I’m always looking for an easy, keto friendly pot roast to make. The other day I was looking around in my pantry and found a jar of banana pepper rings. I’ve seen recipes where they add these to pot roasts so I gave it a try. Yum, yum, yum!
This keto Italian beef roast is so full of flavor. It has banana peppers, garlic, spices and even parmesan cheese! Just place it in the slow cooker and it does it’s magic to make such flavorful and tender beef.
This low carb beef dish tastes even better the next day and each serving only has 3.3g net carbs.
Pot Roast Recipe Ingredients
You really only need a few ingredients to make this slow cooker beef roast and they are:
- chuck beef roast
- a jar of banana pepper rings (mild)
- Better than Bouillon beef base
- Italian seasonings
- dried minced onion
- garlic powder
- parmesan cheese
- heavy cream
I want to point out that if you can try to use the Better than Bouillon beef base. It adds soooo much flavor to soups and stews and recipes like this.
If you don’t have it you can use regular beef bouillon or beef broth but the BTB is much better. They sell it in most grocery stores and it lasts a long time.
Let’s Make Our Keto Italian Beef !
First thing you want to do is add your roast into the slow cooker and then pour the jar of peppers over the roast. You want to use both the peppers and juice.
Next mix the sauce which is the Better than bouillon, water and spices. Pour it over the beef and let it cook on low for 8 hours or on high for 6 hours. Timing will depend upon your slow cooker but once the beef is very tender it is done.
Once the meat is done, take it out and place in a large bowl but keep the juices in the slow cooker. Pour in the cream and parmesan cheese and whisk to combine. Then pour it over the beef in the bowl or add the beef back into the crock and serve.
What Can I Eat With This Pot Roast?
We ate this as is for our main dish. Some yummy side dishes to keep this keto friendly would be this loaded cauliflower mash, or a mushroom brie cauliflower risotto. And of course regular cauliflower rice would be great too.
If you are not low carb you can eat this over noodles or make a sandwich with crusty French bread.
Recipe Tips And Notes
- This recipe makes 8 servings which is a lot but the leftovers were really good and make great sandwiches. You can try a low carb bread if you are a roast beef sandwich fan.
- I used a jar of mild banana peppers and this dish was not hot – spicy wise. I’m not even sure they make hot banana pepper rings but I would stick with the mild.
- The cream is not totally necessary but if you are going to use it, add it at the end. Try to whisk the ingredients together at the end though it probably won’t get real smooth but it will taste delicious!
- I used a chuck beef roast because I feel this type of roast has a lot of flavor and is inexpensive. Use what ever cut of beef you normally use for a pot roast and it will work fine.
Well this is definitely a keeper keto meal for us. My hubby really liked it and it was a nice change of pace for us. I hope you give it a try and let me know what you think of it.

Ingredients
- 3 lb beef chuck roast
- 16 oz jar of  banana pepper rings
- ½ cup of water
- 1 tablespoon Better than Bouillon beef base
- 1 tablespoon dried minced onion
- 1 teaspoon garlic powder
- ½ teaspoon salt
- 1 teaspoon Italian seasoning
- 2 tablespoons heavy creamÂ
- ¼ cup parmesan cheese
Instructions
- Place the chuck roast into the slow cooker and pour the whole jar of banana peppers over top.
- In a bowl mix the Better than Bouillon base, water and all the spices but don't add the cream and parmesan cheese. Put those in at the end.
- Pour the sauce over top, cover and cook on high for 6 hours or low for 8 hours. Because slow cookers may vary, you know the dish is done. when the beef is tender.
- When done, take out the beef and place in a large serving bowl. Add the cream and parmesan cheese to the sauce and whisk to combine. Then pour it over the beef.
- You can also just make the sauce and place the beef back into the crock if you want.
