Simple Ingredients For These Sugar Free Pecan Pie Balls
You only need 6 ingredients to make these no bake treats: raw pecans, raw walnuts, Swerve brown sugar sweetener, vanilla extract, butter and Divine cocoa powder.
I’ve written before that I like Guittard cocoa powder and Divine cocoa powder because they are lower in carbs but you can use regular if you want. Also Swerve brown sweetener is awesome. You could use another sweetener but try and use a brown sugar sweetener if you can. The brown sugar and butter gives it that pecan pie flavor.
Let’s Make Some Pecan Balls
First thing you want to do is take a ½ cup of the raw pecans and chop them finely. Then add them to a skillet with 1 tablespoon of butter and salt and toast them until they become fragrant. This should just take about 5 minutes. Set them aside to cool.
Now take the rest of the raw pecans and the walnuts and add them to a food processor and pulse until it make a sticky dough like the picture above. Then add the cocoa powder, Swerve brown sugar, vanilla and butter. Pulse again until it make a dough. You can see the picture below what it looks like in the back bowl. It looks like a thick brownie batter.
Use a cookie scoop or spoon and make little balls out of the dough and then roll them around in the toasted pecans. Do this for all of the dough. I got 10 pecan pie balls out of this recipe. Store in an air tight container in the freezer or refrigerator.
I like to store them in the freezer so they last longer. They are still soft enough to eat when frozen. You don’t want to leave them out because they will get too soft from the butter.
Recipe Tips And Notes
- I like Guittard cocoa powder and Divine cocoa powder because they are lower in carbs but you can use regular cocoa powder if you want. Also you could use another sweetener but try and use a brown sugar sweetener if you can. The brown sugar and butter gives it that pecan pie flavor.
- Make sure you grind the pecans and walnuts enough in the food processor so that it’s a sticky dough. If you don’t do it enough it will be too dry and if you do it too much it will become a butter. You want something in between.
- If you want you can melt the butter and dissolve the Swerve brown sugar sweetener before adding to the pecan dough. This tastes a bit better to me but it’s another step and makes it more difficult to handle the dough. My hubby couldn’t tell the difference so it’s just easier to add it altogether in the food processor unmelted.
- Store these in either the freezer or refrigerator. They last longer in the freezer.
