Recently I’ve become enamored with fathead dough again. I made a pepperoni roll, mini pizzas and now these keto everything pretzel bagels. I was going for a pretzel finish on the top but that didn’t really pan out but these were delicious none the less. Even my husband enjoyed them so I was quite psyched. He likes to have low carb breakfast but doesn’t eat eggs so this is great for me to make him.
WHAT IS FATHEAD DOUGH?
Fathead dough is low carb bread made mostly from cheese. It is essentially a low carb dough that was created by the people who made the movie “Fathead”. The basic dough is made up of mozzarella cheese, cream cheese, eggs and almond flour. Some recipes use coconut flour but I use almond today.
Two Versions Of These Keto Bagels
The first batch that I made of these low carb bagels, were a little too thin in my opinion but they did have a neat consistency. As you can see on the left side of the collage below I used the same recipe but only half of it. The dough didn’t quite fill the top of the donut baking tray and they didn’t rise as much.
Also the the thin bagel didn’t have as much airy consistency that you can see from the bite taken out of it. If this appeals to you just cut the recipe in half or make 12 bagels out of this batch. As I said they were quite good but you would not be able to cut them in half and toast them.
Making Your Own Everything Spice For Bagels
Below you can see the seasoning I bought from Trader Joe’s. I didn’t use it in the recipe, I made my own. I just mixed equal parts sea salt, dried minced onion, dried minced garlic, sesame seeds and poppy seeds. Next time I’ll use the bottled spice blend so I can compare.
Keto Everything Pretzel Bagels Recipe
To make the fathead dough, melt the cream cheese and mozzarella cheese in the microwave for about 30 – 60 seconds. Mix it well and keep heating until it mixes into a stretchy dough. See the photo below on the left.
While that’s cooking in the microwave, mix the almond flour, baking powder and egg to make the mixture in the bowl on the right. Then mix them together and refrigerate for about 20 minutes.
Generously spray your donut pan with cooking spray. Then spoon the dough out on a silicone mat or piece of waxed paper. Gently cut the dough into sixths and put them in the donut pan cavities. You need to play around with the dough to make it smooth as it’s very sticky.
Lastly mix the baking soda and water and then brush over the tops of the bagels. Sprinkle as much seasoning on top as you wish and then bake for 12 -15 minutes or until they’ve browned on top. Let them cool before taking out of pan.
What Baking Pan To Use
I use a nonstick donut pan to make these bagels. I have not tried to make them without it. The dough is pretty sticky so it might be hard to just form them and bake on a cookie sheet. These pans however are inexpensive and you can but them on Amazon or sometimes in Walmart or Target. They definitely come in handy with low carb or keto cooking.
How To Toast These Keto Bagels
One note is that to toast these you want to slice them as you would any bagel and place them cut side down in a frying pan. If you use a nonstick pan, you don’t need to use any oil. Don’t put these in the toaster because they might melt.

Keto Everything Pretzel Bagels
If you enjoy everything bagels, you will love this recipe for keto everything pretzel bagels. They are easy, chewy and delicious. Best of all they are gluten free and each one has only 2.6g net carbs!
Ingredients
- 3 teaspoons baking powder
- ½ cup almond flour
- 1 tablespoon butter, melted
- 2 eggs, beaten
- 6 tablespoons cream cheese
- 2 cup mozzarella, shredded
- 2 tablespoons baking soda
- 1 cup water
- 2 teaspoon everything spice blend
Instructions

Preheat oven to 400°F. Spray the donut pan with cooking spray and set aside

In a microwavable bowl, add the cream cheese and mozzarella. Cook for 30 second intervals mixing in between until everything melted and blended together. This should take 1 minute or more.

In the meantime mix the almond flour, eggs and baking powder and set aside.

Mix the two bowls together until well blended. This might take some finesse to get the two to blend. Refrigerate for 20 minutes.

Spoon the dough onto a silcone mat or piece of parchment paper. Carefully cut into 6 pieces with a pizza cutter.

Form each piece in the pan and try to get them as smooth as you can.

Mix baking soda and water together. Brush ontop of each bagel and then sprinkle the seasoning on top. Bake for 12 – 15 minutes or until desired browness. Let cool completely before taking out of pan.

Hi Lori, I am not familiar with the consistency of daiya cheese so I’m not really sure. The mozzarella gets really stretchy when melted and I think that is part of the reason it works in the dough. Sorry I’m not much help.

You said that you have also used coconut flour to make these. Do I need to make any changes to the recipe to do that? my husband;s low oxalate diet does not include anything with nuts of flour and he is hungry for some kind of roll-this recipe would make him really happy.

Hi Barb, I have never made them with coconut flour but usually you use 1/4 the amount of coconut so in this recipe (2T) and it needs more moisture so maybe 1 more egg?
