I mentioned in on of my last posts how we were to be on vacation for Easter and therefore we celebrated early. With my leftover ham and hard boiled eggs I came up with this low carb layered ham salad. This is so my kind of recipe!
It has 8 layers of vegetables, ham, eggs, cheese and a creamy sweet dressing. I ate the whole thing over two days for both lunch and dinner. Since we will be home for Easter, you can be sure I will be making this again with our leftover ham and eggs.
Low Carb Layered Ham Salad In A Nutshell
- Mix the dressing which is simply mayonnaise, Swerve sweetener and apple cider vinegar.
- The layers in order are chopped romaine lettuce, red onion, broccoli, radish slices, chopped ham, sliced eggs. dressing and cheddar cheese.
- Refrigerate until ready to eat.

Sugar Free Creamy Salad Dressing
The first thing you want to do is mix the low carb salad dressing. It only consists of mayonnaise, Swerve sweetener and apple cider vinegar. Whisk together in a bowl and set aside to go make the salad. Below are the different layers of the salad.
What’s In This Low Carb Layered Salad?
This recipe is a combination of my low carb broccoli salad and 7 layered Cobb salad. I specifically picked these ingredients to keep it low carb but to also use leftover Easter ingredients.
The layers in order are chopped romaine lettuce, red onion, broccoli, radish slices, chopped ham, sliced eggs. dressing and cheddar cheese. You can use other vegetables if you wish but if you are trying to keep it low carb be mindful of using low carb vegetables. Speaking of which here is a list of low carb vegetables.

This low carb layered ham salad is a great way to use leftovers from Easter. You can use the leftover ham and hard boiled eggs to make this delicious low carb salad. It's a big salad that you can eat as meal or would be great for picnics or parties. Ingredients
- 2 cups romaine lettuce chopped
- ½ cup red onion, thinly sliced
- 1 cup broccoli florets, choppped
- ½ cup radishes, thinly sliced
- 3 hard boiled eggs, sliced
- 5 oz ham, chopped
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon Swerve sweetener
- ½ cup cheddar cheese, shredded
Instructions
- In a bolw whisk together the mayonnaise, Swerve sweetener and apple cider vinegar. Set aside.
- In a large bowl, start layering the salad in this order. Romaine lettuce -> red onion slices -> chopped broccoli -> sliced radishes -> chopped ham -> hard boiled egg slices -> dressing -> cheddar cheese.
- Refrigerate until ready to eat.
