Ever since I made my cinnamon toast cashew dip I really enjoy the taste combination of cinnamon and sugar. That’s why I made these cinnamon sugar keto cookie dough balls. The are so good!
You only need 5 ingredients and you can whip up these cookie dough balls in minutes. Store them in the freezer and pop one in your mouth whenever you want a sweet treat. Each ball only has 1.1g net carbs so you can have 2!
The 5 Ingredients I Used
So to make these keto cookie dough balls gather the 5 ingredients which are walnuts, salted butter, cinnamon, Swerve brown sugar sweetener and Swerve granular sweetener.
I love the taste of butter and brown sugar together for a cookie dough flavor. So for the base I used ground walnut, brown sugar, butter and cinnamon. But then I rolled them in the granular Swerve sweetener and more cinnamon.
If you don’t have the Swerve brown sugar you can just use the granular for the everything. Though I really like using both for this recipe.
Let’s Make Some Cookie Dough Balls!
First thing you want to do is process the walnuts until they are almost a butter but more like a dough. It should look like the picture below. When you pinch some it should stick together like a cookie dough.
Then you add in the cinnamon, salted butter and Swerve Brown sugar. It will be a pretty gooey mixture as you can see below.
Low Carb Cinnamon Sugar Ratio
You need to roll the gooey mixture into balls and then into a cinnamon sugar. The cinnamon sugar ratio is 1 part cinnamon to 8 parts sugar or sweetener in this case to make it low carb. Thank you Spruce Eats for that ratio.
So for this recipe I used 1 teaspoon of cinnamon to 8 teaspoons of Swerve granular sweetener. There was quite a bit left over but you can use it in coffee or tea or try some keto cashew cream cheese dip!
Tips For Rolling The Dough
As mentioned the dough is very gooey so what I did was scoop the mixture into a bowl and froze it for 10 minutes. Then I used a tablespoon and scoop up some of the dough and tried to form it into balls and placed them on a small plate.
Next I froze them for 10 more minutes. This made them a bit easier to handle. I reshaped them by rolling them in my hands and then in the cinnamon sugar. Lastly I place them in a container and stored them in the freezer.

Recipe Notes
- Make sure to grind the walnuts until they are a dough and not a butter. You don’t want it to be too dry and crumbly though when you add the butter it will get softer.
- When you have the final mixture it will be very gooey. Freeze it for 10 minutes and then use a spoon and try to form it into balls. Freeze them for 10 more minutes. This will make them harden and you can reshape them before you roll them in the cinnamon sugar.
- I really like the combination of butter and brown sugar but if you don’t have Swerve brown sugar, you can use just a regular granular sweetener for both the cookie dough balls and the cinnamon sugar to roll them in.
- Store in the freezer as they get too soft at room temperature.

Ingredients
- 4 tablespoons butter
- 2 cups raw walnuts
- ½ teaspoon ciinnamon
- 2 tablespoons Swerve Brown sugar
- 1 teaspoon cinnamon
- 8 teaspoon granular Swerve sweetener
Instructions
- Add walnuts to a food processor and grind until the nuts form a dough (about 1 minute). If you process too much it will get runny like a butter and you don't want that but you also don't want it to be too gritty and dry. It should stick together if you make a ball out of it.
- Next add in the butter, Swerve brown sugar and ½ teaspoon of cinnamon. Pulse until it is completely mixed.
- Take the dough out of the food processor and put into a bowl. Freeze for 10 minutes. The dough might be soft but you can handle it anyway.
- Take a spoon and try to form into balls as best you can and place on a plate. Freeze for another 10 minutes.
- In the meantime mix the remaining cinnamon (1 teaspoon) and granular Swerve sweetener.
- Take the balls out of the freezer and reroll them into better shaped balls and then roll in the cinnamon sugar mixture.
- Freeze for an hour and they are ready to eat.
- Store in the freezer.

Hi Cheryl, the walnuts work the best because they can really break down into a cookie dough texture however if you really don’t like them, I would try the pecans over the almonds but probably both would work. Good luck and I hope you like them!
