Growing up I remember my mom making a simple meal which she called pepper steak stir fry. I’m not sure what kind of meat she used but I do remember she used green peppers and onions, soy sauce and we ate it over rice. It was really good.
One time I was in a quandary about what to make for dinner, when I remembered that dish. Using some of my husband’s hot peppers from the garden, I spiced it up a bit and came up with this easy spicy pepper steak dish.
My husband loves that I use fresh veggies from his garden and this dish only took about 25 minutes. We both loved this Asian stir fry meal and eat it often. Originally I used flank steak but today I used some thinly sliced sirloin beef I found at Costco and was just as good. It’s an easy dish that works great on busy weeknights.
Above are the peppers from our garden that I used in addition to some sweet bell peppers. You don’t have to use all of these but if you have some in your garden this is a good recipe to use them in.
Recipe ingredients I used and substitutions.
The simple ingredients I used for this dish were beef slices/ onions, various peppers, olive oil, garlic, ginger, salt, black pepper, soy sauce, sesame oil, and hoisin sauce.
Veggies
I used a variety of peppers from our garden which were sweet bell peppers, jalapenos, banana peppers and poblano peppers. However if you don’t want any heat or spicy you can use just sweet and/or green bell peppers. And I used regular white onion.
Note you could always add hot pepper flakes if you like some spicy but don’t have any hot pepper varieties available.
Beef Slices
In the past I used flank steak for this dish but you can also use round steak, London broil, skirt steak or sirloin steak. The key is to slice the beef very thin if using a tougher cut of meat. In a pinch you could also use ground beef like I did in the beef and broccoli dish.
Asian Sauce Ingredients
I used fresh garlic cloves and ginger paste. I highly recommend that you use fresh ingredients for both of these. I also use soy sauce,sesame oil and hoisin sauce. You can use olive oil instead of the sesame if you have to but it’s better with it. Also you can use low sodium soy sauce if your prefer.
And you can substitute some brown sugar or even white sugar instead of the hoison sauce if you don’t have any. Though most grocery stores carry it in the International aisle. I bought mine at Aldi.
How to make this easy spicy pepper steak.
Step 1: Slice the peppers and onions into thin strips. Also slice the beef into thin uniform slices.
Step 2: Get out a large skillet and heat to medium high heat. Add the olive oil and when it’s nice and hot, add the onions and beef strips. Sprinkle some salt and black pepper.
Turn the heat down to medium heat. Saute for about 5 minutes until the beef strips just starts losing all of its pinkness.
Step 3: Get a medium bowl add the Asian sauce ingredients and whisk to combine. Add the peppers and sauce to the pan and mix well.
Step 4: Cook for 5-10 minutes until the peppers are tender and to your desired doneness. The beef should be cooked through as well. Cooking time will depend on the thickness of the meat and the cut of the vegetables.
Serve over white rice or cauliflower rice for a low carb option. Store leftover pepper steak in an airtight container. Please scroll down to view the printable recipe card.
This is a very quick dish if you make the rice while you are making the main dish. Or you can use frozen rice or the microwavable packages of rice.
We eat this over a bed of rice but you could also serve a green salad if you want.

Easy Spicy Pepper Steak Recipe
This easy spicy pepper steak stir fry is an easy weeknight meal that combines Asian flavors with hot peppers and beef slices. Serve over rice for a delicious family meal in less than 25 minutes.
Ingredients
- 1 pound beef, thinly sliced (flank steak, London broil, round steak, etc.)
- 1 cup onion, sliced
- 3 cups peppers sliced (I used jalapeño, banana, poblanos and bell peppers)
- 2 tablespoons olive oil
- salt and pepper to taste
- 6 tablespoons soy sauce
- ¼ cup hoisin sauce
- 1 sesame oil
- 2 cloves garlic, crushed
- 2 teaspoon fresh ginger, crushed
Instructions
- Slice peppers and onions into thin slices. Also do this with the beef so that it cooks easily and evenly.
- Heat your skillet to medium high heat and then add the olive oil. Add the onions and beef slices and saute for 5 minutes until the meat is just losing the pinkness.
- Meanwhile add the soy sauce, hoison sauce, sesame oil, fresh ginger and garlic to a bowl and mix well.
- Add the pepper slices and sauce to the skillet and mix well. Cook for 5-10 minutes or until the peppers and steak are cooked through.
- Serve over white or brown rice. Store leftovers in an airtight container.
Notes
I used a variety of peppers from my garden. If you don't want the spicy or heat of hot peppers you can also use regular green bell and sweet peppers.

i have trouble with my flank steak coming out tough. any suggestions?

Hi Debi, yes I would cut it against the grain and cut them thinly. Sometimes I freeze the meat for an hour so it will be easier to slice. Hope that helps!
