Recently we ordered a meatball pizza from our favorite Italian restaurant (Tillie’s) and I was blown away at how good it was. It was a thick crust pizza with their homemade sauce and fabulous meatballs on top.
So I set out to make my own low carb version and came up with this keto meatball pizza recipe. It was mighty tasty! There is no way I could make traditional meatballs and keep it keto as they use soaked bread or bread crumbs. But both the meatballs and the final pizza were delicious!
My husband was super impressed with this pizza and that’s all that matters to me. Well I also was happy that it was low carb, high protein and gluten free which is nice when on a low carb diet.
Recipe Ingredients I used.
For the keto pizza crust I used a fathead dough made with eggs, mozzarella cheese, cream cheese, almond flour, garlic powder, baking powder, Italian seasoning and eggs.
For the keto meatballs I used I used ground beef, egg, parmesan cheese, Italian seasoning, onion powder and fresh garlic.
For the rest of the pizza I used Rao marinara sauce as I love the taste and it’s fairly low in carbs. And finally more mozzarella on top.
How to make a keto meatball pizza.
Preheat the oven to 400°F. You will use the oven three times so keep it on until the whole pizza is done.
Step 1: First we will make the fathead dough and pizza crust. Add the cream cheese and mozzarella to a microwave safe bowl and cook for about 30-60 seconds. Start mixing and the cheeses should be melted and mixed together. If not heat the mixture for a few more seconds.
Step 2: In another mixing bowl add the almond flour, baking powder, garlic powder and Italian seasoning and mix. Then add the beaten eggs and mix well. Finally add the mozzarella cheese mixture and try your best to mix all of it together and this makes the fathead dough. Place it in the refrigerator for 20 minutes.
Step 3: Cover a baking sheet with parchment paper or use a silicon mat. Take the dough out of the oven and place it on the baking sheet. Use your hands to form a circle. The dough is very sticky but it works so have faith. 🙂
Step 4: Place it in the oven and bake for 10 minutes.
Step 5: Now let’s make the keto meatballs while the fathead dough is in the refrigerator. In a large bowl add the ground beef, beaten egg, parmesan cheese, crushed garlic, onion powder, Italian seasoning, salt and pepper. Mix well with your hands.
Step 6: Get out a baking sheet and spray with nonstick cooking spray. Take a tablespoon of meatball mixture and form your meatball. You want them to be flat on one side so the tablespoon works great. Though you could also use a cookie scoop. Place them on the baking sheet then place in the oven and bake meatballs for 10-15 minutes. Cooking time will depend on the size of your meatballs.
Step 7: Now we put it all together. Spread the marinara or pizza sauce over the cooked pizza crust. Then add the meatballs and top with shredded cheese. Place in the oven and bake for 10 minutes or until the all the cheese is melty and the crust has browned. (Please scroll down for the printable recipe.)
Recipe notes and tips.
- My low carb meatball recipe makes 21 Italian meatballs and I only used 12 meatballs on the pizza. You can use these meatballs in wedding soup, or with zucchini noodles. Or add the leftover meatballs to a small casserole dish along with some sauce and cheese and make a meatball casserole freezer meal. You could also just cut the recipe in half and use what you got.
- I made my homemade meatballs rather large but you can always shape them anyway your want.
- I used Rao’s Marinara sauce but Aldi’s Specialty Selects Marinara is another good low carb sauce to try. Of course you can use whatever your favorite low carb sauce is.
- The texture of this pizza is very good. It does not have that chewiness that regular pizza has but the flavor is all there.
- You can make other fathead recipes with this dough like a bagel, calzone, pepperoni roll and more. You can also use coconut flour instead of almond flour like this fruit pizza recipe.
I hope you enjoy this keto meatball pizza recipe. It really can be two dinner recipes in one. You can make this fathead pizza with half of the meatballs. And then use the rest of the meatballs any way you want.
This delicious recipe is sure to be a family favorite, especially on pizza night!
