This fathead rosemary garlic flatbread is a delicious low carb snack that also makes a good sandwich bread substitute. Just a few ingredients are needed to make this tasty recipe and each piece is 2.2g net carbs!
Have you come across any fathead recipes? They are essentially a low carb dough that was created by the people who made the movie “Fathead”. Anyway, I am new to this recipe and very excited about it. It’s super easy to make and I’ve already made a delicious low carb fruit pizza. However today I was in the mood for garlic bread so I came up with this fathead rosemary garlic flatbread. It’s chewy and flavorful and even works great with sandwiches!
The basic dough is made up of mozzarella cheese, cream cheese, eggs and coconut flour. Some recipes use almond flour but I just wanted to use coconut today. You start by melting the cream cheese and mozzarella in the microwave. This just takes a minute. Mix it real well and then add the rest of the ingredients but not the butter, garlic and rosemary. Then you spread it out on an oiled cookie sheet. I just used my hands and pressed it down into the cookie sheet.
On top I brushed a mixture of garlic, butter and rosemary. Pop it in the oven and bake for 15 minutes. Above you can see what it looked like before going into the oven and below you can see what it looked like after.
A note on the cookie sheet. I found this cute little cookie sheet at Aldi but you can find them here on Amazon. They are made for toaster ovens and the dimensions are 8″ x 6″. It was the perfect size for this recipe. You can use a regular cookie sheet but note that the dough won’t fill the whole pan.

Well this is a recipe I will be making again and again. I ate it as is and also made a sandwich with it. You can experiment with different herbs and spices or even use it to make pizzas. The nutrition for 1 piece is:

Fathead Rosemary Garlic Flatbread (low carb)
- 1 cup mozzarella
- 1 tablespoons cream cheese
- 1 egg beaten
- 2 tablespoons coconut flour
- 2 tablespoons butter
- 1/2 teaspoon rosemary
- 2 cloves garlic crushed
Preheat oven to 400 degrees F.
Add mozzarella and cream cheese to a microwaveable bowl and cook for 1 minute in the microwave.
Stir well to make sure the cheeses are melted and then add in the flour and egg.
Oil a cookie sheet and spread the dough out using your hands.
Mix the garlic, rosemary and butter together and then brush over dough.
Bake for 15 minutes or until golden brown.
Let cool and serve.
