole.
Let’s Make These Low Carb Blueberry Muffins
- Add a tablespoon of cream cheese and a tablespoon of butter and microwave for 10-15 seconds to soften them.
- In another bowl mix the dry ingredients – almond flour, baking powder and Swerve sweetener.
- Add the cream cheese mixture to the flour mixture and mix well. Then add in the egg yolk, liquid stevia and cream. Note you could sub almond milk if you wish.
- Cut the blueberries in half and fold into the batter. Spoon the muffin batter into 2 ramekins or custard cups.
- Microwave each muffin separately for 30 seconds.
- Let them cool down before eating.
Variations On This Blueberry Muffin Recipe
I added some lemon zest to the muffin because I love the combination of blueberries and lemon. It just adds some brightness to the sweetness of the muffin. To do this just use a microplane and grate the lemon into the batter before you fold in the blueberries.
You could also add a few chopped pecans or walnuts to this muffin or even some coconut flakes. Also other berries will work too but make sure to chop them up. But try the lemon if you can because it’s a nice taste.

Keto Blueberry Muffin - 1 minute in the microwave!
Try this easy but delicious low carb blueberry muffin you make in the microwave! These blueberry muffins use nut flour so they are gluten free too.
Ingredients
- 1 tablespoon cream cheese
- 1 tablespoon butter
- ¼ cup almond flour
- ½ teaspoon baking powder
- 1 tablespoon Swerve sweetener
- 1 egg yolk
- 1 tablespoon heavy cream
- ¼ teaspoon liquid stevia
- 2 tablespoons blueberries, sliced in half
- ¼ lemon, zested (zest only) optional
Instructions
- In a microwaveable bowl, add the butter and cream cheese and cook for only 10-15 seconds to soften.
- In a separate bowl, mix the almond flour, baking powder and Swerve sweetener. Add the cream cheese mixture to the almond flour mixture and mix well.
- Next add in the egg yolk, liquid stevia and heavy cream and mix well to make your batter. If you are using the lemon zest, add in now and mix well. Then fold in the blueberries.
- Spoon the muffin batter into two small microwave safe ramekins or custard cups.
- Bake in the microwave separately for 30 seconds only. They were completely done for me. Of course if they don't look done cook for 10 more seconds.

This was so much fun to make with what I had in my kitchen. I subbed 2 teaspoons of the coconut sugar for the other sweeteners since I don’t tolerate them, which of course makes them Paleo. I used a whole egg and omitted the dairy products. They were just great! 45 seconds in the microwave since I’m at high altitude.
