I’ve been on a cinnamon sugar kick. I’ve made cinnamon sugar cashew dip, cookie dough balls and next week a delicious coffee drink. And today I made a cinnamon sugar gluten free biscotti to go with that coffee drink.
I love this keto biscotti because it’s really easy to make and it’s perfect for afternoon snack with coffee or tea. It’s not too sweet but crunchy and filling. This batch makes 8 big pieces and each has only 2.6g net carbs!
Gluten Free Biscotti Ingredients
The main ingredient for this recipe is almond flour. I like to use blanched almond flour when I can but you could use any type of almond flour you have available to you.
The other ingredients are an egg, butter, cinnamon, vanilla extract, Swerve brown sugar, baking powder and Swerve granular sweetener.
Let’s Make That Cinnamon Biscotti!
It is very easy to make the dough but it takes quite a while to bake. First take 3 teaspoons of the Swerve granular sweetener and 1 teaspoon of cinnamon and mix. You are going to sprinkle this mixture throughout the baking process.
To make the dough, beat the egg in a mixing bowl. Then add in the vanilla and 2 tablespoons of melted butter and mix to combined. The remaining tablespoon of butter is for brushing on the sides later on.
In a separate bowl mix the other dry ingredients and then mix them in with the egg mixture. Use your hands to get the dough together then place it on a parchment paper or silicone mat covered cookie sheet.
Form it into a long, flat oval like shown in the upper left picture below. Then sprinkle the cinnamon sugar on top. Bake for 25 minutes or until browned.
Take it out and let it cool for 15 minutes. When cooled, take a straight edged knife and push straight down to cut into 8 pieces. Then carefully flip the pieces on their sides and brush a little of the melted butter on them and sprinkle the cinnamon sugar on top.
Bake for another 10 minutes. Take it out and flip to the other side and again butter the tops and sprinkle the cinnamon sugar. Place back in the oven for 10 more minutes, then turn off the oven and let it sit in there for 1 hour to make it dry and crunchy.
It may sound complicated but it’s not. You just want to bake the biscotti on a low heat and slowly to get them dry and crunchy like biscotti should be.
Recipe Tips And Notes
- These are not overly sweet like most biscotti. If you want more sweetness you can add sprinkle more cinnamon sugar over them right after they finish baking.
- When cutting the biscotti, make sure it has cooled first and then use a straight edge knife (not serrated) and push straight down. This will prevent it from breaking or crumbling.
- Be careful when flipping the pieces of biscotti over as it can be fragile before it is completely done. It will harden up as it bakes and cools.
- I cut these into 8 large pieces but you can make them smaller if you want.

Ingredients
- 1 ½ cups almond flour
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 3 tablespoons butter, melted & divided
- ¼ cup Swerve brown sugar sweetener
- 1 teaspoon cinnamon
- 3 teaspoons Swerve granular sweetener
Instructions
- Mix 1 teaspoon of cinnamon with 3 teaspoons of Swerve granular sweetener and set aside.
- Preheat oven to 300°F and line a cookie sheet with parchment paper or a silicone mat.
- In a bowl beat the egg and then add in the vanilla extract. Add in the baking powder, almond flour, Swerve brown sugar and 2 tablespoons of melted butter. Save the remaining 1 tablespoon of butter for later.
- Mix together to form a dough. Then place it on the prepared cookie sheet and form into a flat oval.
- Take some of the cinnamon sugar and sprinkle over the top. Place in the oven for 25 minutes or until browned a bit.
- Take out of the oven but keep it on. Let the biscotti cool for 15 minutes. Then take a straight edged knife and pressing down carefully cut the biscotti into 8 pieces.
- Flip the biscotti pieces on their sides and brush some of the melted butter on them. Sprinkle a bit of the cinnamon sugar and place back into the oven for 10 minutes.
- Take it and then flip to the other side. Brush the remaining butter and then sprinkle some cinnamon sugar on top. Bake for 10 more minutes.
- When the time is up, keep the biscotti in the oven and turn it off. Let it sit in there for 1 hour. Take out and sprinkle the rest of the cinnamon sugar over the pieces if you wish. Let it cool completely and it should be dry and cruncny.
- Store in an air tight container or in the refrigerator. I keep mine in the freezer.
