This is how this low carb cajun stir fry came about. My husband planted okra this year on a whim and it is so delicious! However it only gives you a few pieces of okra at a time, so when he that handful of okra I had to think of something to make with it. I also had grape tomatoes and peppers from the garden and with jambalaya and gumbo flavors in mind I made this dish. We loved it because there is so much flavor and best of all it really easy to make and you only need one pan.
The Cajun Stir Fry Ingredients
As I mentioned above I used okra, peppers and grape tomatoes from our garden. I LOVED the fresh okra but if you don’t have any you can just use frozen. Defrost it first of course.
For the protein I used some shrimp, chicken thighs and flavored sausage all of which I bought at Aldi. The first time I made this I used kielbasa which you can certainly use but it has more carbs than the flavored sausages I bought.
Carbs & Flavored Sausages
The chicken sausages I used were the Never Any brand from Aldi in the Mild Italian flavor. The chicken they use in these sausages are raised without antibiotics or added hormones, have no nitrates or preservatives. I just bought them because they only have 1 net carb per link. You can make substitutions in this recipe but just make sure you read the labels because the carbs can add up.
Low Carb Cajun Stir Fry Recipe
The first thing you want to do is chop up the chicken thighs and brown in a large skillet. Next add in the broth, vegetables, chopped sausages and seasonings. Mix well, cover and cook for about 5 minutes until the chicken in cooked and the vegetables soft.
Lastly add in the shrimp and saute until they turn pink. This should only take about another 5 minutes. Start to finish you should be able to make this in less than 30 minutes.
What To Eat With This Stir Fry
The first time I made this my husband ate it with rice. If you don’t care about carbs I would highly recommend that. I had some roasted chicken flavored Uncle Ben’s rice that went great with this dish. I did not eat any rice and it was perfectly delicious to me. If you feel you need something else, you could try some cauliflower rice, however I really think it is fine as is.

Ingredients
- 1 tablespoon olive oil
- 16 b oz chicken thighs, boneless, skinless, cut into pieces
- 1 cup okra, chopped (thaw if frozen)
- 1 cup peppers, diced
- 2 cloves garlic, crushed
- 1 tablespoon cajun seasoning
- 12 ounces Never Any Mild Italian Chicken Sausage**
- 1 cup grape tomatoes, chopped
- 1 cup chicken broth
- 6 ounces shrimp, raw and peeled
Instructions

In a large skillet, heat up the olive oil and in the cut up chicken thighs. As they start to brown, add in the okra, peppers, tomatoes, broth and sausages.

In a small bowl, mix the broth with the garlic and cajun seasonings and then pour that into the skillet. Cover and cook for 5-10 minutes until the vegetables are soft and the chicken is done.

Add in the shrimp and saute for about 5 minutes until the shrimp turn pink.

Serve as is or over cauliflower rice. If not watching carbs, serve over rice.

**I used Never Any Italian chicken sausage from Aldi because they had 1 net carb per link and there were 4 links per package. You can use other flavorful sausages but read the labels carefully as some have a lot of carbs. If you want to use kielbasa, use less.

Mine ended up way soupier but I did all more veggies and my okra was frozen but it was still delicious. Next time I might use less veggies but since soup is my favorite food it still worked.
