Every year I like to make a new keto cocktail for the holidays. Last year I made a yummy candy cane martini and one year it was a lemon drop martini. This year I’m keep it simple yet festive with this keto cranberry mimosa.
You only need 3 ingredients to make it and you’ll have leftover cranberry syrup to make other drinks and recipes. It’s a tart and sweet and bubbly drink.
Perfect for celebrating Christmas, New Year’s Eve or any holiday with it’s bright red color and use of bubbly champagne. Best of all for me is that it’s low carb and sugar free with just 104 calories and 3.6g net carbs!
Recipe ingredients I used.
You really only need 3 simple ingredients to make this delicious holiday cocktail – brut champagne, fresh cranberries and Swerve confectioners sweetener. I think frozen cranberries would work as well though I have not tried it.
Of course you can use a different type of sweetener if you want. Or even a granulated sweetener or granulated sugar (if not keto) as you are cooking this on the stove first so it will dissolve and combine with the cranberries.
You should use a dry or brut champagne though it has less carbs and sugar. Korkbel Brut is what I used as it’s not very expensive and fairly low carb. Learn more about the carbs in champagne below.
A dry sparkling white wine would also work like Prosecco. You have read the labels though.
Is champagne low carb?
Dry champagne is surprisingly a low carb drink however the carb count changes from brand to brand and by the type of champagne you use.
For a frame of reference here are the estimated carb counts for the lowest carb champagne types for 5 oz. (learn more)
- Extra dry: 1.8–2.6 grams of carbs
- Brut: less than 2 grams of carbs
- Extra brut: less than 0.9 grams of carbs
I used Korbel brut champagne and from their website the nutritional information for 5 oz is 105 calories and 2g carbs. In this recipe we are using 4 ounce (½ cup) per drink. (source)
Health benefits of cranberries.
Fresh cranberries are also fairly low carb though dried are not as they have more concentrated sugars. They are very tart and have 8g net carbs per 100g.
They are also so colorful and have many health benefits to them. They are high in vitamin C, quercetin, phenols and are said to help with UTIs, gut health and mouth health. (learn more)
How to make a the sugar free cranberry syrup.
Step 1: First we have to make a cranberry syrup which is very easy. Add the fresh cranberries, water and sweetener to a sauce pan.
Step 2: Heat over medium heat for about 5-10 minutes until the cranberries break up and the sauce thickens. You can use a fork or potato masher to help the berries breakdown if you wish to speed up the process a bit.
At some point taste the syrup and see if it is sweet enough for you. My husband and I have differing thoughts on this so adjust to your own liking.
Step 3: Once the berries have all broken up and the syrup looks ready, strain it into a glass bottle or jar with a sieve.
I was able to get 1 cup of this syrup out of 6 ounces (2 cups) of berries.
Step 4: Store in an airtight container and refrigerate the syrup to get it cold before using. This may take an hour or so. (Please scroll down for the printable recipe card.)
You can use this for this cocktail or any cranberry cocktail that if you want. It can also be used on keto waffles or pancakes. Or try it with sparkling water or seltzer for a light and refreshing low carb soda drink!
How to make the keto cranberry mimosa.
- Make the simple sugar free cranberry syrup. Refrigerate until ready to use.
- Pour about ½ cup of chilled champagne into a champagne glass.
- Add 1-3 tablespoons of the cold syrup into the glass and mix well. Taste after 1 tablespoon and see if you want more sweetness. I liked 3 tablespoons and my husband liked 2 tablespoons.
- Garnish with fresh cranberries if you wish.
- Save the syrup to use it to make sugar free sodas, drinks or even on pancakes and waffles.

Keto Cranberry Mimosa Recipe
This keto cranberry mimosa recipe is full of color and fizz. Perfect for celebrating the holidays. Tart and sweet with only 3 ingredients it's a super easy cocktail to make.
Ingredients
- 2 cups fresh cranberries
- ¾ cup Swerve powdered sweetener
- 1 ¼ cup water
- ½ cup Korbel brut champagne (chilled)
Instructions
- To make the cranberry syrup get out a medium sauce pan and heat to medium heat. Add the cranberries, sweetener and 1 cup of water. Mix well and let simmer to break up the berries. You can use a potato masher or fork to help the berries cook as they get softer.
- As the berries cook down you may have to add a bit more water if it's getting too thick. You want to be thinner than a jam consistency. Also taste the mixture to see if it is sweet enough.
- Once the cranberries and are done, put them through a sieve to strain the liquid into a jar or bottle. I got 1 cup of syrup out of 2 cups of a cranberries. Try to get as much liquid out of the berries as you can. Place in the refrigerator to get it cold. Store leftovers in an airtight container like a jar or bottle in the refrigerator.
- To make the mimosa add ½ cup of chilled brut champagne to a champagne flute and then add 1-3 tablespoons of the cold cranberry syrup. Stir well and garnish with a few fresh cranberries if you want.
Notes
You should have about 16 tablespoons of syrup total. You can mix leftovers with selzer water, to make other cocktails or even over pancakes or waffles.
