There is nothing better than cauliflower rice for a quick and tasty keto side dish. Point in case is this cauliflower rice with mushrooms and peas recipe. The classic combination of rice, peas and mushrooms but using cauliflower instead of regular rice! So basically it’s all veggies but it’s delicious and great if you are on a low carb diet.
This recipe reminds me of spring and it’s great for a side dish or as a low carb lunch. It just takes 15 minutes to make so you can whip up any time want with simple ingredients. I could easily eat this for my dinner instead of a side dish but my husband would want more.
Recipe ingredients I used.
You just need a few simple ingredients to make this recipe – fresh cauliflower rice, white button mushrooms, frozen peas, heavy cream, butter and asiago cheese. You can also season with salt and black pepper if you think it needs it. If you can’t tolerate cream you could try vegetable broth or possibly coconut milk.
The shredded asiago and heavy cream add a richness to this keto rice dish. I would recommend using both of these though you could substitute parmesan cheese for the asiago.
As for the mushrooms I just used white ones but you can use baby portobellos too. And lastly I used frozen peas. Fresh peas are hard to get around here and I would definitely not use canned because they get to mushy.
You can use already made cauliflower rice but make sure to drain any excess water that might be in the package if it’s is frozen. No need to precook it.
I just make my own by chopping a head of cauliflower into florets.Then add the cauliflower florets to a food processor and pulsing until it looks like grains of rice like that shown below. Some people also use a box grater to make their rice but I don’t have one.
How to make keto cauliflower rice with mushrooms and peas.
Step 1: I think it’s important to get some color to the mushroom slices. So I heat up a large skillet to medium high heat and add a little butter. When that is sizzling hot I add my very thinly sliced mushrooms and turn the heat down to medium heat.
Then just saute until they get nicely browned like below.
Step 2: Next add the riced cauliflower and frozen peas. Mix well and cook for 1-2 minutes to heat up the peas.
Step 3: Add in the cream and mix well. Cover and cook for 1-2 minutes while you shredded the cheese. Note if you want more of a creamy sauce, add a bit more heavy cream.
Step 4: Take the lid off and add the finely grated asiago cheese. Mix well then cover and cook for a few more minutes until the cheese is fully melted and the cauliflower is cooked to your liking.
Step 5: Take off the stove and serve. You can eat this as a keto vegetarian main dish or as a side dish. You can also add some cooked shrimp or cooked chicken to the dish to make it more of a complete dinner.

You can change this dish up a bit by adding fresh garlic or minced onions. I would saute them with the mushrooms in the butter if you do. Other spring veggies that would go nice in this would be fresh spinach, green onions, asparagus, etc. I like to keep my recipe simple and let you add your own twist to them.

Keto Cauliflower Rice with Mushrooms and Peas Recipe
This keto cauliflower rice with mushrooms and peas recipe is the perfect low carb side dish and only takes about 10 minutes to make. Full of flavor using simple ingredients, you can eat this as a meatless main dish as well.
Ingredients
- 3 cups cauliflower rice
- 1 cup mushrooms, fresh and thinly sliced
- ½ cup peas, frozen or fresh
- 1 tablespoon butter
- â…“ cup heavy cream
- 2 ounces asiago cheese, shredded
- salt and pepper to season
Instructions
- Get out a large pan and heat to medium high heat. Add the butter and when it's melted add the sliced mushrooms. Turn the heat down to medium and saute until golden brown. about 3-4 minutes.
- Next add cauliflower rice and peas and mix well. Season with a little salt and black pepper then cover with a lid and cook for 2-3 minutes
- Add the cream, mix and cover for another minute or so. Note if you want more of a cream sauce, add a bit more heavy cream.
- Grate the asiago cheese and add to the pan. Mix until it's melted and taste to see if the cauliflower is cooked to your liking then serve. You can also add some cooked shrimp or cooked chicken to the dish to make it more of a complete meal.
- Store leftovers in an airtight container.

If you can't tolerate cream you can substitute vegetable stock or chicken broth. Coconut milk would also work but it might add too much coconut flavor.
