A long time ago I belonged to a wonderful group called Sunday Supper. And each week that had a theme in which me and my blogger friends came up with recipes. One week the theme was hamburgers and hotdogs. Well since I am mostly low carb blogger I came up with this easy and tasty keto taco burger recipe.
Personally I love taco meat and often whip up a batch to make taco salads for days on end. Today I made a taco in burger form and stuffed it with sharp cheddar cheese! All those tasty Mexican spices give the hamburger meat so much flavor you won’t miss the bun.
And if you want to go the next step you can top these with all your favorite taco toppings. For me that was lettuce, tomato, cheese, onion and avocado. So not only these easy to make they are also fun to make your own. And I love that they only have 1.2g net carbs each!
Recipe ingredients I used and substitutions.
The simple ingredients I used were ground beef, shredded cheddar and taco seasonings. I made my own taco mix with common spices in my pantry but you could also use packet taco seasoning. However if you are counting carbs it might have some hidden sugars.
My taco seasoning mix is a combination of chili powder, garlic powder, onion powder, salt, black pepper, paprika and cumin. If you are substituting with envelope taco seasoning you will want to use 5-6 tablespoons for the 2 pounds of ground beef which makes 8 hamburgers.
I used shredded cheddar cheese in the middle of these hamburgers but you can eliminate that if you want to save a few calories. You can also use other shredded cheese like Mexican blend, Monterey Jack, pepper jack, etc.
I used lean ground beef for this recipe but you could also use ground turkey if you wish. And note if you want to only use 1 pound ground beef for 4 hamburgers, this is an easy recipe to cut all the ingredients in half.
How to make keto taco burgers.
Step 1: In a small bowl add all the spices and mix them together.
Step 2: Add the ground meat to a large mixing bowl. Sprinkle the seasonings over top and gently mix them into the hamburger. I used a big fork and at the end used my hands a little bit at the end to better incorporate the spices.
Step 3: Divide the meat mixture in to 8 portions. Take one portion and divide it in two pieces. Form them into very thin patties. Add some of the cheddar cheese on the surface of one of them and then place the other patty on top.
Use your hands to pinch the edges together to form the final hamburger. Continue with the other 7 beef patties.
Step 4: Heat up a large skillet to medium high heat. You could also use a cast iron skillet if you wish. When the skillet is hot, add the patties and then turn the heat down to medium heat. Cook for a couple of minutes (about 3-5 minutes) on each side and then let cool. You might have to do these in batches.
Take the off the heat and let cool a little before serving. You can even add a slice of cheese at the end if you want. I just topped them with shredded cheese.
You can serve the toppings along side these delicious burgers on a dish or platter so everyone can pick what they want. If you are not on a low carb diet you can eat these on bread or buns but you really don’t need them as these have a lot of flavor on their own.

Keto taco burger toppings to try.
Now the fun part begins. Top your taco burger with anything you normally like on a taco. Some suggestions include: cheese, shredded lettuce, tomato, onion, sour cream, guacamole, avocado, jalapeños, queso dip, black olives, green onions, fresh cilantro, sautéed peppers and onions, etc. You get the picture. You can even top them with some fresh pico de Gallo or chunky salsa which is usually low carb.
Speaking of jalapeños, I could kick myself for not using any of my hubby’s homemade pickled jalapeños. They would have be excellent on these burgers. Kind of like Mexican pickles for your burger. Oh well, next time.

Keto Taco Burger Recipe
This cheddar stuffed keto taco burger is a delicious change from your everyday burger. Customize with all your favorite taco toppings.
Ingredients
- 2 pounds ground beef
- 1 cup cheddar cheese, shredded
- 2 tablespoons chili powder
- 1 tablespoon onion powder
- 2 teaspoons salt
- 2 teaspoons garlic powder
- 1 teaspoon pepper
- 1 teaspoon paprika
- 2 teaspoons ground cumin
- taco toppings optional
Instructions
- Take all the spices and mix in a small bowl.
- Add the ground beef to a large bowl and add the spices. Mix them into the beef well. You might have to use your hands to get them mixed through.
- Divide the burger mixture into 8 equal sized burgers.
- Take each burger, split in half and roll both halves into balls. Place the balls between two pieces of wax paper or parchment paper and press down to make 2 thin patties.
- On one patty place 2 tablespoons of cheddar cheese on top. Then place the other thin patty on top of the cheese and form the patties together all around the sides to make your burger. Do the same thing with the rest of the burgers.
- Heat up a large skillet to medium high heat. You can spray it with nonstick cooking spray if you want. When the skillet is hot add the burgers and cook them for a couple of minutes (about 3-5 minutes) on each side. When they are cooked through take them out of the skillet and serve. Note these are also great on the grill.
- You can make a platter or dish with your favorite taco toppings like lettuce, tomatoes, onions, cilantro, cheese, black olive, jalapeños, hot sauce, salsa, sour cream, guacamole, you name it! Serve the burgers along side the topping platter.
- Note you can use taco seasoning mix if you want. Use about 5-6 tablespoons for this recipe which makes 8 burgers. You can also easily divide this recipe in half if you only want 4 burgers.
