I’ve been on a cracker making kick lately. I made some very tasty savory crackers on this blog and thought I’d try my hand at a sweet one. So what better flavor to try than a low carb peanut cracker and I added a bit of berry cream cheese to get that peanut butter and jelly flavor combination. It was yummy!
The crackers are simple to make and while they are sweet, they are not a cookie, they are a cracker. I made very small crackers and so this batch made 72 small crackers and each has only 0.1g net carbs!
Peanut Butter Crackers
Recipe In A Nutshell
- Add peanuts to a food processor and pulse until the peanuts are chopped into a coarse flour.
- Mix the peanut flour, egg white and Swerve sweetener.
- Roll out dough as thin as possible and score with a knife.
- Bake for 12-15 minutes. Take them out of the oven and break off the outer crackers if they are done and the middle crackers are not.
- Put them back in the oven for a few more minutes and keep doing this process until the crackers are done.

Just 3 Ingredients To Make Peanut Crackers
All you need to make these peanut crackers is egg whites, Swerve sweetener and peanuts. I use cocktail peanuts from Aldi. You don’t want those very dry roasted peanuts but rather the smooth looking cocktail peanuts like the can below.
Let’s Make Some Keto Peanut Crackers!
First thing you do is process the peanuts until they because a coarse flour. You can see below what it should look like. If you process it too much it will start to make peanut butter.
Next you add the Swerve sweetener and egg white to a bowl along with the peanut flour. Mix to make a dough. Then line a cookie sheet with a silicone mat or parchment paper. Roll out the dough with a rolling pin.
I like to spray a piece of wax paper and put it over the crackers and then roll out the dough because it’s sticky. When you get it nice and thin, use a knife or pizza cutter and lightly score the dough to make the crackers easy to break off.
Bake for 12-15 minutes and take out of the oven. You will notice the outer crackers might get darker than the rest. Just break them off and put the tray back in the oven for a few more minutes. Then take them out, break off the done crackers and put it back in the oven. You might only have to do this twice or maybe a few times depending on how thin you roll the crackers.
Let them cool and then break up all the crackers. I store my peanut crackers in a sealed baggie.
Ingredients To Make The Berry Cream Cheese Spread
This was a little trickier than the peanut crackers. I use a mixture of things because I had them on hand but you may not. Really all you need is cream cheese, heavy cream and something to make it sweet and berry flavored. I ended up using the sugar free raspberry jam, raspberry extract and Torani sugar free raspberry syrup.
However if you have any one of these it would be enough. The more the merrier though. You could also just use Swerve sweetener and some pureed berries.
To Make The Keto Berry Cream Cheese Spread
In a mixing bowl add your softened cream cheese. Whip it up until creamy and then add sweetener and heavy cream. Beat until it looks like mixture pictured below. Again the sweetener could be Swerve confectioners sugar, sugar free jam, syrup and/or extract.
If you are using a pureed berries, you would make that buy adding berries to a blender or food processor to crush the berries and then add it to the cream cheese mixture.

Recipe Tips And Notes
- When rolling out the crackers use a sprayed piece of waxed paper between the dough and rolling pin and try to make an even but thin layer of crackers.
- Check on the crackers as you are baking them. Break of the darker outer crackers as you go.
- These crackers are sweet but not overly sweet. They are not like a cookie. You could add more sweetener if you want.
- You can use a variety of things to make the berry taste for the cream cheese spread. Try any flavored berry extract, sugar free berry syrups and even sugar free berry jams.
- You can also use fresh or frozen berries by making them into a puree with a high speed blender or food processor. Add these berries along with Swerve sweetener after whipping the cream cheese.

Ingredients
- 1 cup cocktail peanuts
- 3 tablespoons Swerve sweetener
- 1 egg white
Berry Cream Cheese Spread
- 4 oz cream cheese
- 2 tablespoons heavy cream
- 2 tablespoons jam
- 1 tablespoon Torani raspberry syrup
- 1 teaspoon raspberry extract (see notes)
Instructions
- Preheat oven to 375°F.
- Add peanuts to a food processor and pulse until the peanuts are chopped into a coarse flour. If you process it too much it will be come peanut butter.
- Mix the peanut flour, egg white and Swerve sweetener to form a dough.
- Place a piece of parchement paper or silicone mat on a cookie sheet. Then take a piece of wax paper and spray it with cooking oil.
- Place the dough on the covered cookie sheet and the wax paper on top. Use a rolling pin to roll the dough as thin as possible.
- Score the rolled out dough with a knife but don't cut all the way through the dough.
- Bake for 12-15 minutes. Take them out of the oven and break off the outer crackers if they are done and the middle crackers are not.
- Put them back in the oven for a few more minutes and keep doing this process until the crackers are done.
- TO MAKE THE CREAM CHEESE SPREAD: In a mixing bowl add your softened cream cheese.
- Whip it up until creamy and then add Swerve sweetener and heavy cream. Beat until it nice and creamy.
- Now add whatever raspberry flavoring you wish. You could use any or all of the following: raspberry extract, sugar free rapsberry jam or preserves or Torani sugar free raspberry syrup. Note you can use any berry flavor you have on hand not necessarily raspberry.
- Beat until everythign is combined and store in a sealed container in the refrigerator.
