I don’t know about you but I love cool crunchy salads in the summer time. Sometimes I get sick of eating lettuce so I take whatever fresh veggies I have on hand and chop them up for more crunch and to be more filling.
Today I made this simple but tasty low carb cucumber radish salad and with blue cheese recipe because I love the coolness of cucumbers, the peppery bite of crunchy radishes and I like blue cheese on just about anything. I tossed it in a light vinaigrette dressing and it turned out to be a great blend of flavors so I thought I’d share it with you today.
This dish uses minimal ingredients and is a great way to use simple vegetables you probably have on hand or might just be growing in your summer garden. Plus you can substitute with lots of other vegetables or even cheeses and I have suggestions below. Plus it’s pretty to look out so that’s just another bonus for this healthy side dish with only 132 calories and 5.8g net carbs!
Recipe ingredients I used and substitutions.
The simple ingredients I used were mini cucumbers, radishes, red onion and blue cheese. For the dressing I used red wine vinegar, olive oil, salt and ground black pepper.
Cucumbers
I like to use English Cucumbers or Persian cucumbers. The Persian are mini cucumbers which I used today but the English are also good because neither have many seeds. You can use any kind of cucumber you want but I prefer these two kinds.
Radishes and Red Onions
I used fresh radishes and I love the peppery flavor they add to the salad. They are a main ingredient so I would recommend substituting. I like red onions mostly for the color but you could use yellow or white onions.
Blue Cheese
I specifically wanted to use blue cheese in this salad but other options are feta cheese, goat cheese or even shaved asiago or parmesan cheese. You could also use gorgonzola or another type of blue cheese if you want.
For the dressing I used red wine vinegar because I like the light flavor of it. You could also use apple cider vinegar or white wine vinegar too. I think balsamic would be a bit heavy for this light salad.
How to make this cucumber radish salad.
Step 1: To a small bowl add the olive oil, vinegar, salt and ground black pepper. Whisk to combine and set aside.
Step 2: Slice and chop the vegetables into bite sized pieces. Add the radish, onion and cucumber slices to a medium bowl. Pour the dressing over top and mix to combine.
Step 3: Sprinkle the crumbled blue cheese on top and refrigerate until ready to eat. Store leftovers in an airtight container. Please scroll down to view the printable recipe.
As mentioned above you can add other vegetables like cherry tomatoes, zucchini, celery, carrots, asparagus, etc. You can also change up the cheese like using fresh mozzarella, goat cheese, feta cheese or shaved parmesan.
And lastly try adding this like chopped nuts. Pecans, almond slices or walnuts would work well. You can even try some seeds or fresh herbs like fresh dill, basil, or just parsley.
I ate this tasty salad as a light lunch but you could eat it as a side dish with a nice dinner on the grill. Try these grilled marinated chicken breasts or this flank steak marinated in blue cheese dressing. If you want you can add some crusty bread though I like to follow a low carb diet so I usually don’t.Â

This cucumber radish salad with blue cheese recipe is hearty, delicious and full of flavor. It has great fresh taste for a light lunch or crunchy and summer side salad.
Ingredients
- 2 cups radishes, sliced
- 2 cups mini cucumbers, chopped
- â…“ cup blue cheese, crumbled
- ½ red onion, thinly sliced
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- In a small bowl whisk together the dressing using the vinegar, oil, salt and ground pepper. Set aside.
