I made these keto bacon and cheese stuffed chicken breasts on a whim the other day and my family loved them. It was really easy to make and I threw in some vegetables for a delicious skillet dinner. Each large chicken breast has only 0.2g net carbs!

I think I could make just about anything with bacon and cheese and my family would eat it… especially my son. He loves turkey club sandwiches so I thought these low carb bacon and cheese stuffed chicken breasts would be a hit with him.
Low Carb Vegetables To Use With This Chicken Dinner
I also threw in some vegetables I had on hand and let them bake with the chicken. This made for a really easy and tasty low carb skillet dinner! Some low carb vegetables you might want to use are:
- mushrooms (1.6g net carbs per cup)
- zucchini (2.7g net carbs per cup)
- cauliflower (3.2g net carbs per cup)
- grape tomatoes (4.8g net carbs per cup)
- green beans (4.3g net carbs per cup)
- asparagus ( 2.4 net carbs per cup)
- broccoli ( 6.1 net carbs per cup)
Keto Stuffed Chicken Ingredients
This is a tough one….only 3 main ingredients. Can you guess what they are? Correct! It’s bacon, chicken and cheese (gruyere) as well as spices. I bought all 3 at Aldi. I like to buy their organic chicken breasts only because they don’t have rib meat on them. And if you can’t find gruyere you can also use Swiss cheese or any shredded cheese you like.
For the spices, I like to use a combination of garlic powder, onion powder, paprika, salt and pepper. However if you have a good all purpose seasoning that would work as well.
How To Stuff A Chicken Breast
I took pictures of how to cut and spread open the chicken breast but it didn’t come out quite right. You can check out this stuffed chicken post to see how. You just need to make a slice on the side as you would a bagel. Then take your fingers and make a pocket where the slit is and add your fixings.
Low Carb Bacon & Cheese Stuffed Chicken Recipe
So you take your chicken breasts with the pockets and add your gruyere cheese and then sprinkle cooked bacon on top (see above). Then close the breasts and sprinkle the spices on top (see below).
Next you want to heat up some oil in a oven proof pan on the stove to brown the breasts. Just do this for a 3 or 4 minutes on 1 side. Flip them over and bake for 18 minutes.
If you want you can add a few vegetables to the pan. Make sure they are vegetables that will cook in 18 minutes. If you want to make a vegetable that will take longer, microwave it first to precook and then place it in the pan.

Ingredients
- 3 raw chicken breasts
- 3 pieces bacon, cooked and crumbled
- 1 cup gruyere or swiss cheese, shredded
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
- chopped vegetables (optional)
Instructions

Preheat oven to 350°F.

Take a chicken breast and cut a whole on the side. Take you finger and stretch the cut to make a nice hole to stuff.

Take the cheese and bacon and stuff into the chicken breast.

Sprinkle spices on the chicken breasts.

Heat up oil in an ovenproof pan. Brown one side of the chicken and when ready to turn over, flip and add vegetable if using.

Place in oven and bake for 18 minutes or internal temperature is 165°F.
