I’m always looking for an easy, keto friendly pot roast to make. The other day I was looking around in my pantry and found a jar of banana pepper rings. I’ve seen recipes for Mississippi pot roasts where they add these to pot roasts so I gave it a try. Yum, yum, yum! It has such amazing flavor!
This Italian keto roast with banana peppers is so full of flavor. It’s made with a beef roast, banana peppers, garlic, spices and even parmesan cheese! Just place it in the slow cooker and it does it’s magic to make such flavorful and tender beef.
This low carb beef dish tastes even better the next day and each serving only has 3.3g net carbs. And if you aren’t on a low carb diet you can make a tasty sandwich on crusty bread.

Recipe ingredients I used and substitutions.
You really only need a few simple ingredients to make this slow cooker beef roast and they are: chuck beef roast, a jar of banana pepper rings, Better than Bouillon beef base, Italian seasoning, dried mince onion, garlic powder, parmesan cheese and heavy cream.
Beef Chuck Roast
To me this cut of meat is the best for a traditional pot roast. If you have a tougher cut you can use it because the slow cooker is great for creating tender beef. I like the chuck roast because a roast with marbling adds more flavor.
Jar Banana Peppers
You can use pepper rings or even pepperoncini peppers but make sure they are sliced. You want to add the whole jar and even the brining liquid which will add a lot of flavor. For this reason I would not use fresh banana peppers. Also I used mild pepper rings which are not very spicy.
Better than Bouillon Beef Base
I love to use Better than Bouillon products in my low carb recipes because they add tons of flavor without many carbs. So for this reason I think you should try to use this product if you can. You can also use it in soups and stews so it’s a good investment. They sell it in most grocery stores and it lasts a long time.
If you don’t have it you can use regular beef bouillon or beef broth but you may want to season more with a some salt and black pepper.
Parmesan Cheese and Heavy Cream
These two products are substitutes for ranch seasoning mix which most people use in their Mississippi pot roast. Theyadd more flavor and thickness to the sauce. You could eliminate the heavy cream if you had too but I would keep the parmesan cheese for the flavor it imparts.
How to make keto roast with banana peppers in the slow cooker.
Step 1: Add the chuck roast to the slow cooker. Pour the jar of peppers over the roast. You want to use both the peppers and juice.
Step 2: Mix together the sauce made with the Better than bouillon, water and spices. Pour it over the beef and place the lid on top.
Step 3: Cook on low for 6-8 hours or on high for 4-6 hours. Once the meat falls apart and is tender it’s done. Cooking time may vary.
Step 4: Once the meat is done, take it out and place in a large bowl but keep the juices in the slow cooker. Pour in the heavy cream and parmesan cheese and whisk to combine. Then pour it over the tender meat in the bowl or add the beef back into the crock and serve. You can slice or shred meat if you want.

What can you eat with this pot roast?
We ate this delicious roast as is for our main dish. Some yummy side dishes to keep this keto friendly would be this loaded cauliflower mash, these green beans with almonds or a mushroom brie cauliflower risotto. And of course regular cauliflower rice would be great too.
If you are not low carb you can eat this delicious dish over egg noodles or make a sandwich with crusty French bread and add a nice green salad.

- This crock pot recipe makes 8 servings which is a lot but the leftovers were really good and make great sandwiches. You can try a low carb bread if you are a roast beef sandwich fan.
- I used a jar of mild banana peppers and this dish was not hot – spicy wise. I’m not even sure they make hot banana pepper rings but I would stick with the mild. You could also use pepperoncini peppers in instead. Just make sure the pepperoncini peppers are sliced into pieces and to use the pepper juice and liquid from the jar.
- The cream is not totally necessary but if you are going to use it, add it at the end. Try to whisk the ingredients together at the end though it probably won’t get real smooth but it will taste delicious!
- I used a chuck beef roast because I feel this type of roast has a lot of flavor and is inexpensive. Use what ever cut of beef you normally use for a pot roast and it will work fine.

Keto Slow Cooker Roast with Banana Peppers Recipe
This keto pot roast with banana peppeers recipe is a delicious dinner you can make in the slow cooker. Using banana peppers and spices give the shredded beef lots of flavor and it's super easy to make. Each serving only has 3.3g net carbs.
Ingredients
- 3 pound beef chuck roast
- 16 ounce jar of banana pepper rings
- ½ cup of water
- 1 tablespoon Better than Bouillon beef base
- 1 tablespoon dried minced onion
- 1 teaspoon garlic powder
- ½ teaspoon salt
- 1 teaspoon Italian seasoning
- 2 tablespoons heavy cream
- ¼ cup grated parmesan cheese
Instructions
- Place the chuck roast into the slow cooker and pour the whole jar of banana peppers (juice and all) over top.
- In a bowl mix the Better than Bouillon base, water and all the spices but don't add the cream and parmesan cheese. Put those in at the end. Whisk together.
- Pour the sauce over top, cover and cook on high for 4-6 hours or low for 6-8 hours. Cooking time may vary but you know the dish is done when the beef is tender.
- When done, take out the beef and place in a large serving bowl. Add the heavy cream and parmesan cheese to the sauce and whisk to combine. Then pour it over the beef.
- You can also just make the sauce and place the beef back into the crock if you want. Serve as is, or over cauliflower rice for a low carb dinner. If you don't care about carbs, you can serve over egg noodles or make a sandwich with crusty bread. Store leftovers in an airtight container.
