This is one of my first posts that I made many years ago and really need updating. The other day I was craving Jello but wasn’t in the mood for the typical fruit flavors and remember this post of keto vanilla gelatin squares.
My first recipe was for Creamy Chocolate Gelatin Squares because I love the chocolate flavor. However sometimes I like to eat these at night and the caffeine in the chocolate would disrupt my sleep. So I came up with a vanilla version to eat as a night time snack.
Also today I wanted to keep it simple with the vanilla flavored jello. It’s such a great healthy snack to have on hand when you want a sweet treat and even makes a good dessert. All you need is 5 simple ingredients and you can make these low carb high protein jello squares.
Recipe ingredients I used and substitutions.
The simple ingredients I used were almond milk, heavy cream, vanilla protein powder, Swerve sweetener and unflavored gelatin.
Almond Milk and Heavy Cream
You want to use unsweetened almond milk or any nondairy ilk as they usually have less carbs. Unsweetened coconut milk would be my second choice instead of almond. And you should heavy whipping cream or even coconut cream.
Vanilla Protein Powder
I really like IsoPure Vanilla Protein Powder. All of their protein powders are low in carb and taste good to me. You can use your favorite brand of choice. You can also use pea protein or things like that if you like but you will have to check the carb counts.
Great Lakes Grass-Fed Beef Gelatin Powder
Great Lakes Gelatin is a high quality gelatin from grass fed cows. However you can also use any kind unflavored gelatin powder like Knox that you can get at the grocery store. I just think Great Lakes is of good quality so I like to have it on hand.

Sweetener
I prefer Swerve products and use their confections powdered sweetener the most. You of course can use your favorite sugar substitute. And if you want even more vanilla flavor you can add a little vanilla extract. I would use ½ teaspoon of vanilla extract.
How to make vanilla protein gelatin.
Step 1: Get out a mixing bowl and add ½ cup of unsweetened almond milk. Sprinkle the gelatin over top and let sit for 5 minutes to let it bloom.
This step is similar to making regular Jello except we are using almond milk instead of cold water.
Step 2: In a microwave bowl add the 1 cup almond milk, heavy cream, sweetener and water and microwave for 2 minutes until very hot. After the gelatin has sat for 5 minutes add this hot mixture and whisk so the heat dissolves the gelatin.
You can also do this step on the stove. Add everything to a small pan and heat to medium heat. Whisk everything together until just simmering then take it off the heat.
This step is like regular yellow when you add the hot water instead we are using this creamy mixture.
Step 3: Add in the protein powder and whisk again until well combined. Pour the mixture into an square container or baking dish and refrigerate for a few hours until it has completely gelled.
Step 4: When done, take it out of the refrigerator and cut into squares. Store in an airtight container in the refrigerator. Please scroll down to view the printable recipe card.
Below you can see what this keto vanilla jello looks like when it’s done. Notice these are not transparent but have a white color to them. You could use food coloring if you wanted change them up. You can eat as much as you want. This is also a recipe you can play around with the flavoring or even add ins.
Ways to change up this recipe.
f you want to add some variety to this basic recipe you can switch up the flavors of the protein powder. You can also add different flavor extracts or sweet spices like cinnamon, pumpkin pie spice etc.
And lastly you can add additional ingredients like cocoa powder, sugar free chocolate chips, unsweetened coconut, fresh berries etc.

Keto Vanilla Gelatin Squares
These easy keto vanilla gelatin squares are the perfect snack as they are sugar free, low carb and high protein. These are great to have on hand when you want some quick and sweet.
Ingredients
- 1 ½ cups unsweetened almond milk
- ¼ cup heavy whipping cream
- ¼ cup water
- 1 tablespoon Great Lakes Powdered Gelatin (unflavored)
- 1 scoop vanilla protein powder (I like IsoPure)
- ½ cup Swerve sweetener
Instructions
- Pour ½ cup almond milk in a mixing bowl and sprinkle the gelatin powder over top. Let it sit for 5 minutes to bloom.
- In the meantime get out a microwave safe bowl and add the rest of the almond milk, heavy cream, water and sweetener. Microwave for 2 minutes or until very hot.
- Once the gelatin has bloomed, pour the heated mixtured into the bowl with the gelatin. Whisk until gelatin is completely dissolved. Add protein powder and whisk until well combined.
- Pour the mixture into an 8x8" baking dish and place in the refrigerator. Refridgerate until completely gelled and then cut into squares. Store leftovers in an airtight container in the refrigerator.

Thank you for the recipe. This looks like a nice treat. Can I substitute Fairlife brand low carb cow milk? I cannot consume almond milk because I have oxalate toxicity and oxalosis? Also, do you think the ingredients could be warmed in a convection/toaster oven on a low heat? I don’t have a microwave.

Yes you can use Fairlife and yes you can use the stovetop or oven if that works for you. You just need the liquids to be hot to dissolve the gelatin. Good luck and I hope you like it!

the great lakes gelatin company has 3 types what type do you use

Hi Jill, I use the red container (usually the beef) because it gels while the green container is collagen hydrolysate and does not gel. I think the beef and the pork work similarly but the beef is considered kosher and for me it’s more readily available. Hope that helps!
