Just when I thought I could not buffalo chicken one more thing, I came up with these buffalo chicken keto cheese chips recipe. I had intended to just make buffalo cheese crisps but then add the chicken in as an afterthought.
Boy were they good! Especially if you crave a chewy, crunchy snack. I made a few batches while playing around with them and everyone ate them before I took my pictures!
Because these are so easy ( just 3 ingredients) and yummy I will be making them a lot for a keto snack or low carb appetizer for a party. The whole batch (22 cheese crisps) has only 2.2g net carbs and they are gluten free too!
The 3 ingredients I used for this keto snack
I used cooked chopped chicken breast, RedHot seasoning blend and sharp cheddar cheese.
I always have chopped rotisserie chicken in the freezer for quick recipes like this. As for the cheese I first tried these with a brand that had thicker shred and it seemed to melt better but I ran out so in the last batch I used a finer shred and it was fine. Note you might even be able to use Parmesan cheese too.
As for the RedHot seasoning, I found it at Target and I believe Costco has it as well. If not you can get it on Amazon. This stuff is delicious.
You can use this RedHot Seasoning with:
- chicken wings
- sprinkle over zucchini chips like these zucchini chips
- add it to any dip to give it some zip
- while not keto, I do love it on popcorn
- sprinkle over chicken breasts and pan fry them
- mix it with melted butter for a buffalo sauce

The only thing you really should do is add the chicken to a food processor to get the chicken very finely chopped. You don’t want any big chunks in your chips. Then just mix it with the shredded cheese and hot sauce seasoning.
It will be a dry mixture like the that pictured below.
Now cover a baking sheet with parchment paper or a silicone baking mat. Take a tablespoon and add a mound of the mixture to the tray.
Space them out a bit as they should spread a little. I got 22 chips out of this recipe.
Bake them in a 350°F oven for 10-15 minutes until they turn a golden brown. Let them cool and then enjoy! Store them in an airtight container.
What to serve with these cheese crisps
You don’t really need anything to serve with these low carb cheese chips however if you were taking these to a party, you can add a blue cheese dressing dip, a ranch dip or even try this sweet mustard dip.
Can you use a hot sauce instead?
Yes you can. I tried it but note it doesn’t get as crispy. It still tastes delicious but just not as crispy. And you can use any kind of hot sauce you like.

How to freeze and reheat
I made a batch the other day and froze them in a baggie for later. I heat a few of them up for 10-30 seconds in the microwave for a easy keto snack. Note they are not as crispy when reheated but they are still very tasty.

These buffalo chicken keto cheese chips are super tasty and only need 3 ingredients! Perfect for a snack or even as a low carb appetizer, these buffalo cheese chips are super easy to make and very filling. The whole batch has only 2.2g net carbs and then are gluten free!
Ingredients
- 3 oz cooked chopped chicken breast
- 6 oz cheddar cheese, shredded cheese
- 2 tablespoons RedHot seasoning
Instructions
- Preheat the oven to 350°F.
- Add the chicken to a food processor and pulse until chopped very finely.
- Mix the chicken with the cheese and a RedHot seasonoing.
- Cover a baking sheet with a silicon mat or parchment paper. Take a tablespoon and make a mound with the cheese mixture. Make sure to spread them out a bit as they should spread a little on the baking sheet.
- Cook for 10-15 minuutes or until browned and crisp.
- Let them cool before eating as they will get a little more crisp.
- You can also freeze the leftover in a baggie and then just heat them up for a 10-20 seconds in the microwave. They will not be as crisp though. But they are still very tasty.
Notes
