Sometimes I miss sandwiches. Quite honestly I don’t eat them often but lately my son has been loving a local Italian grocery store sub sandwich. They always look so good but I don’t eat bread much and felt I should make my own version.
A couple weeks ago I made a Thai shrimp spring roll using collard greens and thought the collard greens would be the perfect vehicle for any sandwich toppings. So today I’m sharing with you my low carb sub sandwich using collard greens. It was fresh, delicious and definitely low carb. I’ll show you how I made them.
HOW TO USE COLLARD GREEN LEAVES AS WRAPPERS
This is my second time using these large collard greens. You can buy them in a big bunch but just need one to start with. Carefully slice part of the stem off to make it flatter. This will make it easier to rollup. I also cut a V in the bottom to get the tough stem off.
Next take the leaf and rinse it off but don’t dry. Place it in a skillet, turn up the heat and cover with a lid just for 1 or 2 minutes. this will soften the leaf and make it more pliable.
Low Carb Sub Sandwich Ingredients
I like to use all kinds of different meats, cheeses and vegetables. I bought a tray of meats at Aldi and used provolone cheese. Like most subs I also used fresh tomatoes, red onions and some Italian dressing.
I also made a turkey club sandwich with thick bacon, sliced turkey, Swiss cheese and mayo. Use whatever you sandwich ingredients you like.
How To Make A Low Carb Sub Sandwich
Once you have the collard greens leaf prepared, just stack your ingredients on the lower part of the leaf. I used capricola, ham, pepperoni, provolone, tomatoes, red onions and a bit of Italian dressing.
Fold the bottom up and over the filling, then fold in the sides of the leaf. From there you just roll the rest of the sandwich up as tightly as possible. And that’s it!
Turkey Club Low Carb Sandwich
This is my son’s favorite sandwich and I make it for his lunch most days. So I’m always tempted to take a bite of one but now I have my own! For this collard wrap sandwich I use turkey slices, Swiss cheese and bacon. Also I add a bit of mayo as well.
Why Use Collard Greens Anyway?
Collard greens are part of the cruciferous family of vegetables. The leaves are very large and edible. They have high levels of Vitamin K and A and are a good source of soluble fiber. Collard greens are also a natural detoxifier and the fiber is great for leaky gut problems. I like them because they make for a healthy and low carb wrap! Low Carb Sandwiches using Collard Greens

Ingredients
Low Carb Sub Sandwich
- 1 large collard greens leaf
- 2 slices hard salami
- 3 slices pepperoni
- 2 slices ham
- 2 slices provolone cheese
- 2 tablespoons red onions, thinly sliced
- 1 slice tomato
- 1 tablespoon Italian dressing
Low Carb Turkey Club Sandwich
- 1 large collard greens leaf
- 2 slices turkey breast
- 3 pieces bacon, cooked
- 1 slice Swiss cheese
- 1 teaspoon mayonnaise
Instructions

Take one of the collard greens leaves and slice the thick part of the stem horizontally to make the leaf more flat. Also cut a V at the bottom to take out more of the stem.Â

Rinse the leaf and place in a large skillet. Cover with a lid and cook for 1 – 2 minutes to make the leaf more pliable. Dry the leaf if damp.

Spread any mayo if using. Then add your ingredients in the middle of the leaf towards the bottom.Â

Fold up the leaf to cover the filling. Fold in the sides and tuck under the filling.

Roll up as neat and tightly as you can

NOTE: If you are makign the sub sandwich add the dressing at the end on toppings before you roll. If using may, spread it on the leaf first before add ingredients.
