I’ve been playing around with 1 minute muffins for years and I seem to crave them more in the colder months. Today I wanted to make this healthy apple minute muffin recipe and after a few versions I came up with a winner.
This keto muffin is a great way to start your day. It’s a healthy because it is full with good for you ingredients, low carb and high in protein. It also has a good amount of fiber for 1 muffin. All in all it makes a good low carb breakfast in a hurry especially if you are on a low carb or keto diet.
What is a minute muffin or microwave muffin?
Just as the name suggests, a one minute muffin is a muffin you make in the microwave and it’s done in a minute. Similar recipes are mug cakes, mug muffins, etc. Those too are made in the microwave. Some people even make bread items like English muffins though I haven’t tried them myself.
I’ve played around with these types of recipes a lot and some of my favorite sweet muffins and cakes are these pumpkin muffin, vanilla cup cake and molten chocolate cake recipes and they are all low carb and sugar free.
I don’t tend to use mugs because they are usually too big to house the baked goods but these recipes are made in less than a minute or two.
Using extracts and flavor drops are great for keto recipes.
I’ve been playing around with extracts in a lot of my sweet keto recipes and I have quite a few in my kitchen. They are a wonderful way to add flavor without carbs or calories. Note they add flavor but not sweetness. They are fairly inexpensive plus there is a huge selection to pick from on Amazon.
You can also find extracts in grocery stores, Walmart and candy making stores (which have a larger selection). I use McCormicks, Frontier and Watkins extracts.
As for flavor drops I used Capella Flavor drops and OliveNation flavorings.

Recipe ingredients I used.
The simple ingredients I used to make this apple cinnamon microwave muffin is almond flour, egg, ground flax seed or flax meal, baking powder, cinnamon, butter, Swerve brown sugar sweetener, vanilla stevia drops and apple flavor drops.
I was going to use a green apple in this muffin but found that it adds a lot of carbs and you can’t get that baked apple flavor. I had these Capella Double Apple Drops from my keto candy apple drinks and they worked great!
How to make this keto apple minute muffin recipe.
This is a very easy and basic recipe and should take less than five minutes start to finish.These muffins are fairly small and I got 2 out of this batch but you can just place all of the batter into 1 ramekin if you want a bigger one. They are very filling though!
Step 1: Divide butter in half and add to the microwave safe custard cups or small ramekins. No need for muffin cups. Heat for just 30 seconds to melt the butter. Swirl it around in the ramekins to grease the sides.
Step 2: In a separate small mixing bowl mix all of the dry ingredients (flax seed, almond flour, baking powder, sweetener, cinnamon) and the add the wet ingredients (egg, stevia, flavor drops). Finally split the muffin batter mixture into the two ramekins and mix well to incorporate the melted butter.

Step 3: Place them one at a time into the microwave and bake for 30 seconds. Cooking time will vary depending your microwave so check to see if it is done by looking at the center. It should be firm to the touch and not wet. You don’t want to over cook these muffins or they will get very dry.
Step 4: Let cool then eat. I like to place a lid and just heat up the second muffin the next day but you could just leave it as batter in the refrigerator and heat up the next day. (Please scroll down to view and print the recipe card.)
Recipe tips and notes.
- These keto muffins have the taste and texture of a bran muffin. I added the stevia drops because I wanted it sweeter but if you don’t have any you can just add more sweetener.
- You can make this more of a dessert if you wanted to by adding whipped cream or this easy keto cream cheese frosting.
- I used these custard cups because they have lids and work great in this kind of recipe. They are also smaller than my ramekins. However you can use a ramekin and make this recipe into 1 bigger muffin. It would still be low carb as the entire recipe only has a 3.2g carb count. It was just too filling for me.
- If you don’t have the Capella flavor drops your options are to use fresh Granny Smith apples which have the least carbs for apples. Or just eliminate them and it will be more of a cinnamon muffin.
- I used butter but you could also use coconut oil. And for the sweetener you can use your favorite sugar substitutes. I prefer a brown sugar flavor but regular sweetener will work.
- Lastly while I used almond flour you could use coconut flour instead. You would not use as much. The rule of thumb is to use ¼ the amount. (source) So for this recipe you would a half tablespoon of coconut flour.
