Using store-bought flatbread and a few simple ingredients you can make this vegetarian pizza in about 15 minutes. This is also a deliciously easy appetizer for summer parties!

When my husband starts piling up the fresh tomatoes from his garden, it’s caprese time for us. We love this combination of fresh tomatoes, mozzarella and basil in the summer time and eat caprese salad often. Today I made this smoked salmon flatbread and this easy caprese flatbread as we were having my in laws over. It was the perfect easy dinner for us in the summer. And it uses some of my husbands garden harvest.
Flatbread pizzas are the easiest summer dinners. You can buy the flatbread already made for the pizza crust and the just add your toppings and bake for a delicious and tasty meal. See below for some of my favorite flatbread recipes.
Recipe ingredients and substitutions.
The simple ingredients I used were fresh tomatoes, a store bought flatbread from Aldi, fresh mozzarella cheese, extra virgin olive oil, fresh garlic and fresh basil leaves.
- tomatoes – You can use any kind of tomatoes you want but they should be fresh and ripe for maximum flavor. You can use beefsteak, Roma, cherry tomatoes or grape tomatoes too. You just want the fresh flavor.
- flatbread – I make so many flatbreads using these premade ones from Aldi as they make the perfect pizza crust. You get 2 per package and they are both tasty and easy to use. You can also use pizza dough, store bought naan bread or make your own from scratch. I was going for easy so I buy mine.
- fresh basil and fresh garlic – These two ingredients and important to me for maximum flavor. Aldi carries both of these as well and are easy to fine. You could use garlic powder but the fresh garlic is much tastier for this recipe. I would not use dried basil if possible.
- fresh mozzarella cheese – Again I bought this at Aldi all the time and they definitely carry it in summer time. But most grocery stores carry it. I buy the pre-sliced but you can use the little balls of cheese or cut up a bigger pieces. You can also use burrata cheese which is very similar. You could also use regular shredded mozzarella cheese but it won’t be as good. But it would work.
- extra virgin olive oil – I like the flavor of really good olive oil for this dish but you could also use regular olive oil.
NOTE: If you want to make a balsamic glaze or reduction to drizzle on top you will also need balsamic vinegar. You can also buy this in a grocery store in the summer time. Aldi carries it.

How to make caprese flatbread.
Step 1: Preheat oven to 350°F. Spray a baking sheet with cooking oil and set aside.
Step 2: Place the premade flatbread on the baking sheet. Crush the garlic and place in a small bowl with the olive oil. Mix and spread with a pasty brush over the pizza.
Step 3: Slice the tomatoes thinly and spread evenly on the crust. The slice the mozzarella and place evenly to fill in.

Step 4: Place into the preheated oven and bake for XXXX minutes until the cheese has melted and the crust is golden brown. You can also put this under the broiler but make sure you watch so it doesn’t burn.

Step 5: Let cool a few minutes and then sprinkle the minced basil leaves over top. Cut and serve. I can usually get 8 pieces per flatbread. You can serve this with a fresh green salad and you got yourself a meal.
NOTE: If you want to drizzle a balsamic glaze on top (like to pic below using naan bread) that would be awesome too. All you need to do to make a balsamic reduction is add some balsamic vinegar to a small saucepan and simmer until it thickens. Let cool and it will thicken a bit more. Then drizzle over the finished pizza. You can see what it looks like in the pan in this post. Aldi also sells a little bottle similar to this in the summertime and it’s convenient to have on hand.

Another idea is to spread a layer of pesto sauce instead of the olive oil and garlic. The pesto will just add more basil flavor and still have the oil and garlic flavors. It also has parmesan cheese so there will be another layer of flavor.
You can also cut this into small pieces if you are serving as an appetizer. This is one of those recipes you can make ahead of time and store in the refrigerator over night. Then just pop it in the oven when you want to eat it.
Store leftovers in an airtight container. I find I can easily eat this when it’s cold (after it has baked) or at room temperature but that might just be me. Please scroll down to view the printable recipe card.

Caprese Flatbread Recipe
This easy caprese flatbread recipe is perfect for using tomatoes from your garden or Farmer's market. Eat as an easy summer dinner or as a quick appetizer.
Ingredients
- 1 store bought flatbread (I like Aldi's)
- 2 medium tomatoes , sliced (can also use grape tomatoes or cherry tomatoes)
- 1 tablespoon extra virgin olive oil
- 1 clove garlic, crushed
- salt and black pepper to season
- 4 ounces fresh mozzarella cheese
- 4 fresh basil leaves, minced
Instructions
- Preheat oven to 350°F. Spray a baking sheet with nonstick cooking spray and set aside.
- Place a premade flatbread on the prepared baking sheet. In a small bowl add the olive oil and crushed garlic. Mix and then brush over the surface of the flatbread.
- Slice the tomatoes and mozzarella cheese. Place the tomatoes on first and season with salt and black pepper. Then add the mozzarella cheese.
- Place in the preheated oven and bake for 10 minutes or until the cheese has melted and the crust is golden brown. You can also put this under the broiler but make sure to watch it so it doesn't burn.
- Take out and let cool. Then sprinkle the minced fresh basil leaves over top. Cut and serve.
- NOTE: You can prepare this ahead of time and just cook before you want to eat it. You can also serve this as an appetizer. Lastly you can drizzle balsamic glaze over top too if you wish. To make a balsamic glaze, add some balsamic vinegar to a small pan and simmer until it condenses and becomes syrupy. Take off the heat and cool. It will get a little thicker after it cools down. That's all! You can also buy it at Aldi sometimes in the summer.
