I am a cookie dough lover. Even as a kid I remember I loved eating the raw cookie dough just as much as the homemade chocolate chip cookies fresh from the oven. Though with the raw flour and eggs I don’t suggest doing this as they may contain harmful bacteria.
I’ve tried a lot of different recipes I’ve found on Pinterest for no-bake cookie dough bites but none of them really did it for me. Then when I was making my own cashew butter I came up with this winner.
These 3 ingredient cookie dough bites only use cashews, chocolate chips and coconut sugar. So no all purpose flour or eggs necessary! I also have a low carb version that use brown sugar sweetener and keto friendly chocolate chips. Either way you will feel good about grabbing one or two of these healthy treats for a snack or just to satisfy your sweet tooth. And this no bake recipe only takes 5-10 minutes to make!
Recipe ingredients and substitutions.
The 3 simple ingredients I used for these edible cookie dough bites were cashews, chocolate chips and coconut sugar but here are different ingredients you can try to fit in with your lifestyle or food preferences. You don’t need to add salt but if you use unsalted nuts you might want to add a pinch of salt to the recipe. It goes well with the sweetness of the other ingredients.
Cashew Nuts
You can use either raw cashew nuts, roasted and salted nuts or cashew butter. The butter is harder for me to find so I often just make my own with either raw nuts or packaged nuts from the grocery store.
Other nuts or butters you can try are almonds, peanuts, walnuts, hazelnuts etc. You can grind them and make your own butter or buy nut butter in the store. Note that nut butters can be a little runny and if so after you make the batter just refrigerate it for about 20 minutes to let it harden a bit. It will make it easier to roll into balls that way.
Coconut Sugar
I used this originally because it was very popular back in the day as a healthy sweetener. Coconut sugar is a low glycemic sweetener and a healthy choice but it does have carbs. These days since I make low carb recipes so I also used Swerve brown sugar sweetener and made a version with that sugar replacement.
If you don’t have coconut sugar and don’t care about carbs or healthy ingredients you can substitute with regular brown sugar. You can also make your own brown sugar by mixing 1 cup of white granulated sugar with 1 tablespoon molasses. Learn how here.
Chocolate Chips
Today I am using Lily’s chocolate chips (milk chocolate chips) because they are low carb and keto friendly. However I am also use dark chocolate chips instead of the usual semi-sweet chocolate chips which from Aldi and are pretty low carb and don’t use and sweetener.
You can use whatever kind of chocolate chips you want even white chocolate chips. There are even vegan chocolate chips you can buy. Also mini chocolate chips would work great but I didn’t have any on hand.
Below are the brands I used for the lower carb version and above are the coconut sugar version ingredients.
How to make 3 ingredients cookie dough bites.
The proportions are 2 to 1 to ยฝ for the nuts, sweetener and chips. So if you use 2 cups of nuts you will use 1 cup of sweetener and ยฝ cup of chips.
Step 1: To make the homemade cashew butter add the nuts to a food processor bowl and pulse or grind for up to 5 minutes until they break down and the oils turn it into a nut butter. You want a creamy rather than a crumbly texture.
Step 2: Next add the coconut sugar or brown sugar substitute and blend until it’s mixed well with the nut butter.
Note if you want a creamier consistency you can a bit of room temperature butter or coconut oil. But because if the texture gets too smooth and runny you would be able to roll them into balls. I didn’t not use any. I would use the added butter if I wanted to make this more of an edible cookie dough recipe that you eat with a spoon.
Step 3: Spoon the cookie dough mixture into a medium mixing bowl and mix with the chocolate chips you chose.
Step 4: Now all you have to do is form the dough into balls or bites and place on a parchment covered plate or store in an airtight container in the refrigerator or freezer. I like to use a small cookie scoop or just a tablespoon to make the into a uniform sizes. I got about 22 bites out of this recipe.
I like to keep these edible cookie dough balls in the freezer because they last longer. I often just put them in a ziplock bag in the freezer and grab a ball of cookie dough when I want a healthy quick treat.

Add these to your frozen treats.
I eat these quick bite sized treats as is for a sweet snack however you can also add bites of cookie dough to homemade ice cream. They would go great in a bowl of vanilla ice cream to make a cookie dough ice cream. You can also put them in popsicles. Just chop them up into small pieces and add to your frozen treats.

3 Ingredient Cookie Dough Bites Recipe
These easy and tasty 3 ingredient cookie dough bites are great for when your sweet tooth calls to you. Just 3 simple ingredients to make this healthy snack.
Ingredients
- 2 cups cashews
- 1 cup coconut sugar (or Swerve brown sugar sweetener)*
- ยฝ cup semi-sweet or dark chocolate chips*
Instructions
- *Note if you want to make the low carb version you will use a brown sugar sweetener in place of the coconut sugar and you will also want to use keto friendly chocolate chips like Lily's brand or Lakanto or ChocZero brands.
- Add the cashews to a food processor bowl and pulse or grind for up to 5 minutes until it turns into a nut butter.
- Next add the sugar or sweetener and pulse until well combined. If the texture is too dry for your liking you can add a teaspoon of room temperature butter or coconut oil. But you don't want it too smooth or runny because it will be hard to form into balls.
- Then spoon into a meidum mixing bowl and fold in the chocolate chips.
- Use a cookie scoop or tablespoon to form dough into bite size balls and place on a plate or store in an airtight container in the refrigerator or freezer. They last much longer in the freezer. I store mine in a ziplock bag and grab one when I want something sweet to eat.
Notes
You can use other kinds of nuts like almonds, walnuts, hazelnuts, etc but I find cashews have the best flavor in this recipe. You can also use already made nut butter from a jar but just try to find one without added sugar and note that it might be too runny. It all depends on the brand.
Also as mentioned above you can use coconut sugar, brown sugar sweetener or brown sugar in this recipe. If you are low carb use the brown sugar sweetener like Swerve or Lakanto golden both of which have that brown sugar taste. If you don't care you can use regular brown sugar.
You can use whatever kind of chocolate chips you want. If watching your carbs try Lily's brand but there are many other keto friendlyr or sugar free chocolate chips. Otherwise try to use dark chocolate chips. If you have mini chips they would work great.
