The other day I wanted to make an old Paleo beef and broccoli stir fry recipe but with ground beef. I thought I’d update that version but realized it wasn’t quite low carb. So as I was tweaking the recipe I also realized it was too different to just update.
That’s how this keto ground beef and broccoli version came about. It only took 15 minutes to make, was low carb and my family loved it! This easy low carb meal is going to be part of our regular rotation especially on busy weeknights!
What kind of ground beef to use.
I think when beef is the star of the dish, you should use a high quality beef like Certified Angus Beef®. I buy mine at t Giant Eagle when they have it on sale.
Today I chose the 85% ground beef because I wanted it to have some fat for flavor but did not want much excess grease. If you have a preference for a fattier meat, just drain some of the grease out and if you want to use a lean ground beef, you may need to add a bit more oil.

Ingredients I used.
So the sauce ingredients I used where soy sauce, Lakanto golden sweetener, garlic, ginger and Better than Bouillon beef base.
The rest of the ingredients for this recipe are olive oil, ground beef, salt, pepper, pine nuts and cauliflower rice. I make my own cauliflower rice but you can buy it just about everywhere now.
I’ve been using Lakanto golden a lot lately as a replacement for brown sugar, so I always have it on hand.
Some other low carb ingredients I can recommend having in your pantry are Better than Bouillon chicken and beef bases, jars of minced ginger and pine nuts. They taste great on so many things!
How to make the low carb stir fry sauce.
The stir fry sauce is very simple but tasty. Add hot water to the Better than Bouillon (beef flavored) and whisk until dissolved. Mix in the soy sauce, ginger, garlic and Lakanto golden and that’s it.
If you don’t have Lakanto golden, use some other brown sugar sweetener, or just plain sweetener. If you don’t care about being low carb use brown sugar.
Let’s make this keto ground beef and broccoli stir fry recipe.
Here is how you get it done in 15 minutes.
- Add oil to a large skillet and heat up to a medium heat. Add the ground beef and season with salt and pepper and start to brown the meat.
- Meanwhile microwave the broccoli florets for about 4 minutes.
- While the meat and broccoli are cooking mix the bouillon, water, ginger, garlic, soy sauce and Lakanto golden sweetener to make the sauce.
- When the meat just starts to brown, add in the cooked broccoli and sauce. Simmer for 5 minutes until the meat is cooked through. Cook time may vary.
- While that is simmering make your cauliflower rice. Add florets to a food processor and pulse until it looks like rice.
- Microwave for about 5 minutes. By the time the stir fry is done you are good to go! Print the recipe card below for more information.
Eat over rice or cauliflower rice.
I made cauliflower rice for this dish to keep it low carb. My hubby and son ate this over regular white rice. If you are making white rice this dish may take longer but if you are using cauliflower rice you can still get this dinner on the table in 15 minutes.
To make cauliflower rice, I just add a few florets to a food processor and pulse until it looks like rice. Then I microwave it for about 5 minutes and it’s good to go.
Recipe Tips and Notes
- I prefer fresh broccoli florets instead of frozen broccoli. However you can use it but cook it as you normally would and drain all the excess liquid before adding it to the pan.
- While I only used broccoli you could add any low carb vegetables you want. I would steam them in the microwave ahead of time as you did the broccoli.
- A substitute for soy sauce is coconut aminos. If you use this note it has some carbs to account for that. It also has some sweetness so you might want to cut back on the brown sugar sweetener.
- If you want to add a little heat, try adding some hot pepper flakes. A little sesame oil over top will give it a nice flavor as well. You just want to use a little sesame oil and add it at the end if you use it.
- I have added pine nuts to this recipe. It is not necessary I just love them. You can substitute slivered almonds, toasted walnuts, sesame seeds or just leave them out all together.
- If you have leftovers or are cooking for 1, you can easily freeze this buy adding it to a freezer airtight container. This is great for a quick low carb meal.
And while this keto beef and broccoli is great over rice it is also delicious as is. I could eat a bowl of this for a low carb dinner, especially with the pine nuts!

Disappointed
This recipe doesn’t work. Tooo watery, so sweet, too much ginger. The recipe calls for 1/2 cup of soy sauce and 1 cup of water. 1 1/2 cups of liquid with no thickener. That’s practically soup! Doesn’t seem like it was tested first, or the recipe has quantity typos. I had my doubts after reading some of the comments, but I always want to try a recipe as written before adjusting. I chose poorly this time. I’ll try it again with these changes: 1 tsp of ginger, 1/4 tsp of bullion, 1/4 of hot water, 1/4 cup of soy sauce, and 1 tsp of the sweetener. And I’m adding a little sesame oil to the sauce.
Denise
Sorry this was recipe wasn’t to your liking and we did just have this last week so it is how my family likes it. It is a bit watery because it’s you can’t use corn starch to thicken it like other Chinese sauces because of the carbs. You could use xanthan or glucomannan if you have either of those. You just need a bit and it will thicken it. I don’t bother just because I know most people won’t have them.
As for the flavor you can certainly adjust the soy, ginger and sweetener to your preferences. It’s such a simple recipe and I hope you can find a way to work for you.

Can I use beef broth instead of the beef bouillon?
Denise
Hi Blair, yes you can just don’t use the water either. Use 1 cup of beef broth instead of the bouillon and water. Hope that made sense. 🙂
Darbi
Can I use a trivia mix instead of Lakanto Golden?
Denise
Hi Darbi, yes you can use any kind of sweetener. If you have a brown sugar tasty sweetener that would be best because it gives it a bit more flavor but if you don’t it should still work. Good luck and I hope you like it!
Juli
Can I use Amino Acids instead of Soy sauce?
Denise
Hi Juli,
Yes you can however you might want to use less sweetener depending on the aminos you are using. For instance coconut aminos seems to have a lot of sweetness to me so I use less sweetener if you using that. Just taste it and you can adjust accordingly. Good luck!
Juli
Thanks for such a quick reply Denise!!
This turned out so delicious! I didn’t have enough amino acids, so I added some worcestershire sauce, I know, weird right??!! But it worked. I also added white onions to the ground beef saute. I also reduced the ginger, as it can quickly over power any dish, and I had to use beef broth instead of bouillon. Everyone thought it tasted great. Doing this again.
Denise
Hi Juli,
So glad you liked it! Thanks for coming back and sharing your tips!
Joy L.
1/2 cup of soy sauce is just too much! Too salty and the soy sauce overwhelms the whole dish. And that’s with using 2 pounds of beef and double the broccoli. Otherwise, I like the recipe. 1/4 cup is more than enough.
Denise
Hi Joy, thanks for coming back to share you tips. It does make a lot of sauce so I can see where you might want to use less.
Kate
When does the soy sauce go into the recipe? With the bouillon etc?
Denise
Hi Kate, thanks for bringing that to my attention. Yes you add it with the bouillon. I have fixed the recipe card. Hope you like it!
Tasia
I wish I read the comments, it was okay but way to salty. My ten and twelve year old noticed the salt right away. I would add a quarter cup if that of soy sauce and wasn’t a real thick sauce obviously but it worked. I don’t think I would make it again.
Denise
Hi Tasia, I’m sorry the dish was too salty for you. I added to the recipe notes that you can eliminate the salt and/or use low sodium soy sauce if you are worried about too much salt.
