This low carb meat calzone is the perfect handheld pizza. Using fathead dough and tasty Italian meats you can make these calzones, quickly and easily. Only 5.7g net carbs per serving.
I’ve recently discovered the joy of fathead dough which is a low carb dough made from mostly cheese. It’s surprisingly good and great for when you have a bread craving. Today I wanted to make a low carb meat calzone because I had some tasty capricola and salami in the fridge. This was so easy to make and definitely satisfied my craving for pizza. I’m excited to try different fillings like ricotta and spinach or veggies or even pepperoni.
Other Fathead Dough Recipes
Some other fathead recipes I’ve made so far are my rosemary & garlic flatbread and a sweet fruit pizza. Truthfully I would love to eat all the pizza dough and sweet cookie dough that these recipes normally call for but they just don’t agree with me and fathead dough is the perfect low carb substitute. Now let’s make a low carb calzone. Below is a little video to show you just how easy it is.
Low Carb Meat Calzone Video
The dough is basically cream cheese and mozzarella that you melt in the microwave for a minute or so. Then you add a bit of coconut flour, egg and seasonings. That’s it and you have fathead dough. Next you flatten it out on a parchment covered cookie sheet or silicone mat. This is a bit tricky because the dough is sticky but you can do it. Spread it out as best you can and as fast as you can because the cheese will get harder to work with as it cools.
Then add some capricola, salami, ham and sauce and fold over. Is used the silicone mat like this to fold over the dough (see video). Next pinch down the ends and use a beaten egg and brush that on top. Bake and your done!

This made two helpings for me. It’s very dense and filling. Like I mentioned before I can’t wait to try different fillings and I’ll keep you posted. In the meantime give this fathead dough a try. You will be pleasantly surprised! The nutrition for 1 serving is:

Low Carb Fathead Calzone
Ingredients
- 1 tablespoon cream cheese
- 1 cup mozzarella
- 2 tablespoons coconut flour
- 2 eggs 1 for the dough and 1 for the egg wash
- ¼ teaspoon Italain spices
- 1 oz sliced ham
- 2 tablespoons sauce
- 1 oz salami
- 1 oz capricola
Instructions

Preheat oven to 400 degrees F.

Add mozzarella and cream cheese to a microwaveable bowl and cook for 1 minute in the microwave.

Stir well to make sure the cheeses are melted and then add in the flour, spices and egg.

Spread the dough out on a silicone mat or parchment lined cookie sheet to make a circle.

Layer your meats on one side and then top with sauce.

Fold over dough (I liked the silicone mat so it was easier to handle (see video).

Use fingers to pinch shut and then brush egg wash over top.

Bake for 15 minutes or until golden brown.

Let cool and serve.
