During the summer my husband and I like to eat salads for dinner quite often. We sit out on the porch, put on some tunes and enjoy a big salad full of color and crunch. Salads just like this low carb spring roll tuna salad.
It’s full of colorful vegetables, herbs, flaky Yellowfin tuna and topped with a light, dipping-sauce-inspired dressing. I kid you not, this salad is very flavorful, and you won’t even realize that you are eating really healthy too!
Low Carb Tuna Packed In E.V.O.O.
I don’t know if you remember a post I did a while back for a creamy basil tuna & cauliflower risotto. It too featured StarKist Selects E.V.O.O. products. I really like that their products (StarKist Selects E.V.O.O. Yellowfin Tuna, StarKist Selects E.V.O.O. Wild-Caught Pink Salmon and StarKist Selects E.V.O.O. Yellowfin Tuna with Sun-dried Tomato) are all wild-caught fish packed in cold-pressed extra virgin olive oil and sea salt.
Tuna tastes SO much better packed in oil and since this is extra virgin olive oil you get all its healthy benefits as well.
I always keep these packets in my pantry. They are perfect for adding lean protein and healthy fats to any meal. I often top my salads with them or sometimes I just eat them right out of the packet. Best of all for me is that they are low carb too!
Cooling Summer Salads With Tuna To Try
One of my favorite go to salads is one with tuna, blue cheese, pecans and a balsamic vinaigrette. My husband and I eat this one on a regular basis.
Another tuna salad I make is a Greek themed salad with tuna, feta, olives, tomatoes, cucumbers and olives. You can be creative with your salads because tuna goes with just about everything.
At the end of this post I have 3 bonus tuna salad recipes for you. Just stuff a raw pepper with these salads and you have the perfect portable low carb summer lunch.
Let’s Make This Spring Roll Tuna Salad!
For my husband and myself, I chopped up a bunch of spring roll-inspired vegetables and placed them on a platter. I used red cabbage, sweet bell peppers, cucumbers, carrots, green onions, red onions, cilantro and basil leaves.
That way we could each pick what we liked and placed them on a big bowl of romaine. Then we each took a packet of StarKist Selects E.V.O.O. Yellowfin Tuna and spooned it out on top.
What’s In The Thai Dressing
The dressing is a simple combination of soy sauce, sesame oil, avocado oil, rice wine vinegar, garlic, sweetener, ginger and sesame seeds. It’s very light and tasty. I was going for the taste of a spring roll dipping sauce in the form of a vinaigrette.
Low Carb Toppings For Summer Salads
Here is a list of low carb toppings for your summer salads. Though I have a recipe below for what typically goes in a spring roll, you can use whatever vegetables that stir your fancy. Just pick a few from the list below.
- red cabbage: (2 T) 0.6g net carbs
- bell peppers: (2 T) 0.7g net carbs
- red onions: (2 T) 1.6g net carbs
- green onions: (2 T) 0.5g net carbs
- carrots: (2 T) 1.1g net carbs
- celery: (2 T) 0.2g net carbs
- radishes: (2 T) 0.3g net carbs
- zucchini: (2 T) 0.4g net carbs
- jicama: (2 T) 0.6g net carbs
- avocado: ( ¼) 0.9g net carbs
- tuna (StarKist Selects E.V.O.O Yellowfin Tuna): (1 packet) 0g net carbs
- riced cauliflower: (2 T) 0.3g net carbs
- broccoli: (2 T) 0.4g net carbs
- cheddar cheese: (2T) 0.2g net carbs
- feta cheese: (2T) 0.8g net carbs
- blue cheese: (2T) 0.4g net carbs
- walnuts (raw): (2T) g net carbs
- almonds (raw): (2T) 2g net carbs
- pecans (raw): (2T) 0.5g net carbs
Low Carb Spring Roll Tuna Salad

The nutritional information for 1 large salad is:
136 cals / 1.4g fat / 9.7g carbs / 3.6g fiber / 23.4g protein = 6.1g net carbs
The nutritional information for ½ of the dressing is:
226 cals / 23.9g fat / 1.9g carbs / 0.2g fiber / 2.3g protein = 1.7g carbs
Please note to lower the carb count in this salad I personally omitted the red onions and carrots which are a little higher in net carbs.
Low Carb Tuna Spring Roll Salad

Ingredients
- 2 cups romaine lettuce, chopped
- ⅛ cup red cabbage, chopped
- ⅛ cup green onions
- 1 tablespoons fresh cilantro leaves
- ⅛ cup carrots, chopped
- ⅛ cup cucumbers, chopped
- 1 tablespoons fresh basil leaves
- ⅛ cup bell peppers, chopped
- ⅛ cup red onions
- 1 packet StarKist Selects E.V.O.O. Yellowfin Tuna
Dressing
- 2 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 3 tablespoons avocado oil
- 1 teaspoon sesame oil
- ½ teaspoon raw ginger, grated
- 1 clove garlic, crushed
- 1 teaspoon sesame seeds
Instructions
- In a small bowl, whisk together all the dressing ingredients and set aside.
- Place the romaine lettuce on the bottom of the bowl and then place the toppings on top. Lastly spoon out the tuna on top.
- Pour dressing over the salad and enjoy!

We are so with you when it comes to tuna. And since we’ve started buying our tuna in EVOO it is so much tastier. When we bought tuna packed in water you had to put so many other ingredients so that you could swallow. We haven’t bought the tuna in packets but they look really delicious.
