While I usually prefer sweet snacks rather than a salty snacks that doesn’t mean I don’t crave crispy chips sometime. So today I decided to make these salty crunchy keto cheese chips and pepperoni chips so I had something to munch on while watching a movie tonight.
You would be surprised at just how quick and easy they are to make. You can use a variety of sliced cheeses and then flavor them with herbs and spices to add even more flavor. To go with them I also made the pepperoni chips which would even easier!
And while these low carb snacks are very simple I thought I’d share because there are lots of ways you can customize them for yourself.
What flavors of cheese chips I made.
Below you can see the various keto chips I made.
- pepperoni chips
- taco flavored Colby crackers
- Swiss, onion and thyme crackers
- pepper jack crackers
- rosemary cheddar crackers
Recipe ingredients I used and substitutions.
You really only need a 1 simple ingredient to make these cheese chips and that is sliced not shredded cheese! Below you can see the ones I bought at Aldi – Colby Jack, Pepper Jack, Swiss and Medium Cheddar (though I would have preferred sharp cheddar as it has more flavor IMO).
For the seasonings I used a taco seasoning mix, dried rosemary, dried thyme, and onion powder. I was going for a French onion soup flavor for the Swiss chips and I’ve seen rosemary cheddar crackers in stores.
The Colby Jack seemed a good flavor to add the taco seasoning but really you can use just about any kind of cheese with that seasoning. And the pepper jack cheese didn’t need any spices because it had the jalapeno peppers to flavor it.
And lastly for the crispy pepperoni chips you only need thin sliced pepperoni which I buy at Aldi all the time. They are small and thin sliced and absolutely perfect for this recipe.
Other spices and dry seasonings you might want to play around for with for extra flavor are ranch seasoning, Italian seasoning, garlic powder, hot pepper flakes, curry powder, Red Hot seasoning blend, everything bagel seasoning, sesame seeds, etc.
How to make keto cheese chips and pepperoni chips.
Step 1: Preheat oven to 300°F. Cover a baking sheet with parchment paper or a silicone mat and set aside.
Step 2: Cut each cheese slice into 9 pieces. Careful place them in on the prepared baking sheet so that they don’t touch and are in a single layer. If using seasonings, sprinkle a little over each piece of cheese.
Step 3: Place the baking sheet into the oven and bake for 18-20 minutes. Let them cool COMPLETELY before eating. They will harden and have a crispy texture as they cool.
You can place them on a dry paper towel to absorb any excess grease but in my experience the parchment paper was good enough for that
To make the pepperoni chips.
Step 1: Place the pepperoni slices on a microwave safe dish. Make sure that they don’t overlap.
Step 2: Cook for up to 5 minutes at 50% power until crispy. Let cool completely before eating.
Store leftovers in a ziplock bag or airtight container. The cheese chips are best eaten the same day. If either lose their crunchy texture you can microwave in 10 second intervals until crispy and make sure to let cool as they will harden.

Keto Cheese Chips and Pepperoni Chips
These keto cheese chips and pepperoni chips are an easy and tasty snack when you crave something salty and crunchy on a low carb diet.
Ingredients
- 2 slices each Swiss, Colby Jack, Pepper Jack and Cheddar Cheese
- spices for flavoring (I used rosemary with the cheddar, onion powder and thyme for the Swiss and basic taco seasoning for the colby jack. The pepper jack didn't need anything)
- 20 small thin slices of pepperoni
Instructions
- Preheat oven to 300°F. Get out a baking tray and cover with parchment paper.
- Cut the cheese slices into 9 pieces and then lay out evenly on the covered tray. Do not overlap. Sprinkle your favorite seasonings over top and then place in the oven.
- NOTE: I used onion powder and thyme with the Swiss cheese to taste a bit like French onion soup. Then I used rosemary with the cheddar and taco seasoning with the colby. The pepper jack did not need any seasoning. You can use whatever seasonings you want or none at all.
- Bake for 18-20 minutes until they start to brown. Take out and let cool completely before eating. They will get crispier as they cool. These chips taste best when eaten the same day.
- To make the pepperoni chips place the slices on a microwave safe dish. Make sure not to overlap. Cook at 50% power for 4-5 minutes until they start to turn brownish but not burnt. Let cool completely before eating.
- Store leftover chips in an airtight container or baggie. To crisp up either the cheese or pepperoni chips, place in the microwave for 30 second intervals until they look crunchy. Let cool before eating.
