Recipe: 3 Ingredient Cookie Dough Bites

Even as a kid I remember I loved eating the raw cookie dough just as much as the chocolate chip cookie fresh from the oven . I’ve tried a lot of different recipes I’ve found on Pinterest cookie dough bites but none of them really did it for me. Then when I was making my own cashew butter I came up with this winner. It’s really simple and only has 3 ingredients: cashew butter, coconut sugar and chocolate chips.

cookie dough bites 3 ingredients gluten free healthyI never tried this with jar cashew butter because they are usually more runny or oily…like natural peanut butter. However homemade cashew butter has a great dough like consistency perfect for the base of the cookie dough bites.   It’s really easy to make your own cashew butter. Just roast some raw cashews in a pan until they start to brown. Let them cool and add them to your food processor. Process until it starts to form a dough like consistency.

Next you take the cashew “cookie dough” and put it in a bowl and add your coconut sugar. Coconut sugar is a low glycemic sweetener and a healthy choice but it does have carbs. So if you want a lower carb alternative you can use brown sugar Splenda. Actually the brown sugar Splenda will probably taste more like real cookie dough but it’s chemical sweetener so some people don’t like to use it.

Lastly you add  your chocolate chips. You can use a healthier version like Enjoy Life Chocolate Chips or just chop up a good quality dark chocolate bar. Form the dough into little balls and freeze. I like them frozen so I can just grab one or two when I’m in the mood. Sometimes I even add them to vanilla ice cream…yum, yum. Regardless, you want to at least refrigerate them.

That’s all there is to it.  I used a proportion of 2 to 1 cashew nut butter to coconut sugar. You might want it more or less sweet so I suggest start off with less and add more sugar to your liking. Same with the chips. A ¼ cup of cashew butter with â…› cup coconut sugar and a couple Tablespoons of chips made about 8 small balls. Next time I’ll try it with the brown sugar Splenda and let you know how it turns out!
