My husband’s garden is really growing great guns right now so I decided to make this easy chopped cucumber garden salad. It is similar to a salad my grandmother used to make in the summer and it’s so refreshing.
I’ve used fresh mint which is the key in my opinion, along with garden cucumbers, tomatoes, peppers and red onion. It’s a nice low carb side salad but you can eat it as a lunch. One serving has only 2.8g net carbs!
What’s In This Chopped Cucumber Salad?
As you can see below I used tomatoes, mint, peppers and cucumbers from my husband’s garden. I also added the red onion but we don’t grow those.
The dressing is a simple oil and vinegar. With the mint it is very light and refreshing.
Let’s Make This Easy Garden Salad
It really couldn’t get easier than this salad because all you have to do is chop and mix.
I like to chop all the vegetables into the same size pieces. You can use a mandoline or food chopper to do this or just do it by hand.
As I mentioned the key is the fresh mint. If you have any growing in your yard you will now have a great use for it! Or if not, it’s readily available at most grocery stores.
Chop the mint and then mix the dressing which is just a good olive oil and apple cider vinegar. You can use different vinegars but you want something light like red or white wine vinegar, not something heavy like balsamic.

This easy low carb chopped cucumber garden salad is great with summer vegetables. Just chop, mix and veggies from your garden along with fresh mint and a simple dressing. Easy, healthy and deliciously refreshing, one serving has only 2.8g net carbs!
Ingredients
- 1 cup cucumbers, chopped
- ½ cup tomatoes, chopped
- ¼ red onion, chopped
- ¼ cup sweet bell pepper, chopped
- 2 tablespoons fresh mint, minced
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Chop all of the vegtables into equal bite size pieces and place in a big bowl.
- Coarsely chop the mint and add to the vegetables.
- Mix the olive oil and vinegar pour over vegetables. Sprinkle with salt and pepper and mix one more tiime.
- Best if eaten immediately.
- Note you can use more mint if you like the taste.
