I’m always looking for ways to use my Great Lakes Gelatin after seeing article after article about the benefits of gelatin for your health. But I don’t like gummy bears and sometimes I’m not in the mood for fruity flavored jello. So I started experimenting with keto panna cotta recipes and came up with this low carb cinnamon panna cotta. It’s creamy with a bit of spice and perfect ending to a meal. It’s also only 2.6g net carbs so you can eat one every night!
What Is Low Carb Panna Cotta?
Panna cotta is a sweet, creamy Italian dessert that is thickens with gelatin. You can make many different flavored panna cottas from coffee to mango. It’s similar to a custard but firmer in texture. (Thank you wikipedia!)
Low carb or keto panna cotta is just using low carb ingredients like sugar free sweeteners, heavy cream or non dairy milks. Gelatin is naturally low carb so this is an easy dessert to make sugar free or low carb.
Low Carb Cinnamon Panna Cotta Recipe
- Add ¼ cup of the almond milk in a large bowl and sprinkle the gelatin all over to let it bloom.
- In a small sauce pan, add in the cream, remaining almond milk, sugar free maple syrup, egg yolks and cinnamon.
- Whisk well and heat over medium low heat. You don’t want it to boil and scramble the eggs.
- Keep whisking until the sides of the pan start to bubble and then take it over the heat.
- Pour over the gelatin mixture, add the vanilla and whisk until the gelatin is dissolved.
- Pour into ramekins and refrigerate for 2 hours until firm. Sprinkle more cinnamon and sweetener on top if you wish.
Recipe Notes
- I used Nature’s Hollow sugar free maple syrup to sweeten this low carb panna cotta. You can use any brand as long as it’s low carb and sugar free. If you don’t care about carbs use real maple syrup.
- You don’t need Great Lakes gelatin, you can use regular unflavored Knox gelatin if you wish.
- Lastly I sprinkled a bit of cinnamon and Swerve over top because I wanted a bit more sweetness but it’s option. You could also try a few toasted pecans on top if you like.

Low Carb Cinnamon Panna Cotta
This low carb cinnamon panna cotta is an easy and delicious dessert you can whip up any night of the week. Creamy and smooth, this low carb treat has only 2.6g net carbs!
Ingredients
- 1 ½ cup unsweetened almond milk I used Trader Joe's
- ¼ cup heavy cream
- 4 tablespoons Nature's Hollow sugar free maple syrup
- 3 egg yolks
- 1 ½ teaspoons cinnmaon
- 1 teaspoon vanilla
- cinnamon and swerve to sprinkle on top (optional)
- 1 tablespoon Great Lakes unflavored gelatin (red canister)
Instructions

Pour ¼ cup of almondt milk in a bowl and sprinkle the gelatin on top to bloom.

Pour the rest of the almond milk, heavy cream, syrup, egg yolks and cinnamon in a pan and heat over medium low heat. Keep whisking until sides start to bubble. If the heat is too high the eggs will scramble. You just want the mixture to be hot enough to dissolve the gelatin in the next step.

Take it off the stove.

Whisk the heated mixture into the gelatin mixture along with the vanilla. Then pour into ramekins or small bowls. This recipe filled 3 large ramekins.

Refrigerate for 2 hours until it sets.

Sift a mixture of cinnamon and sweetener on top if you like added sweetness. (I did.)

what a lovely, silky version of panna cotta. the berries make the composition beautiful – and delicious too, I’m sure. Last time I made panna cotta, it didn’t gel very well. I’ll try this recipe next time for sure.

I made some Panna Cotta and although no Chef should worry, it is actually quite good.
I tweaked it a bit and sprinkled Stevia instead of syrup and used
Coconut cream instead of real cream. But otherwise used the same other ingredients.
This is my first attempt at trying anything like this.
