My husband is pumped for his garden this summer and he always grows a lot of zucchini. I love zucchini but the problem is that I am the only one in my family that will eat it. However my husband will eat thinly sliced fried zucchini. That’s it.
So I break out the air fryer and make this low carb fried zucchini and it’s delicious. I only used a few ingredients and I was done in about 15 minutes. And one slice of this fried zucchini has only 0.6g net carbs and is gluten free!
How To Make Air Fryer
Low Carb Fried Zucchini
- First slice the zucchini using a mandoline to make long, thin slices.
- In a shallow bowl, mix the crushed pork rinds and parmesan cheese.
- in a small baggie add the mayonnaise and crushed garlic.
- Dip the slice of zucchini in the baggie and smother with mayo.
- Take it out and coat in the pork rind mixture.
- Air fry for 13 minutes at 350°F.

Low Carb Fried Zucchini Ingredients
With the success of my air fryer keto chicken nuggets and fish sticks, I’m now hooked on this pork rind breading. So for this fried zucchini recipe I only used zucchini, mayonnaise, garlic, parmesan cheese and pork rinds.
This is a simple recipe but I will tell you ways to amp up the flavor in the recipe tips section later in the post.
Let’s Make Some Keto Fried Zucchini!
Firs thing you want to do is slice the zucchini thinly to make long strips. I use a mandoline I bought at Aldi and it works great to make uniform thin slices but you can do it by hand.
Next put them on a tea towel and dry them off so the coating will stick to it.
Next add the mayonnaise and crushed garlic to a small baggie and squish to mix it up. Put the pork rinds in a mini food processor and grind them in bread crumb size. Mix the pork rinds and parmesan cheese in a shallow bowl and set aside.
Then take 1 slice of dried zucchini and put it in the baggie to coat it with the mayonnaise mixture. Take it out and put it in the pork rind mixture and coat both sides. Spray the trays of your air fryer and lay the breaded zucchini on them.
How Long To Bake Fried Zucchini In The Air Fryer
You want to bake the breaded zucchini for 10 – 15 minutes in the air fryer which is set to 350°F. The times may differ depending on how thin you cut your zucchini. Mine took 13 minutes to bake.

Recipe Tips & Notes
- Make sure to use a mandoline to cut uniform thin slices of zucchini.
- Using a baggie for the mayo mixture keeps your hands cleaner but you can put it in a bowl and do it that way too.
- To add more spice to this dish, try different flavored pork rinds or add addition spices to the bread crumb mixture.
- I added garlic to the mayo because I like that flavor combination with fried food but you don’t really need it. Horseradish might be good too.
- Try making a dip by mixing a little mayo or sour cream with a bit of lemon juice and garlic. Here are some recipes for keto dipping sauces: avocado lime , buffalo aioli, tomato bacon jam, roasted garlic aioli, jalapeno aioli
- Also a low carb marinara would be good too.
Well this is just a simple keto fried zucchini recipe but it’s a good one to build on. Make it your own with different spices in your breading or make a tasty dipping sauce. Either way it will be great with those garden zucchini this summer.

Simple But Tasty Low Carb Fried Zucchini in the Air Fryer!
This is a simple but tasty low carb fried zucchini recipe you can make in just 15 minutes in the air fryer.
Ingredients
- 1 medium zucchini sliced thinly lengthwise
- 1 cup of crushed pork rinds
- ½ cup of grated parmesan cheese
- 1 clove of garlic, crushed
- ¼ cup of mayonnaise
Instructions
- First slice the zucchini using a mandoline to make long, thin slices. Then dab with a paper towel or tea towel to dry the zucchini so the breading will stick better.
- Crush the pork rinds in a food processor and then in a shallow bowl, mix the crushed pork rinds and parmesan cheese.
- In a small baggie add the mayonnaise and crushed garlic.
- Dip the slice of zucchini in the baggie and smother with mayo mixuter.
- Take it out and coat in the pork rind mixture.
- Spray the air fryer trays with cooking spray and then lay the breaded zucchini on them.
- Air fry for 10-15 minutes at 350°F. Times may differe depending on the thickness of the zucchini. My zucchini made 11 pieces and it took 13 minutes to bake.

This was the worst recipe that I have ever made. I followed the recipe precisely. The zucchini were soggy – and I made sure the mayo covered them but wasn’t drenched in the mayo. AWFUL DISAPPOINTING.

Hi Paula, I’m sorry you didn’t like this. The only troubleshooting thoughts I can offer are whether the slices where too thick or too thin? The mayo wouldn’t contribute to them being soggy, it would be more of the zucchini having a lot of water in them. Maybe you could cook them longer? Again sorry you didn’t like them. I’ll try to make this week and see if I can figure out why they came out like that.

Hi Paula, I remade these today and they came out good. I’m not sure what is wrong. I did bake them for 3 extra minutes in the air fryer and that made them a bit more crispy. Also my zucchini was cut very thin. Perhaps that’s why they work well? I’m guessing a thicker slice might get more mushy?

Hi Paula, no I’ve used those and I think they are better than making your own. I really think it might be the thickness of the zucchini. If you used the same size then I would recommend cooking them a little longer.
Also note they aren’t going to be real stiff. They will be a bit delicate because it’s just breading and not batter if that makes sense. I hope that helps. I do feel bad you had a such a hard time with this recipe.
