An easy and delicious meal that is low in carbs but high in protein and full of flavor. It’s the perfect low carb dinner for busy weeknight. Each serving has only 2.2g net carbs!

When the weather gets colder I crave pot roast dinners. So when I see BOGO sales at the grocery store I grab two chuck roasts for dinners like this.
I decided to make a slow cooker pot roast this week and came up with this keto beef stroganoff dinner. I used buttery tender mushrooms and a creamy sour cream sauce with slow cooked tender beef from a chuck pot roast and it was delicious.
This is another one of the keto dinner that the whole family will love. I ate mine over cauliflower rice but you can also serve it with egg noodles for the family. It’s a win win easy weeknight dinner that is also gluten free and low carb with only 2.2g net carbs. It’s great for those on a keto diet.
Recipe ingredients I used.
The simple ingredients I used for this slow cooker dinner is a nice chuck roast, fresh mushrooms, butter, Better than Bouillon beef base, garlic, onion flakes, cream cheese and sour cream.
I love the taste of Better than Bouillon products as they add so much flavor and I use them in tons of recipes. However you can substitute with beef stock or beef broth if you wish. I would season the roast with salt and pepper if substituting though.
Just a tip for you, I like to use Daisy brand sour cream as it has less carbs than most sour creams. Regardless in this particular recipe it won’t matter what brand you use because it’s so low carb.
How to make keto beef stroganoff in the slow cooker.
I also have a keto stroganoff skillet version of this recipe that can make on the stove. I use a sirloin steak in that recipe and it takes just 30 minutes. This recipe is more of a slow cooker pot roast version.
Step 1: Place the chuck roast into the slow cooker. The whisk together the water, beef bouillon, garlic and onion flakes and pour over the chuck roast. Cover and cook on high for 4-6 until the roast is tender and falls apart.
Step 2: This step is optional but I’m a big fan of mushrooms this way and feel it adds a lot of flavor. Do this while the roast is cooking after the roast is done.
Get out a large skillet and heat to medium or medium high heat. Add the butter and mushrooms to the hot skillet and saute for about 8-10 minutes until cold brown like the picture below.
Otherwise you can add the mushrooms right to the slow cooker but use ½ the amount of water because the mushrooms will produce water.
Step 3: Once the roast is done, take it out of the crockpot and place in a large bowl. Use two forks and shred or slice the roast into bite size pieces.
Step 4: Before adding the roast back in, add the cream cheese to the hot beef broth and whisk to combine. Then stir in the sour cream and mushrooms to make a creamy sauce.
Step 5: Place the shredded meat back into the slow cooker and let the beef mixture sit for about 5 minutes to soak up the sauce. (Please scroll down to view and print the recipe card.)
Note if the mushroom sauce is too thin for you, you can turn the slow cooker to high and heat for 20 minute uncovered to let some of the liquid condense.Or you can whisk a thickener like xanthan gum into the sour cream mixture.
The sauce is very flavorful and even though it’s thin it tastes great so it didn’t bother me.
What to serve with this keto beef stroganoff.
As I mentioned above I like this eat this as is for a keto dinner but sometimes I eat it over riced cauliflower.
You can also try a noodle replacement like zucchini noodles, cabbage noodles or turnip noodles. If you don’t care about carbs I would serve it over a bed of egg noodles or regular white rice.
Other keto side dishes to serve along side would be this easy asiago cauliflower rice, creamy cauliflower mash or spinach cauliflower rice pilaf.

Keto Beef Stroganoff in the Slow Cooker
This low carb slow cooker beef stroganoff recipe is full of flavor and so easy to make. It just takes a few ingredients and has a super tasty creamy mushroom sauce with tender chuncks of beef. The whole family will love it and not even know it's keto!
Ingredients
- 3 lb beef chuck roast
- 1 tablespoon Better than Bouillon beef base
- 1 cup water (less if you are adding mushrooms uncooked**)
- 1 teaspoon dehydrated onion flakes (can sub ½ teaspoon onion powder)
- 2 garlic cloves, crushed
- 2 tablespoons butter
- 16 oz mushrooms, sliced
- 4 oz cream cheese
- ½ cup sour cream
Instructions
- Place the chuck roast into the slow cooker. The whisk together the water, beef bouillon, garlic and onion flakes and pour over the chuck roast. Cover and cook on high for 4-6 until the roast is tender and falls apart.

- Place the shredded beef back into the slow cooker and let the meat sit for about 5 minutes to soak up the sauce.

Notes and SubstitutionsÂ
• Note if the sauce is too thin for you, you can turn the slow cooker to high and heat for 20 minute uncovered to let some of the liquid condense. Or you can use 1 tsp xanthan gum which is a low carb thickener. Whisk it in to the sour cream sauce before adding the roast back in.Â
•  I didn't add any additional salt or black pepper because the Better than Bouillon has enough saltiness for my taste. However if you don't use it, substitute the water for beef broth and before adding the roast, season with salt and black pepper.
• If you don't have any sour cream you can substitute heavy cream.  I would use ½ the water at the beginning and use the same amount of heavy cream as you do the sour cream and add it at the end.Â

Hi Sue, to be honest I just determined the serving size by how many servings my family got from it. But since I used a 3 pound roast I estimate roughly 6 ounces of stroganoff per serving. I hope you like and that helps a bit.
