If you follow my blog you know I’m a big fan of cauliflower rice. This past summer my son has been loving crab fried rice that he had in a nice Thai restaurant downtown. Since it’s harder to get to that restaurant these days I decided to make it myself and for me I made this crab keto fried rice with cauliflower.
I was so happy with both recipes! I didn’t realize how easy it is to make. The hardest thing is getting the crab. I loved this recipe because it only takes 15 minutes and each serving of the crab fried cauliflower rice has only 3.1g net carbs!
How To Make Cauliflower Rice
These days you can buy cauliflower rice in most grocery stores either in the produce section or in the freezer section. However to me it is much better tasting and easier to make it yourself.
To make your own cauliflower rice just add cauliflower florets to your food processor and pulse until it looks like grains of rice. See! Easy peasy.
Keto Crab Fried Rice Ingredients
To make this keto, I used cauliflower rice as well as green onions, cilantro, lime juice, eggs, sesame oil, chili garlic oil, ginger, garlic, soy sauce, rice cooking wine, pepper and crab.
If you don’t have the chili garlic oil or the rice cooking wine, read the Recipe Tips below for substitutions.
Let’s Make That Crab Fried Cauliflower Rice!
- First make your cauliflower rice if you are making it in the food processor. If you bought yours then go to step 2.
- Next add the oil to a large saute pan and add in the garlic and ginger. Stir for a minute or two until fragrant.
- Now pour in the cauliflower rice and mix well with the seasoned garlic. Then add the pepper, soy sauce and rice cooking wine and mix once more.
- Beat the egg very well and pour over the cauliflower rice. Mix it well so it will coat the rice. This give the rice a nice texture and taste.
- Mix in the crab and let it heat through for a minute or two.
- Lastly sprinkle half of the green onions and cilantro. Mix it into the rice for a minute, then take it off the heat.
- Drizzle the sesame oil and chili garlic oil overtop. Mix through quickly and then sprinkle the rest of the cilantro and green onion on top to serve.
- You can also squeeze a bit of lime juice if you wish before eating.
What Type Of Crab To Use?
I used a can of crab claw for this recipe that I bought at the fish counter in a larger grocery store. It was on sale and it was perfectly fine. However next time I think I’m going to try the lump crab as I love the taste of it. But since this is a fried rice recipe, the less expensive canned crab works just fine.
What Can I Use Instead Of Rice Cooking Wine?
I bought my rice cooking wine in an Asian store but you might not be able to get it in a regular grocery store. This is not to be confused with rice wine vinegar. They are very different.
Since you are only using 2 tablespoons in this recipe, you can use a cooking sherry, dry white wine or just not use it at all if you want.
Recipe Tips And Notes
- You can make cauliflower rice by adding florets to a food processor and pulse until it looks like grains of rice. You can also buy it in the produce section or the freezer section.
- I used canned crab claw from the fish section of the store but I think lump crab would be better.
- If you prefer chunks of scrambled egg in your fried rice, you can move the rice to the side of the pan and pour in the beaten egg. Let it sit there and cook and then break it up and mix with the rest of the rice.
- Rice cooking wine is not rice wine vinegar. Substitutes for rice cooking wine are sherry or a dry white wine. You can also eliminate it if you have too.
- If you don’t have any chili garlic oil, you can just add some hot pepper flakes.
Using Regular Rice Instead Of Cauliflower
Of course this would not be a keto recipe if you were to use regular rice instead of cauliflower rice. However if you didn’t care about carbs, just use cooked jasmine rice instead. Use the same quantity as the cauliflower rice.
Everything else is the same.
