I know a lot of people get sick of hearing about pumpkin spice but at the beginning of fall I always crave it. Today I was in the mood for cookies so I made these keto pumpkin spice cookies. They are the perfect pairing to a cup of tea or coffee in the afternoon.
These cookies are healthy, gluten free, sugar free and very easy to make. I love that they only have 0.7g net carbs per cookie and 2 make the perfect sweet keto snack for me.
Pumpkin Spice Cookie Ingredients
For this recipe I basically used my ultimate keto chocolate chip cookies recipe. They really are the best keto chocolate chip cookie I’ve had and thought I could use the base and add pumpkin spice flavor.
So I used almond flour, salt, baking soda, egg, butter, shortening, vanilla extract, xanthan gum, Swerve sweetener and Swerve brown sugar and pumpkin pie spice.
You probably have most of these ingredients in your pantry except the xanthan gum and Swerve sweeteners. However I wanted to mention that xanthan gum really gives gluten free cookies a good texture and the Swerve sweeteners are my favorite sweeteners to bake with so I would highly recommend them for keto baking.
Let’s Make Some Keto Pumpkin Spice Cookies!
To make the batter you start by creaming the butter, shortening, egg, vanilla and sweeteners together. In a separate bowl, combine the xanthan gum, almond flour, baking soda, salt and pumpkin spice.
Next combine the wet ingredients with the dry to make a cookie batter like the one pictured above.
Now cover a cookie sheet with either parchment paper or a silicone mat. Add about a tablespoon of the batter and space the cookie dough on the tray. Bake for about 10-12 minutes at 375°F.
Above you can see that they spread but not much. I got 22 cookies from this batch.
Sugar Free Cinnamon Icing
If you want to make these even sweeter you can add this easy sugar free cinnamon icing or even this keto cream cheese frosting.
To make a quick and easy cinnamon icing, just mix 1 cup of Swerve confectioners sweetener, 1 teaspoon of cinnamon, 1 teaspoon of vanilla extract and up to 9 teaspoons of water. I say up to 9 because you want to mix in the water slowly until you get the consistency you like. You can also use almond milk or heavy cream instead of water.
I made the sugar free icing for my father in law who is diabetic and likes sweet things. I personally liked them without the icing. They were sweet but not too sweet. Try one before making the glaze or icing.
Recipe Tips & Notes
- I recommend buying xanthan gum and Swerve sweeteners (confectioners and brown sugar) as they really add to the taste and texture of keto cookies. If you plan on doing some keto baking this Fall or winter they are worth having on hand.
- Watch the time on the cookies as they can burn. I kept mine in for 10 minutes and they were getting dark on the bottom. Times will be different due to different oven temps. Just watch them so they don’t burn.
- Personally I liked these cookies without the sugar free icing or glaze. However if you want to add some try the simple cinnamon icing I suggest above or try this keto cream cheese frosting.
- These cookies will raise but not spread much. I made about 22 medium size cookies from this batch.
- The texture is not crunchy but more like an average chocolate chip cookie.
- These freeze well if you don’t want the temptation of having a whole batch lying around.

Ingredients
- 1 cup + 2 tablespoons almond flourÂ
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon xanthan gum powder
- ¼ cup butter (4 tablespoons), softened
- ¼ cup shortening
- â…“ cup Swerve confectioners sweetener
- â…“ cup Swerve Brown sweetener
- ½ teaspoon vanilla extract
- 1 egg, beaten
- 2 teaspoons pumpkin pie spice
Instructions
- Preheat oven to 375 °F.
- In a mixing bowl, beat the egg Swerve confectioners and brown sweeteners, butter, shortening and vanilla extract.
- In a spearate bowl, mix the almond flour, xanthan gum, salt, baking soda and pumpkin pie spice.
- Add the dry ingredients to the wet and mix to form the cookie dough.
- On a parchement or silicon mat covered cookie sheet, spoon out the cookie dough. This batch made 22 cookies for me. The cookies will rise and spread a little but not too much.
- Bake for 10-12 minutes until browned. They should be cooked through but soft to the touch on the top. They will harden as the cool.
- Let cool completely before eating.
- NOTE: If you want to make a sugar free glaze or icing, mix 1 cup of Swerve confectioners sugar, 1 teaspoon cinnamon, 1 teaspoon of vanilla and 6-9 teaspooons of water, almond milk or heavy cream. Add the liquid (water, cream etc) 1 teaspoon at a time until you get the icing consistency.
