I created this easy feta & radish salad recipe when I saw a gorgeous bunch of radishes at the store. It’s a low carb spring or summer salad recipe that you can make in minutes and only has 0.9g net carbs!

I don’t recall ever eating radishes growing up. Actually it is only within the last 10 years that I started eating them on a regular basis. I love the peppery taste, the crunch and the color they lend to salads. Recently I saw a big beautiful bunch of them at the grocery store and decided to make this ]easy feta & radish salad.
Tangy feta cheese, peppery radishes and green onions are dressed in a lemony ginger dressing. It’s fresh and delicious and only 0.9g net carbs! This radish salad is the perfect summer salad or low carb side dish.
Why Eat Radishes?
As I mentioned I like radishes because they are tasty, pretty and low carb. However they are also very good for you. Radishes are part of the Brassica family like broccoli and cauliflower. Some people use them as a low carb substitute for potatoes, not just in salads.
They are great to munch on and a ½ cup of radishes has only 12 calories, 1g net carbs and virtually no fat. They also have 14% of your daily Vitamin C. To learn more about radish goodness, check out this article from Healthline.
Radish Salad Dressing
This salad dressing is a vinaigrette made up of olive oil, rice wine vinegar, raw ginger, garlic, salt, lemon juice and lemon zest. I would not substitute powdered ginger but rather use fresh grated ginger. However if you don’t have rice wine vinegar you can use a mild vinegar like white wine, red wine, apple cider or just plain old white vinegar.
Easy Radish Salad Recipe
It’s quick and easy for a reason. Just slice your radishes (I love this mandoline) and chop your green onions. Whisk the salad dressing ingredients together and toss with radishes. You might have more dressing than you need so pour a little at a time until you get the amount you like best. Then fold in the feta cheese and refrigerate for an hour or so to chill. That’s it.
Variations On This Recipe
Of course I would recommend you keep the radishes in this radish salad, however you can try different onions and cheeses for a different taste. You could use red onions and blue cheese; or chives and goat cheese. All would taste great in this summer salad.

Quick & Easy Feta Radish Salad Recipe
I created this quick & easy feta radish salad recipe when I saw a gorgeous bunch of radishes at the store. It's a low carb spring or summer salad recipe that you can make in minutes and only has 0.9g net carbs!
Ingredients
- 3 cups radishes, thinly sliced
- 1 cup radish greens, diced (optional, if you have them use them)**
- 2 green onions, chopped
- ¼ cup feta cheese, crumbled
- 2 tablespoons lemon juice
- zest of ½ lemon
- 2 teaspoons raw ginger, grated
- 1 clove garlic, crushed
- ¼ teaspoon salt
- ¼ cup rice wine vinegar (can substitute with a mild vinegar)
- â…“ cup olive oil
Instructions

In a bowl, whisk the vingegar, oil, ginger, garlic, salt, lemon and lemon zest and set aside.

Using a mandoline, slice the radishes into thin slices. Chop the green onions and finely mince the radish greens if using. Note if you don't have the greens don't worry they are not necessary.

Toss the salad with about half of the dressing, taste and see if you want more. I didn't use all of the dressing myself. Then fold in the feta cheese.

Refrigerate until ready to eat.

Very nice recipe that gives one something different to do with an abundance of radishes. I enjoyed eating this right after I made it but it does not store well for eating later.
