These keto chicken tacos make a tasty and fun low carb dinner or snack. Using low carb taco shells made from cheese saves on carbs and but keeps the crunch. These cheese tacos use shredded chicken you can make them in minutes.

If you are in the mood for tacos, you have to give these keto chicken tacos a try. I made the crunchy keto taco shells with just 1 ingredient – cheese! And then just filled them with seasoned shredded chicken.
The cheese taco shells are a perfect substitution for flour tortillas and enables you to have Mexican food on a keto diet!
You could eat these mini tacos for a keto snack, lunch or even dinner. One plain low carb chicken taco has only 1g net carbs so have a few.
Keto Cheese Taco Shells Recipe
The only ingredient you need for these shells is cheese! If you’ve ever made keto cheese chips then you will know how to make these cheese taco shells. Here’s how I made them.
- Preheat the oven to 350°F.
- Cover a baking sheet with parchment paper or a silicon mat.
- Place a heaping tablespoon of shredded cheese on the baking sheet, making sure to leave enough space between. They will spread as they melt.
- Bake for 5-10 minutes until thin and crispy around the edges.
- Take them out of the oven and let them cool for a few minutes.
- Then gently bend them so they look like mini cheese taco shells and fill them with your taco toppings.
The cheese will be a little too soft when it comes right out of the oven, that is why you want them to cool a bit before folding and shaping into a shell. However don’t wait too long or they will be hard to bend.
What Kind of Cheese to Use for Taco Shells
I used shredded cheddar cheese for my taco shells. However you could use mozzarella or even parmesan cheeses. Mozzarella will be more chewy than the other two but they would work fine. However cheddar cheddar cheese is the best cheese for taco shells.
Buying Low Carb Cheese Wraps or Tortillas
There are large cheese wraps that you can buy that you could make a big taco with. The brand I have bought before is Folios cheese wraps and you can find them on Amazon, Costco or even Aldi sometimes.
They are fairly expensive to me and there is not much taste. I prefer to make my own but it is an option so I wanted to mention it to you.
Putting the Keto Tacos Together
While the taco shells are baking, you want to make the shredded chicken filling. All you need to do is take cooked shredded chicken (rotisserie chicken breast works great) and mix it with a little salsa and cumin, chili powder and onion powder.
Mix it well and microwave for a minute or two to heat it up. Then when you have your shells made, fill with the seasoned chicken and top with your favorite taco toppings. I used Romaine lettuce, sour cream and my hubby’s jalapeño slices.

- sour cream (1 tablespoon) is 1g net carbs
- avocado (¼ of whole) 0.9g net carbs
- lettuce (¼ cup) 0.1g net carbs
- fresh cilantro (1 tablespoon) 0 net carbs
- pickled jalapeno slices (1 tablespoon) 1g net carbs
- fresh jalapeno slices (1 whole pepper) 0.4g net carbs
- black olive slices (1 tablespoon) 0.2g net carbs
- green onions (1 whole onion) 1.2g net carbs
- fresh tomatoes chopped (¼ cup) 1.3g net carbs
Recipe Tips & Notes
- You can use cheddar cheese, mozzarella or parmesan for the keto taco shells but I prefer cheddar cheese for the flavor and texture.
- Once the cheese crisps come out of the oven, let them cool for a few minutes then shape them into the shell by gently folding over. They will be too soft when they first come out of the often, however if you wait too long they might be hard to bend.
- For the chicken filling I used cooked rotisserie chicken breast and shredded it. You can use leftover cooked chicken of any kind. Just shredded before adding the seasonings.
- You can top these mini tacos with any of your favorite toppings. Choose from sour cream, guacamole, avocado, tomatoes, green onions, black olive slices, jalapeno slices or cilantro. See carb counts above.
- You can also buy large cheese wraps but I find they are expensive and they don’t taste as good as making your own but it’s an option.

Keto Mini Chicken Tacos
These mini keto tacos make for a very tasty low carb lunch or dinner. Easy to make and will fulfill your craving for Mexican food!
Ingredients
- 1 cup shredded cheddar cheese
- 1 cup cooked chicken breast, shredded
- 2 tablespoons chunky salsa
- ¼ teaspoon onion powder
- ¼ teaspoon cuminÂ
- ¼ teaspoon chili powder
Instructions
- Preheat the oven to 350° F. Then take a piece of parchment paper or a silicone mat to cover a bakign tray.
- Add tablespoon mounds of the cheese onto the baking tray. Be sure to space them out because they cheese will melt and spread. I just made 4 cheese crisps per 1 tray.
- Whiel the cheese shells are baking mix the shredded chicken, spices and salsa and microwave for 1 - 2 minutes until heated through.
- Once the cheese is done baking, take them out of the oven and let them sit for a few minutes. You want them to be pliable so that you can bend them in the shape of a taco shell. If you take them off the tray too soon, they will be too soft to bend and if you wait too long they may be too hard to bend into the taco shell shape. It really should take just a few minutes to cool.
- Take the taco shells and fill the with the chicken mixture. Then top with your favorite taco toppings. You really just need a small amount on each taco as these are mini tacos. See the notes for the carb counts for various toppings.
