This sweet keto snack will make you want to celebrate because it only take a few minutes to make, is sugar free, gluten free and there are only 2 servings so you won’t over do it. Each keto cup cake has only 2.9g net carbs and that’s with icing!

Being stuck at home, I have seriously been craving icing. I actually made a delicious full sugar icing, had a couple spoonfuls and threw it away because I knew I would eat the whole thing. That’s when I set off to make this microwave low carb cupcake.
This is the perfect sweet keto snack for when you really want baked goods but don’t want to have a lot hanging around your house. It only takes a few minutes to make and 30 seconds to bake in the microwave. And there are only two servings, so you can either share with someone or save it for the next day. Microwave Low Carb Cupcake In A Nutshell
- Microwave the cream cheese and butter for 15 seconds.
- Mix all of the ingredients together to make a batter.
- Spoon into 2 cupcake liners and microwave separately for 30 seconds each.
- Let cool before icing.
- Whip the icing together and ice your cupcakes once they are cooled.
- Scroll to the bottom for the full recipe card you can print and save for later.
Making The Keto Cupcake Batter
This batter consists of almond flour, baking powder, cream cheese, butter, heavy cream, Swerve confectioners sweetener, vanilla liquid stevia and egg yolk.
Start by microwaving the cream cheese and butter for just 15 seconds, no more. Add in the almond flour, baking powder, Swerve sweetener, stevia, egg yolk and cream. Mix well to make the batter. It should look like the photo below.
Spoon into paper cupcake liners. I placed my liners into some plastic ramekins that I had just so they would hold their shape. Silicone baking cups would work too. Or you can just place the batter into two small ramekins if you wish.
Microwave each cupcake individually for just 30 seconds, that’s all. Make sure to let them cool completely before icing.
Sugar Free Icing Recipe
I am loving this keto icing recipe and will be writing a post completely on sugar free icing. Today I used Swerve confectioners sweetener, butter, crisco shortening and vanilla extract.
In a mixing bowl, cream the cristco and butter together until creamy. Add in the confectioners sugar in slowly until well combined. Then add in the vanilla extract and a little hot water. Whip for about a minute or two until nice and creamy. You will have lots of leftover icing for future microwave cupcakes.

Today I just wanted to have 2 servings and not a whole cake but if you don’t want to go to the bother of making this recipe, the Swerve vanilla cake mix is very good and great to have on hand. They carry quite a few Swerve products if you are interested.
I have been buying a lot of Netrition’s keto products lately and have been really happy with them. I find they have a big selection and good prices so I buy things like these sprinkles and cake mixes to have on hand and other keto snacks.
So you can see that with a few ingredients you can make 2 cupcakes in roughly 5 minutes. You will have a lot of icing leftover that you can use whenever you want. Below you can see how moist and cake-like these cupcakes are. They are not eggy at all, nor are they too soft to eat with out a fork or spoon.

Microwave Low Carb Cupcake
If you are craving baked goods, try this low carb cupcake you can make in the microwave. It only takes a few minutes and delicious! Makes 2 so you can share or save for tomorrow.
Ingredients
- 1 tablespoon cream cheese
- 1 tablespoon butter
- ¼ cup almond flour
- ½ teaspoon baking powder
- 1 tablespoons Swerve confectioners sugar
- 1 egg yolk
- ¼ teaspoon liquid vanilla stevia
- 1 tablespoon heavy cream
Buttercream Icing
- 4 tablespoons shortening
- 4 tablespoons butter
- 1 ¼ cup Swerve confectioners sugar
- ½ teaspoon vanilla extract
- 1 teaspoon hot water
Instructions
- To make the icing: In a mixing bowl add the butter and shortening and cream together.
- Add in the Swerve powdered sugar and mix to combine. Then add in the vanilla extract and water. Beat for a minute or two until nice and creamy. Store in a sealed container.
- To make the cupake: In a microwaveable bowl, add the butter and cream cheese and cook for only 10-15 seconds to soften.
- In a separate bowl, mix the almond flour, baking powder and Swerve sweetener.
- Add the almond flour mixture to the cream cheese mixture and mix well.
- Then add in the egg yolk, liquid stevia and heavy cream and mix well to make your batter.
- Spoon into 2 cupcake liners. If put my paper liners into two small ramekins I had so they would hold the liners in place. If you don't have liners you can spoon the mixture into 2 small ramekins or cupcake sized bowls.
- Bake in the microwave separately for 30 seconds only. They were completely done for me. Of course if they don't look done cook for 10 more seconds.
- Let the cupcakes cool completely before icing. Note this will make two cupcakes but you will have a lot of icing leftover.

These are wonderful and wonderfully versatile. Since I am a Type 1 Diabetic and a heart patient here is what I did to arrange this recipe to suit me. I used Fat Free Cream Cheese, Margarine for the butter, 1/8 cup Eggbeaters for the yolk and Almond Milk for the heavy cream. I flavor them with whatever extract suits my fancy that day. I skip the frosting. When I am ready to eat them I slather some Walden Farms Raspberry jam over the top and a little sugar free Cool Whip over that. It is absolutely awesome! For the second cupcake I do the same with Walden Farms blueberry or strawberry jam. I haven’t tried it yet but I bet the Cranberry jam would good with a few walnuts over top. Yum.
