S’mores Keto Iced Bulletproof Coffee Drink – Perfect Summer Pick Me Up!

This s’mores keto iced bulletproof coffee drink is just what you need this summer! Whether it’s to start your morning or as a special treat in the afternoon, this is an easy sugar free coffee drink to make. Each serving has only 1.7g net carbs! In the summer time, I sometimes make a bulletproof coffee or tea to get me going in the morning. I’m not always hungry for breakfast and I find bulletproof drinks really tie me over to lunchtime. So today I made for you a s’mores keto iced bulletproof coffee that will get you going in the morning or keep you going in the afternoon. It’s decadent but still low carb with only 1.7g net carbs per drink!

What Is Bulletproof Coffee 

Bulletproof coffee is usually brewed coffee with grass-fed butter and a MCT oil. You blend it to make a creamy drink that many people following a low carb high fat diet enjoy. It’s satiating in the morning for most coffee drinks. Check out how to make Keto Butter Coffee here.

And if you are wondering what MCT oil is, it stands for Medium Chain Triglycerides. I can try to explain it but I think Dr. Axe can do a better job of it here. 🙂

S’more Coffee Drink Ingredients 

There are three components to this drink that mimic a s’mores treat. The coffee is flavored with cocoa powder, Torani Sugar Free Chocolate Syrup and MCT oil.  The second layer is homemade whipped cream made with Torani Sugar Free  S’mores Syrup. And lastly there is a crunch topping made of ground almonds and Torani Sugar Belgian Cookie Syrup. Below you can see just 3 bottles of my Torani stash. I use them all the time.

 

Where To Find Torani Syrups

I usually buy my Torani syrups online because they have such a vast selection of sugar free syrups. However you can find it in many of your grocery stores in the coffee isle.  I’ve also bought it at Walmart and even the coffee shops in the Strip district have a large selection. You can check out their store locator to find a store near you as well as what flavors they sell. It’s pretty cool!

And I have honestly tried almost all of them so if you have any questions about a flavor just comment below and I’ll answer them. They are great for mixing two flavors together in your coffee and this summer I’ve made lots of fruity iced tea!

Making the crunchy sugar free topping

All you need is some raw almonds and Torani Sugar Free Belgian Cookie Syrup. To me it has a graham cracker taste. Start by grind the nuts in a food processor. Then toast them with some of the syrup in a skillet. Cook until the nuts start to dry out and get crunchy. Let them cool completely before using.

Making The Keto S’mores Whipped Cream

I make this all the time. Torani Sugar Free S’mores Syrup has definitely become my favorite flavor. Tastes like marshmallows to me and it’s so good with whipped cream. I have used this in numerous recipes like my cookie dough cheesecake keto pops.

To make it add 1 cup of cold heavy cream to a bowl, along with 2 tablespoons of the s’mores syrup. Whip into a nice whipped cream. Store in the refrigerator until ready to use. This recipe makes 2 cups of whipped cream.

Making The Keto Iced Bulletproof Coffee

I wanted the coffee to mimic the chocolate layer of a s’mores treat so I used black coffee, cocoa powder and Torani Sugar Free Chocolate Syrup. Add these to a high speed blender like a Vitamix along with the MCT oil and blend until nice and creamy. 

Note you want to use MCT oil for an iced bulletproof coffee because butter or coconut oil will get clumpy when blended in a cold liquid. However if you make this a hot drink, you can use either of those.

Putting It All Together

Pour the coffee over ice, scoop or pipe the whipped cream on top and then sprinkle some of the almond topping. And there you have a delicious sugar free, low carb, keto bulletproof iced coffee for summer.  The nutritional information for each component is below. 

  • 1 T sprinkles = 85 cals / 7g fat / 2.8g carbs / 1.8g fiber / 3g protein = 1g net carbs
  • 1 T whipped cream = 26 cals / 2.8g fat / 0.2g carbs / 0.2g protein = 0.2g net carbs
  • Each drink = 106 cals / 14.2g fat / 1g carbs / 0.7g fiber / 0.5g protein = 0.3g net carbs

This recipe makes enough for two coffee drinks with lots of whipped cream and crunchy topping left over. For my drink I used 2 tablespoons of whipped cream and 1 tablespoon of the crunchy topping for 1.7g net carb.

This coffee recipe would go great with my friend Sara’s keto coffee cake. Or for more s’mores deliciousness try my friend Zuzana’s keto s’mores chaffles!

Ingredients

Crunchy Topping

  • ½ cup raw almonds
  • 2 tablespoons Torani Sugar Free Belgium Cookie Syrup

S'mores Whipped Cream

  • 1 cup heavy whipping cream, cold
  • 2 tablespoons Torani Sugar Free S'mores Syrup
  • 2 tablespoons MCT Oil

Chocolate Coffee

  • 12 oz brewed coffee
  • 2 tablespoons Torani Sugar Free Chocolate Syrup
  • 2 teaspoons cocoa, unsweetened

Instructions

Crunchy Topping

  1. Add almonds to a food processor and grind until a crumb like consistency.

  2. Pour into a skillet along with the Torani sugar free Belgian cookie syrup. MIx well and toast on medium low heat until dry (about 5 -10 minutes.) Set aside to cool before using.

S'more Whipped Cream

  1. Add cold heavy whipping cream to a large bowl along with the Torani sugar free S'mores syrup and whip unitl the consistency of whipped cream. Refrigerate until ready to use.

Chocolate Coffee

  1. Pour cold coffee into a blend along with the Torani sugar free syrup, MCT oil and unswetened cocoa. Blend on high until well mixed.

  2. Pour coffee mixture into 2 glasses with ice. Add some whipped cream and sprinkle the crunchy almond mixture on top. Enjoy!

    When it comes to coffee my mind goes “ULALA”. I m kinda coffee addict. I love Starbucks, CCD, Coffee by Di Bella, etc. Their won’t be any such place I have missed to visit once in my life, you name it and i have been there. But after realizing how much I spent on coffee in a month, I have stopped visiting stores and tried to make coffee at home but I had a tragic failure. This looks something that is amazing and I hope it turns out well for me so that I stop craving for any more.

    If I had a glass of that delicious looking coffee waiting for me, I’d hop out of bed the second the alarm went off. That looks so refreshing – iced coffee was always a favorite with me but that syrup takes it up several notches in the goodness factor. I’ll have to pick some up.

      Thanks Marisa! It’s worth getting out of bed for! Sometimes when I don’t want to whip cream, I just pour the 3 syrups in black coffee and cream and it’s my quick fix.
